Chili's Grilled Caribbean Chicken Salad Recipe - Welcome to Summer!

Chili's Grilled Caribbean Chicken Salad is almost too good. It's perfect. It's crispy, crunchy, cold, juicy, sweet, succulent, warm... it's sensation after sensation all on one plate! It is with great pleasure that I share this incredible salad recipe with you.

Chili's Grilled Caribbean Chicken Salad - Ingredients:
4 boneless, skinless chicken breast halves½ cup store bought Teriyaki marinade4 cups chopped green leaf lettuce4 cups chopped iceberg lettuce1 cup chopped red cabbage½ cup drained mandarin orange wedges½ cup drained pineapple chunks1½ - 2 cups fresh fried tortilla strips (sub thin, broken tortilla chips, if preferred)pico de gallo (recipe to follow)Chili's Honey Lime Dressing (recipe to follow)
Chilis Grilled Caribbean Chicken Salad - Directions:
In a large resealable plastic bag, shake chicken and teriyaki sauce. Marinate in the refrigerator for at least two hours (preferrably overnight).Combine lettuce and cabbage in a large mixing bowl. Mix thoroughly, cover, and chill.When ready, grill chicken on a George Foreman Grill or backyard barbecue grill approximately 4 to 5 minutes per side.Slice grilled chicken into thin stripsOn 2-3 large serving plates, evenly divide chilled salad greens.Top each salad with tortilla strips, mandarin oranges, pineapple chunks, pico de gallo (recipe to follow), and grilled chicken.Serve with a side of Chili's Honey Lime Dressing (recipe to follow).Enjoy!
And Now For The Honey Lime Dressing And Pico De Gallo...

Chicken Chili

Pico De Gallo:
4 roma tomatoes, diced½ cup diced spanish onion (or your favorite kind of onion)2 tsp. fresh, raw jalapeño... seeded, de-ribbed, and diced2 tsp. fresh cilantro, mincedpinch of salt Simply combine all ingredients in a small bowl and chill.

Chili's Honey Lime Dressing:
¼ cup honey¼ cup dijon mustard1½ tbsp. sugar1½ tbsp. apple cider vinegar1½ tsp. lime juice1 tbsp. sesame oil
With an electric mixer, combine all ingredients in a small bowl until creamy and consistent. Cover and chill.

Jamaican Chicken Curry - A Superb Caribbean Recipe

Influenced by Indian and Southeast Asian curries, Jamaican curry has adopted its own uniquely zesty taste. This Jamaican chicken curry recipe owes its fieriness to Scotch bonnet chili peppers and gets its interesting sweetish taste from sweet potatoes. This exotic dish can either be a simple hearty dinner or a star on the party menu that won't fail to impress your guests on special occasions.

Ingredients (for about 4 servings) - 3 tbsp Jamaican curry powder, 8 - 10 chicken thighs, 1 large sweet potato (peeled and cut into big chunks), 1 tbsp vegetable oil, 1/2 tsp ground allspice, 2 tsp minced garlic, 1 tbsp minced ginger root, 1/2 cup thinly sliced green onions, 1 Scotch bonnet pepper (minced), 2 cups chicken broth, 1/2 tsp salt

Preparation

· Combine curry powder, allspice and salt in a large bowl.
· Add chicken thighs. Make sure the spices coat chicken evenly. Cover and refrigerate for about an hour.
· In a large pot or deep skillet, heat oil over medium heat.
· Stir in garlic, green onions, Scotch bonnet pepper and ginger. Cook for about 2 minutes. Stir constantly.
· Add chicken. Cook for about 2 - 3 minutes.
· Add chicken broth and bring to a boil, then stir in sweet potato.
· Turn the heat down to low, cover and let simmer for about 40 - 50 minutes. Stir occasionally.
· Remove chicken and potato from the pot with a big slotted spoon, and place them on a serving dish. Cover to keep warm.
· Turn the heat up to medium-high and boil the sauce (uncovered) for about 5 - 10 minutes or until it is thickened.
· Pour sauce over chicken and sweet potato. Add salt to taste.
