Indian Style Very Similar Chinese Chili Chicken

Indian style chinese chili chicken in gravy, cooked with lots of onions and green chilies. Very tasty, very must eat to it. Just over a year ago Zack had his first Christmas Eve dinner with us and some of our friends here in Luna Pier. An hour prior, he called to ask, "Do I need to wear a suit? I've never been to one of these things!" And this-coming Easter Sunday after anchoring the 13abc morning news in Toledo (he doesn't mind working the Christian holidays), Zack will join us with Mary's brothers for Easter dinner.

I love Indo-Chinese dishes, it's really tastes simply superb spiced up with Indian seasonings and Chinese cooking style. Last week when this here German Lutheran was holed up in a Catholic hospital, Mary found the book Cooking Jewish in the hospital's gift shop and bought me a copy. I already love this book! There are some incredible recipes in here and while there are no photos of the completed dishes it's not difficult to visuallize how they'd turn out. But what's even more endearing about the book is the whole "family" aspect of the overall writing. The family tree is laid out, charts indicate which family member is related to which and how that happens (i.e., Fanny Vitner is Silvia Robbin's mother), and a written history goes back over 100 years. If you are searching for traditional Indian chicken curry, then I must say that you are on the correct page. Chicken curry is quite a popular dish as it has different versions and recipes depending on the regions and country. Everyone has their own unique style of making chicken curry.

Chicken Chili

The major ingredients required to make the dish are: 12 skinless, boneless chicken breast halves- cut into strips, ½ cup vegetable oil, 4 large chopped onions, curry powder along with salt to taste.

Instructions:

Heat the oil in a large pan on medium heat. To the heated oil, saute the onions until golden brown. Stir in the curry powder and salt. Add the chicken breasts when all the ingredients are mixed properly. You can add little water if desired. Simmer the chicken covered on low heat for 45-50 minutes till the chicken is fully cooked.

For a more flavored taste, you can marinate the chicken for few hours before you cook chicken. For marination, you can take the chicken breasts in a bowl and add ginger garlic paste, turmeric powder, chili powder, salt plus little yogurt. Mix them all well and leave for at least 2 hours.

When the curry along with chicken is fully cooked, you can serve over hot cooked rice with some mango chutney, if desired.

Chicken Stuffed Omelette (Indian Style Recipe)

The preparation is not that difficult and is ideal when you are bored with usual omelette and want to experiment a bit.

Ingredients

Chicken Chili

200gm minced chicken (keema) 1 small size finely chopped onion 1 small size finely chopped tomato 2 teaspoon of very finely chopped capsicum (green pepper) 1 clove of garlic finely chopped 1 tablespoon soya sauce 1/2 teaspoon sugar 1 tablespoon black pepper salt to taste 3 egg 2 tablespoon of vegetable oil 1 teaspoon red chili powder 2 teaspoon of milk

Preparation Time: 10 min

Cooking Time: 30 min

Serves: 2

How to make Chicken Stuffed Omelette

1. Take a non-stick frying pan heat 1 tablespoon of vegetable oil add 1 small size chopped onion, 2 teaspoons of finely chopped green pepper (capsicum), 1 clove of garlic finely chopped and fry for 5 mins until the onion become soft.

2. Put 200gm minced chicken (properly washed and drained excess water off) into the pan (step 1) fry for about 10 mins until it becomes lightly brown in color and fully tender.

3. Now add finely chopped tomato and stir for a few minutes. Then add 1 tablespoon soya sauce, 1/2 teaspoon sugar, 1 tablespoon black pepper, 1 teaspoon red chili powder and salt to taste into the pan (step 1) and fry for another few mins. Put the stuffing aside.

4. To make the omelette, break 3 egg into the bowl beat it with 1/4 teaspoon soya sauce and salt to taste. Add 2 teaspoon of milk to make the omelette soft and fluffy.

5. Take the same non-stick pan heat 1 tablespoon of vegetable oil put the omelette mixture (step 4) into the pan and make a omelette in medium low flame. Cook both sides till it become brown in color.

6. Put the stuffing in one side of the omelette and fold it in semi circle form and cut it in two equal parts from the middle.

Chicken Stuffed Omelette is ready to serve hot for lunch/dinner with rice or chappati.

Indian Style Chili Chicken

This preparation of chili chicken is an Indian Chinese dish that is very easy to make at your home for dinner. It is actually quicker than you think. It takes about 30mins to prepare this delicious, mouth watering chinese delicacy made in Indian style.

Shopping List

Boneless Chicken - 500gm
Soy Sauce
Tomato Ketchup
Cornflour
chili Sauce
Ginger Paste
Vinegar
2 Eggs
Lots of Green chilis
Onion
Capsicum
Ajeena-moto
Vegetable Oil
Salt

Preparation Time: 15mins

Cooking Time: 20mins

Serves: 4

Steps

1. Wash the boneless chicken (500gram) properly and cut it into small pieces (cubes).

2. Take a bowl put the chicken cubes into it, then add 3 tablespoon soy sauce, 1 tablespoon cornflour, 2 tablespoon tomato sauce (ketchup), 1 tablespoon chili sauce, 1 teaspoon ginger paste, 1/2 teaspoon vinegar, 1/2 teaspoon salt and 2 eggs (separately beaten in a bowl). Mix all the ingredients well and marinade for 1 hour. If you want extra-hot, you can add 5-6 green chilis split into halves in this mixture.

3. In a non-stick pan add 2-3 tablespoon of vegetable oil and heat for 2 mins.

4. Fry the marinated chicken till golden brown and keep aside. Ensure the mixture is thick enough to stay on the chicken pieces. If not, you can add more cornflour to thicken it. Keep the thick mixture for use in Step 6.

5. Take a non stick kadhai (deep bowl) and put 2 tablespoon of vegetable oil and heat for 4 mins then add 5-6 green chili split into halves and fry till the seeds pop. Add 1 big onion (chopped into medium size pieces) along 1 medium chopped capsicum and 1 teaspoon salt and fry till slightly brown and half cooked.

6. When the above mixture (step 5) becomes little tender then add the remaining marinaded liquid mixture (Step 4) and stir well. Close the lid of the kadhai for 2 mins to allow the ingredients to cook.

7. Open the lid and pour some water in the khadai so that the gravy does not become too thick and sticks at the bottom, hence stir often. Cook for few mins.

8. When the oil is released out of the gravy (which means the gravy is cooked now), then add the fried chicken (step 4) and mix them in the grave well. Cooked for 5 mins, stir occasionally otherwise it will get stuck to the bottom of the kadhai. Taste the gravy and add salt and/or green chili if required.

9. Finally put 1/2 teaspoon ajeena-moto into the gravy and cook for 1 min.

Caution: The amount of salt added (either during the marinade or during cooking) must be as per taste and controlled as the ketchup and other sauces do have salt in them as well.

Put 3 cups of water and the tomatoes. Stir the ingredients thoroughly then put the spices in. Coat the vegetables with the spices evenly, then add the eggplant.

Cook the mixture until it thickens and becomes a thick soup. Make sure that the chicken and the eggplant are thoroughly cooked.

Now you have your delicious curry dish, but no Indian chicken curry recipe is complete without basmatti rice! This is pretty simple to do. Just bring at least 1 liter of water to a boil, then put in one cup of rice and a half tsp of salt. Mix it thoroughly, then add ¼ tsp of turmeric.
