Shrimp, Chicken and Sausage Gumbo

You will love this spicy, hearty, comfort food. It is easiest to make with a friend. You can make the rue and your friend can chop vegetables. If you're making it alone, get your vegetables completely chopped before you start the rue. This gumbo will quickly become a family favorite.

Ingredients you will need:


4-5 large chicken breasts.
3-4 pounds hot sausage.
2 pounds of large shrimp de-veined and de-clawed.
1 cup of vegetable oil.
1 cup of flour. 2 cups of diced celery.
3 or 4 large green peppers diced.
3 large onions diced. 2 or 3 jalapeno peppers diced.
De-vein and de-seed them before dicing. 2 - 3 large cans or boxes chicken broth.
3 - 4 bottles clam juice.
8 cups of white rice.
Cayenne pepper to taste.
Chili powder to taste.
Salt to taste.
Black pepper to taste.

You will also need a very large sauce pot.

Put your chicken breasts into the sauce pot, cover with water and simmer until done. Remove the breasts from the water and cool. Once they are cooled, shred the chicken. Make sure you shred it, don't cube it. Set the chicken aside. Keep the water you cooked the chicken in. If you run short on chicken broth, you can use the water.

Fry or microwave your hot sausage until done. Cut into 1/2" pieces and set aside with your shredded chicken.

Now you'll want to chop up your vegetables as per the ingredient list.


2 cups of diced celery.
3 or 4 large diced green peppers.
3 large diced onions.
2 or 3 diced jalapeno peppers.

Set the vegetables aside.

Next you'll create the rue. Make sure the large sauce pot is completely dry. Put 1 cup of vegetable oil and 1 cup of flour into the pot. Over low/medium heat stir constantly until the rue takes on a copper color.

When the rue is done, drop in the vegetables. Be careful not to splatter, the rue will be very hot. Cook the vegetables in the rue until they are tender.

Now add 2 - 3 large cans chicken broth and 3 or 4 bottles clam juice. Also add the cayenne pepper, salt, black pepper and chili powder to taste.

Finally add the shredded chicken and the sliced hot sausage. Let the entire mixture simmer for at least one hour over very low heat stirring occasionally.

When the gumbo is nearly done, cook the white rice per the instructions on your box. Then put 2 - 3 cups cooked rice directly into the gumbo above.

Ten minutes before serving add 2 pounds of large shrimp. Make sure the shrimp is de-veined and de-clawed before putting them into the gumbo.

Serve over rice with crusty bread.

Quick and Easy Chicken and Sausage Crock Pot

This modification of a classic Philippine dish is quick and easy as are most crock pot recipes. The chicken and sausage are browned. Then the onions, potatoes and garlic are chopped. Then it's a matter of dropping them into the crock pot along with the other ingredients, setting it and walking away for a few hours. This recipe is another in the series of dishes designed for busy people who want more nutritious meals that can be prepared quickly. Because of the use of mostly fresh ingredients, it is also likely to be more healthful than the previously prepared microwave dishes at the supermarket. Put this one on before you go to work, then come home to a house filled with delicious aromas, and a great tasting meal. This recipe will probably serve four, but if there are two of you, the leftovers will make you a second meal when reheated. Hope you like it!

Ingredients

1 chicken leg quarter with skin and bones
1 link of Italian sausage (about 3 ounces)
1 small onion, chopped fine
3 cloves garlic, minced
1 medium potato, peeled and chopped fine
1 teaspoon peppercorns
1 bay leaf
1 can diced tomatoes (you could use chopped fresh tomato)
1 tablespoon soy sauce
1/2 cup wine vinegar

Instructions

1 - Brown the chicken and Italian sausage together, then put in the crock pot.
2 - Remove the glaze from the skillet by adding the diced tomatoes, then put in the crock pot.
3 - Add the other ingredients and give it a stir.
4 - Cook on high for about 6-8 hours.
Serve over pasta or rice if desired.

Ground Beef and Sausage Chili For the Crock Pot

There is nothing like some nice chili in the food. Chili goes great in any recipe. Chili is totally the best ingredient in the majority of the recipes. That's why the ground beef and sausage chili is America's favorite recipe. But when you have a great ingredient it's important to use it the right way. And here comes the crock pot.

The crock pot is the best way to cook chili recipes. Why? Because the chili infiltrates slowly and well into the meet. All the chili flavor gets preserved into the beef and in the sausage. The two tastes combine so they give one of the best recipes out there: the ground beef and sausage chili for the crock pot.

Here are the ingredients for the great ground beef and sausage chili for the crock pot:

o 8 ounces of smoked sausage - such as apple chicken sausage
o 1 cup chopped onion
o 1 red or green bell pepper, chopped
o 2 cloves garlic, minced
o 1 can (4 ounces) mild green chili peppers
o 2 to 3 tablespoons diced jalapeno peppers, or to taste
o 2 cans (14.5 ounces each) diced tomatoes or fire-roasted tomatoes, undrained
o 1 can (8 ounces) tomato sauce
o 1 can (15 ounces) black beans, drained and rinsed
o 1 teaspoon grill seasoning blend
o 2 to 3 tablespoons chili powder
o 1/2 teaspoon ground cumin
o 1/4 teaspoon ground black pepper
o 1 teaspoon salt, or to taste
o 1 1/2 pounds lean ground beef

And here is the easy way to prepare the ground beef and sausage chili for the crock pot.
First you will need a large skillet pan. You have to brown the ground beef and the sausage. For this you will use the onion. The browning has to take place until the pink color is completely gone. After this you will add the pepper and the garlic. You have to stir the entire mixture for about 3 minutes or longer.

The final step of the ground beef and sausage chili for the crock pot is to add all the remaining ingredients. Cover the crock pot and let it boil for about 6 to 8 hours. This is all! The dish is ready to be served! Enjoy!
