How To Make Shredded Beef In A Crockpot

Shredded beef is perfect for making hearty meals and you can use it in appetizers, entrees, and even side dishes. Use it to make Mexican recipes like tacos or burritos, combine it with macaroni or rice and vegetables to make an easy dinner or serve it in a bun with some coleslaw on the side for a delicious lunch or supper.

Use round tip roast, bottom round, chuck roast or brisket for the best shredded beef recipes. You can make it on the stove, in the oven or in a crockpot but slow cooking is great for this recipe because the meat is guaranteed to remain juicy and tender.

Chicken Chili

Combine a tablespoon each of Dijon mustard and red wine vinegar with half a cup of your favorite barbecue sauce and put the mixture in your crockpot. Cut a one and a quarter pound boneless beef roast in half and add this to the mustard mixture, turning it over so it fills the bottom of the crockpot and is covered in the sauce. Pour six ounces of beer over the meat and cook for six to eight hours on low or until you can shred the meat easily with a fork.

Shredded beef can be wet or dry and if you cook it in a sauce you can either use the sauce, perhaps serving the whole lot over mashed potatoes or rice, or take the meat out of the sauce, to serve it in a bun or if you want the flavor of the sauce without the liquid itself.

The slow cooking process means the meat will soak up a lot of the flavor of the sauce so it is optional whether or not to serve the liquid. In the following recipe, taste the sauce before pouring it over the beef, and adjust the quantities accordingly.

Depending on your crockpot you might want to reduce the amount of meat to two and a half pounds or increase it to three and a half pounds. Add more chili powder to the mixture to spice it up, if you like, and use your own judgment to alter the ingredient amounts and make it taste really good.

What You Will Need:

3 lbs lean chuck roast 10 1/2 oz tomato soup 1 quartered, thinly sliced onion 3 thinly sliced cloves garlic 1/2 teaspoon celery seed 1/4 teaspoon chili powder 1 tablespoon Dijon mustard 1 tablespoon lemon juice 1 envelope onion soup mix 2 tablespoons Worcestershire sauce 1/4 cup brown sugar Salt, as needed

How To Make It:

Trim the fat off the meat and cut it into four or five pieces so it will fit in the crockpot. Mix the remaining ingredients together and pour the mixture over the beef. Cover and cook for about ten hours on low.

Pour the juice into a pan and let it simmer for about fifteen minutes on the stove, or until it is thicker. Shred the meat with a potato masher or pair of forks. Pour the thickened sauce back over the shredded beef and serve with buns and perhaps some coleslaw on the side. You will have enough to make at least six sandwiches.

How to Make a Delicious (Diabetic Friendly) Shredded Chicken Mexican Lasagna

Back in the 1960s when I got married and moved to New Mexico from Indiana with my United States Air Force husband, one of the most exciting discoveries I made was Mexican and Tex-Mex foods. After our Air Force years and a move back to Southern Indiana, I was so excited to see that Taco Bell had entered the area. Many years later, this is still one of my favorite types of food. And as a Type II diabetic, I have discovered that it is mostly food I can eat without getting my blood sugar out of control. This lasagna recipe is a great dish containing chicken, vegetables, dairy, spices, and bread in the form of flour tortillas. It is basically a meal in itself. Try it today!

SHREDDED CHICKEN MEXICAN LASAGNA

Chicken Chili

1 1/2 tsp chili powder
1 tsp ground cumin
1/2 tsp salt
1/2 tsp ground red pepper
1 can (28-oz) crushed tomatoes
16-oz nonfat sour cream
6 scallions, chopped
1 can (4-oz) chopped green chilies, drained
6 to 7 (8-inch) flour tortillas
3 cups shredded cooked chicken
1 can (15.5-oz) corn, drained
8-oz shredded cheddar cheese
Sliced black olives for garnish
sliced scallions for garnish

Heat oven to 350 degrees. Mix chili powder, cumin, salt, pepper, and tomatoes in a bowl. Mix sour cream, scallions, and chilies in another bowl.

Spread 1/2 cup tomato mixture in a 13 x 9 x 2-inch baking dish. Arrange 2 tortillas to cover the bottom of the dish. Use pieces from another tortilla in the corners. Top with half the sour cream mixture, half the chicken, half the corn, 1 cup of the tomato mixture, and one-third of the cheese. Repeat the layers, then top with tortillas and remaining tomatoes. Sprinkle remaining cheese around the edges of the casserole. Bake in a 350 degree oven for 35 minutes or until bubbly. Let stand 15 minutes before cutting. Garnish with the olives and scallions.

Yield: 12 servings at 327 calories, 31 g carbs, 21 g protein per serving.

Quick Shredded Chicken Recipes

Have you ever stopped and bought one of those rotisserie chickens they sell at just about every supermarket these days? If you have not yet given them a try, you really should. They are delicious as a main course just as they are or you can pull the meat off the bones and use the meat in other recipes. In my house, there are just the two of us, so usually, I will have a lot of leftover chicken, and that's when my one of my favorite quick shredded chicken recipes comes into play.

My particular favorite is Mexican Chicken Chili wraps. All you need to do is take the chicken and shred it or cut it into bite size pieces. Then, take some chili powder to taste and coat the pieces in the chili powder. Spray some nonstick spray into a skillet, add a can of cut-up tomatoes, and the coated chicken. Add in a can of corn (drained). Let it simmer for a while until the chicken and veggies are hot. 
 
Spoon the mixture into warmed tortillas and wrap them up. If you want to, you can also add some sour cream or some guacamole on top and then wrap up the tortillas. 
         
Another favorite of mine is an old classic: shredded chicken salad. Simply shred or dice the chicken, cut up about ¾ cups of celery very small, and about ¼ of an onion very small.   Mix them together. Add in some chopped walnuts and/or some cut-up pieces of apple. Mix it all together using mayonnaise, spoon onto some beautiful rolls, top with lettuce, and enjoy. It is also fun to experiment by adding other ingredients.  Some variations include adding thawed but not heated frozen peas, half a can of drained whole kernel corn, or drained dark red kidney beans.
