Chicken Enchilada's

This is my quick and easy recipe for chicken enchilada's. It has took me years to perfect it. I hope you will enjoy it as much as I do. To make it a little quicker you can buy a rotisserie chicken to use instead of taking the time to cook your own.

Chicken Enchilada's

Chicken Chili

- 3c. Cooked Chicken
- 1c. Chopped onion
- 1/4c. Butter
- 1/4c. Flour
- 2c. Hot Water
- 3 cubes chicken bouillon
- 8oz. Sour Cream
- 2c. Cheddar Cheese
- 4oz. Chopped green chillies
- 1 can green chili Enchilada sauce
- 1 package tortillas

Preheat oven to 350 degrees. In a medium sauce pan saute onion in butter until tender, stir in flour, water, and bouillon; stir with wire wisk until thick and bouillon dissolves, remove from heat and add sour cream.

In a bowl mix chillies, chicken, cheese (reserve 1/2c. to put on top) and sauce mixture. Put in tortilla's, roll and place in a 9x13" greased pan. Put green chili sauce and the rest of the cheese on top. Cover with foil (spray foil with non stick spray to keep cheese from sticking to it) cook 45 minutes or until cheese on top has melted.

Options:

-You can fry tortilla's in oil before filling with chicken.
-Use red enchilada sauce instead of green.
-Add some hot sauce to chicken mixture.
-You can also freeze and use later.

If you do this be sure to thaw completely in the refrigerator and it will require 1 hour to 1 hour and 1/2 to cook since ingredients are cold. Can be served with a lettuce salad, beans, or rice.

Green Chicken Enchiladas Recipe - Authentic Mexican Enchiladas Verde Dish

Enchiladas are classically made using either a red sauce or a green sauce. The red enchilada sauce is usually a thin red chile and tomato sauce. With green enchiladas, the green color comes from a sauce made from tomatillos and green chiles.

While this recipe is easy overall, it is a little bit tricky because of the quick pre-frying of the corn tortillas. The reason this is done, besides adding nice flavor to the dish, is to make the tortillas softer and less likely to crack when rolling.

Chicken Chili

Ingredients:

1 1/4 pounds whole bone-in chicken breasts

12 corn tortillas

9 cups water

9 to 12 tomatillos, husked

3 small onions

6 large garlic cloves, crushed

8 fresh green serrano chiles

1/4 cup fresh cilantro leaves

1 teaspoon salt

1/2 teaspoon dried thyme

2 bay leaves

1/4 cup sour cream

1/4 cup vegetable oil

Garnish:

1/2 cup shredded Mexican white cheese, or Monterrey Jack

1/4 cup sour cream

Directions:

Bring 6 cups of the water to a boil in a large saucepan. Add the tomatillos, 1 small quartered onion, 3 garlic cloves, and 4 serrano chiles. Reduce the heat to medium, and simmer until the tomatillos are soft, or about 30 minutes. Drain, but save some of the cooking water.

Transfer the vegetables to a blender, and add another small quartered onion, 2 garlic cloves, the remaining serranos, and the cilantro to the blender as well. Blend until smooth, or about 2 minutes. If needed, add some of the reserved liquid to the blender to allow the mixture to get smooth enough. Set aside.

Place the green tomatillo sauce in a skillet or saucepan with 1/2 teaspoon of salt, covered, over low heat.

Place the chicken breasts in a saucepan filled with the remaining 3 cups of water, three-quarters of the remaining small onion, the remaining 1/2 teaspoon salt, thyme, bay leaves, and the remaining 3 garlic cloves. Finely chop the reserved quarter of onion and set aside. Bring to just below a boil over high heat. Before the water starts boiling, add the chicken and poach until it is firm, or about 12 minutes. Turn off and let the chicken cool in the broth. Remove and discard the bay leaves.

Remove the chicken from the saucepan, then pull the meat off the bones. Discard the skin and bones. Shred the chicken into small pieces and keep warm in a small saucepan over low heat. Stir in the sour cream and the chopped onion. turn the heat off, cover, and keep warm.

In a heavy, well-seasoned skillet, heat the vegetable oil over medium-high heat. Cook the tortillas, one at a time, until soft, for about 3 seconds per side. Remove with tongs, and set aside on paper towels to drain. Cook the remaining tortillas, replenishing the oil if needed.

Preheat the oven to 350 degrees F. Pour 1 cup of the tomatillo sauce on a plate, and lay the tortilla in the sauce. Fill the center of the tortilla with the chicken filling mixture, roll up, then arrange in a baking dish. Continue filling and rolling the remaining tortillas. Pour the rest of the sauce over the top of the enchiladas.

Cover the baking dish with foil, and bake until heated through, or about 10 minutes. Remove from the oven and garnish with the cheese, the sour cream, and the onion rings. This green enchiladas recipe makes 6 servings.

Mexican Chicken Enchiladas Recipe - 5 Star Chicken Enchiladas

Make these mouthwatering enchiladas with chicken, sour cream, cheese and spices.

1 tablespoon butter

Chicken Chili

1/2 cup green onions, chopped

1/2 teaspoon garlic powder

1 (4 oz.) can diced green chilies

1 (10.75 oz.) can condensed cream of mushroom soup

1/2 cup sour cream

1-1/2 cups cooked chicken breast, cut into cubes

1 cup shredded Cheddar cheese, divided

6 (12-inch) flour tortillas

1/4 cup milk

Directions

Preheat oven to 350 degrees. Prepare a large baking dish with cooking spray.

In a medium saucepan, sauté the green onion in the butter over medium heat for 3 to 4 minutes (until tender). Add in the garlic powder. Stir in the green chilies, mushroom soup and the sour cream; mix well.

Reserve 3/4 of this sauce and set aside.

To the remaining sauce in the pan, add the chicken and 1/2 cup of the cheese; stir thoroughly.

Fill each flour tortilla with the chicken mixture and roll up. Place them seam side down in the prepared baking dish.

In a small bowl, combine the reserved 3/4 sauce and the milk. Spoon sauce over rolled up tortillas and top with remaining cheese. Bake for 30 to 35 minutes, or until cheese is bubbly.

These enchiladas have a real zippy flavor.

1 (10.75 oz.) can condensed cream of chicken soup

1/2 cup sour cream

1 tablespoon margarine

1 onion, chopped

1 teaspoon chili powder

2 cups cooked chicken breast, chopped

1 (4 oz.) can chopped green chili peppers, drained

8 (8-inch) flour tortillas

1 cup shredded Cheddar cheese

Directions

Preheat oven to 350 degrees.

In a small bowl, combine the soup and the sour cream; mix well and set aside.

In a medium saucepan, melt the margarine over medium heat and add in the onion and chili powder; sauté until onions are tender. Stir in the chicken, chili peppers, and 2 tablespoons of the soup mixture. Cook until heated through; stirring constantly.

Spread 1/2 cup of the soup mixture into a 9x13-inch baking dish. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla. Roll up the tortillas and place them, seam side down, into the baking dish.

Spoon the remaining soup mixture over tortillas and sprinkle the cheese on top. Bake for 25 minutes, or until cheese is bubbly and tortillas are lightly browned.

1 tablespoon vegetable oil

2 skinless, boneless chicken breasts, boiled and shredded

1/2 cup onion, chopped

1 (7 oz.) can chopped green chili peppers

1 (1 oz.) pkg. taco seasoning mix

1/2 cup sour cream

2 cups cottage cheese

1 teaspoon salt

Pinch ground black pepper

12 (6-inch) corn tortillas

2 cups shredded Monterey Jack cheese

1 (10 oz.) can red enchilada sauce

Directions

Preheat oven to 350 degrees. Lightly grease a 9x13-inch baking dish.

Heat up the oil in a skillet pan over medium high heat. Add the chicken, onion and green chili peppers; sauté until browned. Add in the taco seasoning and prepare meat mixture according to package directions.

In a medium bowl, combine the sour cream, cottage cheese, salt and pepper; stir until well blended.

In a small frying pan, heat tortillas just until soft. Inside of each tortilla, add a spoonful of meat mixture, cottage cheese mixture and a bit of shredded cheese. Roll up tortillas and place them, seam side down, into the prepared baking dish.

Top with remaining meat and cottage cheese mixture. Pour enchilada sauce over tortillas and sprinkle with Monterey Jack cheese.

Bake for 30 minutes, or until cheese on top is bubbly.

Chicken Enchiladas Recipes - Easy & Quick To Prepare!

These chicken enchiladas recipes are quick, easy and delicious. Just check these out and I'm sure you'll be amazingly surprised.

So here we go for some chicken enchiladas recipes:

>> Chicken Enchiladas

1 c chopped onion or onion salt

1 t ground cumin

1/2 t garlic powder

10 oz can cream of chicken soup

12 corn tortillas

16 oz can tomatoes, chopped

2 c shredded cheddar cheese

3 chicken breast halves

4 oz can chopped green chilies

Cover chicken with water and simmer for 30 minutes. Cool, bone, and cut into strips, set aside. Mix tomatoes, soup, chilies, cumin, and garlic powder. Dip tortillas into broth left from boiling chicken, place one on a plate, add 2 tb. Of mixture and 1 tb. Of cheese. Roll up and place seam side down in baking pan.

After all are filled and rolled, pour remaining sauce evenly over enchiladas and sprinkle with remaining cheese. Bake at 350 until cheese is melted (about 20 minutes).

1 c chicken stock

1 pt whipping cream or half & half

1 pt sour cream

1 tb flour

1 ts salt freshly ground black pepper

12 corn tortillas

2 green onions & tops, chopped

2 pimentos, cut in strips 1/2 lb cheddar cheese, grated green chilly sauce, or salsa lettuce, coarsely chopped

3 c cooked chicken breast

Preheat oven to 350 f. Mix flour with stock and heat until slightly thickened. Add the whipping cream (or half & half), green onion, salt and pepper. Bring to boil. Stir in sour cream until well mixed. Dip each tortilla in cream sauce, then arrange chicken and strip of pimento down center of each tortilla. Roll and place in greased baking dish (or spray with food release) seam side down. Pour remaining cream sauce over all and bake for 30 min.

Remove from oven and sprinkle grated cheese over all and return to oven until cheese is melted. Arrange coarsely chopped lettuce around edges of dish. Serve with green chili sauce, or salsa crude, or pico de gallo.

Making Chicken Enchiladas With White Sauce in the Crockpot

We are a family who loves chicken enchiladas. We also enjoy using our crockpot a few times per week.

I decided to try our family recipe in the crockpot and it came out wonderfully!! I began with five chicken breasts. Since the meat is boiled I buy chicken breasts with skin and bones. I find if I buy the skinless breasts it comes out too dry.

Bring the water to a boil and then cook about 45 minutes. Chicken should be cooked through. I allow the chicken to cool about fifteen minutes and then shred it. Many recipes suggest cutting it into chunks, we prefer the chicken shredded.

Now it's time to create the sauce. The sauce needs two cans cream of chicken soup. I look for the lower sodium soup when I buy it. If you buy regular cream of chicken, that's fine, but the sauce will be a bit saltier to taste. If your taste buds are used to salt, then you may find the lower sodium a bit too bland for your tastes. Next comes eight ounces of sour cream. I use the non fat sour cream. There is a definite taste difference between regular sour cream, low fat sour cream and non fat sour cream. Find the right taste combinations for your family in choosing soup and sour cream. Finally, you'll need a four ounce can of diced chilis. Try adding more or less chilis depending on how hot your family likes the dish.

If you want a sauce that is bit thinner, add in some milk. Since we only drink non fat milk, I tend to not add it in. If you're a family that drinks low fat or regular milk, you can add in one third of a soup can of milk and it will help thin out the sauce just a bit.

Mix the sauce ingredients together in a bowl. Dip one or two tortillas in the sauce to moisten them. These are the tortillas you'll use on the top of your casserole.

Next, add in the chicken and mix well. It's now time to put everything in your crockpot. I buy whole wheat Mission tortillas. My crockpot that I use for this casserole is six quarts. To line the bottom of the crockpot I needed one and a half tortillas. Cover the bottom of your crockpot with the tortillas. Now add one third of your chicken. Lightly cover the chicken with a handful of shredded cheese. You can use cheddar or a combination of jack and cheddar cheeses. Repeat your layers two more times. I end with those dipped tortillas on the top. I put one more layer of cheese on top and it's ready to turn on. I put the crockpot on low for four hours.

Another alteration you can make is to tear the tortillas into strips, making it easier to cut when it's time to serve up the enchiladas.

When you serve the enchiladas, put a small spoon of sour cream, olives and/or a slice of avocado on top.

This is a dish that my entire family enjoys.

Make Cheese Enchiladas at Home - Learn 4 Secrets From a Previous Restaurateur

Doesn't just about everyone love great enchiladas? Would you like to learn how restaurants make them? My family had a Mexican restaurant where I was the cook. I will explain to you how we did it and leave you with the best tips for delicious enchiladas.

I would venture to say that the most important part to making great enchiladas, whether they are beef, cheese, chicken or pork, is the sauce. If the ingredients are tasty but the sauce is mediocre then the overall end result is uneventful. In my view it's the sauce that makes a cheese enchilada recipe great.

Secret #1
Start with a great sauce. You have some options here.

1. Make your own (recipe below)
2. Buy some enchilada sauce from your favorite Mexican restaurant
3. Trader Joes has a respectable bottled enchilada sauce. It's not great but a little better than what you will find in most grocery stores.

Rockin Robin's Enchiladas Sauce

Ingredients:

2 cups chicken broth
4 Tbs. Chili Powder
1 tsp. ground cumin
2 heaping tsp. garlic powder (no added salt)
3/4 tsp. salt
1 pinch ground cinnamon (less than 1/16 tsp.)
1/3 tsp. sugar
5Tbs. cold water
4 Tbs. white flour

Directions:

In a 2 quart sauce pan add the chicken broth, chili powder, garlic powder, cumin, salt, cinnamon and sugar (the sugar is a little secret to eliminate any bitter taste from the chili powder).

Use a whisk to mix everything well. Heat to a boil, reduce heat to a low boil and cook for 3-4 minutes. Whisk frequently to make sure all spices dissolve. This is important for flavor and a nice smooth sauce.

While the sauce is on a slow simmer/boil, add 5 tablespoons of cold water in a small bowl. With another whisk mix 1 tablespoon at a time of flour. Whisk vigorously to avoid lumps. If you have lumps here, you will definitely have lumps in your sauce.

After 3-4 minutes of cooking the sauce, turn the heat up to high. Very slowly, pour the flour mixture into the boiling sauce.

Here you must whisk the sauce vigorously while adding the flour to avoid lumps. After all the flour is added, continue to whisk for one minute. You can turn the heat down to medium during this time. Just make sure the sauce is boiling. Let it boil for 3 or 4 minutes. Turn off the heat, this enchilada sauce is done.

You will notice that as this sauce sits it will form a "skin" on the surface. This is normal and in fact the longer the sauce sits the thicker this skin becomes. All you have to do is peel the skin off and throw it away.

Now that you have options for making or acquiring enchilada sauce, you have secret number 1 out of the way.

Secret #2

Always dip the corn tortillas, one or two at a time in hot oil, to soften them. Many home cooks miss this important step and just put a little sauce on the tortillas, fill them with cheese and roll them up. Dipping the tortillas in hot oil really adds flavor to your enchiladas and makes rolling them much easier. Be careful when rolling the enchiladas as they are very hot.

Secret #3

After dipping the tortillas in hot oil, dip them in hot enchilada sauce and coat both sides of the tortillas. This will get that delicious enchilada sauce on the inside of your enchiladas as well and mix in and flavor your cheese or meat. No dry enchiladas here.

Secret #4

Make your enchiladas fresh. In other words make them and serve them the same day. They simply taste better and won't dry out. If you absolutely must make them the day before (you will compromise on flavor and texture), top them before heating with a fresh new layer of hot enchilada sauce and then cheese and onion.

Heat them well in a hot oven. In the restaurant business, our steam table kept all of our food hot. So when making up a plate the food was already pretty hot but we always put the plates in the oven to get them really hot. Mexican food just taste better that way.

So make sure you put your enchiladas in the oven and heat them until you see the sauce bubble up. This is especially important when making cheese enchiladas. You want to make sure that cheese melts on the inside.

So there you have it. If you follow those 4 secrets you will have delicious tasting enchiladas. I guarantee it!

Let's Make Some Great Cheese Enchiladas.

Ingredients:

1lb of mild cheddar cheese, grated
10-12 corn tortillas
1/4 - 1/3 cup finely chopped yellow onion
vegetable oil
24 ounces of enchilada sauce, heated
guacamole
sour cream

Directions:

Heat an inch or two of oil in a small frying pan over medium heat. Watch the oil so it doesn't smoke. Cover a tray with foil (for easy clean up) and grab some tongs. Use the tongs to dip two corn tortillas at a time in the hot oil. When they start to bubble, lift and dip the tortillas 3 times quickly in the oil.

Now either dip the tortillas into the hot enchilada sauce to coat and then lay them on the foil-covered tray you prepared.

Sometimes what happens with this technique is that the tortillas will tear due to the weight of the sauce. If that happens try placing the tortillas onto the foil tray before dipping in the sauce. Then ladle sauce onto the tortillas and turn them over to coat with sauce.

Now you are ready for the cheese. Add a layer of grated cheese right down the middle of the tortilla, then a sprinkle of onion. Be sure to add plenty of cheese as it will melt down when heated. Grab the end of the tortilla closest to you and bring it 3/4 of the way over to the other end. Tuck and roll the tortilla into a cylinder.

Pick up the cheese enchilada with your fore fingers on the bottom where the seam is. Let your pinky fingers cover the ends of the enchilada to keep the cheese from falling out while you move it to an oven proof dish. Continue with the rest of the enchiladas.

Using a ladle, pour hot enchilada sauce over the top of the cheese enchiladas and let plenty of sauce run down the sides. Remember, the sauce is what makes it? Sprinkle more cheese and onion over the top.

Place in a 400*F. oven until the cheese melts and the sauce is bubbling. It's important that these enchiladas are hot enough so that the cheese melts inside. It may take 10 to 15 minutes or more. Let your eyes be the judge.

Serve with guacamole and sour cream.

You can substitute beef, chicken or pork in this basic enchilada recipe.

Three Great Enchiladas From One Basic Recipe

Enchiladas are good but a little variety helps. Here is how to make chicken, steak, and cheese enchiladas all at the same time. Oh, did I forget pork?

Meat Selection

Beef: I like steak enchiladas but you need good beef that is tender and flavorful. Some of the restaurants around here use ground meat in their enchiladas. These are the restaurants I never visit twice.

When I first started working as an engineer in Colorado (about a zillion years ago), an old industrial engineer told me this: Never buy a breaded piece of meat!

He went on to say that any old piece of meat could be breaded and you just don't know what you are getting. It could be as old as the hills, unrefrigerated, contaminated, dropped on the floor and stepped on, or fetched out of the grease trap as far as you know.

The same goes for ground meat. Who knows it's real history? In enchiladas it gives the wrong texture and the wrong flavor.

So buy a good piece of beef. You don't need much because there are other things in the enchilada. Most of the good Mexican restaurants around here put in too much meat. You don't need it.

For that matter, they use too much cheese. My heart surgeon doesn't like that, but my wife does.

Pork is a good substitute for beef or chicken for those who prefer the flavor of pork. In 1956 when, with a fellow engineering student, I drove to Massachusetts to work for the Norton Company for the summer, we passed through Iowa. The hogs there were just like the hogs on our church welfare farm. They looked more like elephants than hogs.

I moved to Iowa in 1966 to teach in the engineering department at Iowa State University. By then, the hogs were lean and mean, still long but not fat. That change made pork an acceptable lower fat meat. And pork has a great flavor for enchiladas.

Meat and Poultry Preparation

Fresh, frozen, or canned meats can be used to prepare enchiladas. If you use frozen meats or poultry, thaw it out at room temperature or in the refrigerator. If you are like me and at times in a big hurry, then place the meat or chicken in the microwave and thaw it out. I have a freezer full of Omaha Steaks® products sold me to the nice folks there by telephone. I can't say no! So I usually get my meat from the freezer.

I like to use a whole dead chicken so I let it stew in pomegranate juice until the chicken is ready to fall of the bones. Pomegranate juice seems to penetrate the chicken better than other juices and give a fabulous flavor, especially the next day.

If you use chicken breast, they are easy to slice even when frozen. For me, I want some brown meat so I use the whole critter.

When I say use a "dead" chicken, I mean it. Years ago my dad decided to buy a live turkey for thanksgiving. He killed it in the basement where it ran wild for the longest time and spurted blood from hell to breakfast finally creating a bloody feathered mess. When I was a kid, we chopped the heads off chickens and let them flutter hither and yon in the yard. Who needs that?

I buy Kirkland® canned chicken at Cosco®. It has a nice tecture and flavor and is very good in soups and chicken salad when you are in a hurry. I'm not much for canned meatsm but they are different now days, and there are some good choices to make. Spam® is still available but I'm not sure I would want a Spam® enchilada. Canned or prepared in the frying pan, season the chicken with poultry spice, creole spice, teriyaki sauce or whatever you want.

For other meats, slice the meat in to short strips. Keep each meat separately from the other ingredients. (You can use left over meat from that Sunday roast too and other than slicing in to short strips or small cubes, no other preparation is needed.)

Put some canola oil in a frying pan with a clove of garlic. Make sure the oil is hot. (You probably do not need much oil, so you may be able to just spray the pan and not use the garlic.) For steak, I like to use Omaha Steaks® All Natural Steak Seasoning. Another seasoning I like for about everything is Spice Island® Beau Monde seasoning. Tampa Spices® have a full range of low-cost spices (packed by M.I.S., POB 2081, Gibsonton, FL 33534). I like their creole seasoning and their meat and poultry seasoning.

Prepare each meat separately and put each in a separate bowl. Have one bowl with just grated cheese. (More about cheese below.)

Preparing the Enchilada Mixture

In a frying pan with hot olive oil (or your favorite oil) fry slices of bell pepper, green chilies (You can add the green chilies from a can if you like. They are a nuisance to clean and slice.), onion, a small hot pepper variety (remove the innards and seeds if you don't want the enchiladas to be too hot), cumin, and salt and pepper. Add a trace of cayenne pepper if so inclined. You also can add chopped black olives; which I do because my wife likes them and I can tolerate them. Drain the mixture and place it in a bowl.

Now, mix some of this stuff into each bowl of meat or poultry. Leave some for cheese enchiladas.

The Tortillas

I have a tortilla maker along with the floor. It was a Christmas gift from my daughter who is married to a great enchilada maker. I used it once. Now, I go down the street to the panderia (Mexican bakery) and buy corn or flour tortillas. (Note: I also buy those round loaves of bread. I cut a circle out of the top, remove the filler bread, and fill them with hot soup. I take the top circle and toast it, then put garlic butter and Parmesan cheese on top. That is called a home-made soup bowl.)

You can also buy tortillas at any grocery store. Before you use the tortillas you may need to soften them. Mine are fresh so I can just roll the ingredients into the tortilla. When they are not soft, or if I want to just roll up a tortilla with the ingredients and eat it, I drop them into a frying pan with hot oil, flip them, and take them out. It takes about two seconds on each side. Don't burn yourself. Usually, I am going to cook my tortillas in the oven so I just drop three tortillas on the rotating glass platform in my microwave oven and cook them for less then a minute to soften them.

Preparing the Enchilada Sauce

The way I usually prepare enchilada sauce is go to the store and buy Hatch® brand enchilada sauce made in Deming, NM. There are two varieties to choose from. I like the green chili style, but the red or tomato style is equally good. All brands are not the same so you may have to test the brands to see which sauce you like. Here is what I suggest: ask a clerk or stock boy which brands are hot. No, not that "hot." Which brand is the top seller.

When you read the label on the can, see if it is "mild," "hot," or "holy jamoly!" I always buy mild. I can always make it hot if I want to which is never because of my wife and Idaho guest.

Enchilada sauce is expensive. You can easily make your own if you are not lazy like me. Here is how you do it:

1. Put a tablespoon of oil in a hot frying pan.

2. Stir in 3 tablespoons of flour. Stir until brown. (Cajuns call this a "rue.")

3. Add 6 tablespoons of chili powder to 2 cups of water or meat stock (beef or chicken broth would work). When the powder is dissolved in the water or stock, add it to the flour and oil rue. Add ½ tsp of garlic powder (why not just garlic?)

4. Bring the mixture to a bubbly boil, stirring frequently. Simmer for 5 minutes.

That will make you 1 2/3 cups of sauce.

Note: Chile powder is a mixture of cumin and cayenne pepper. To cut back on "hotness," cut back on the chili powder and add more cumin. Cumin is what makes chili taste good but not "hot."

Putting it All Together

Spray oil onto the surface of a baking pan or casserole dish. Soften a tortilla. Place
one of the meat mixtures into the tortilla and roll the tortilla. Place it into the pan or casserole dish. Do it again and again until the mixture is gone. Repeat for the next chicken or meat mixture.

For cheese tortillas, mix grated cheese with the basic enchilada mixture and roll it and place it into the pan or casserole dish.

Remember where you place each type of enchilada. They all look the same when cooked.

Now, pour enchilada sauce all over the place--over, under, and between the enchiladas. Top with shredded cheese. You can try a Mexican mix of cheeses, Colby, Monterey Jack, Parmesan, Mild, Cheddar, or whatever.

Cover your dishes with aluminum foil.

Preheat the oven to 325oF. Place your fantastic creations in the oven and cook for 35 minutes. When the cheese is melted and all looks great, take them from the oven and let them sit for a while before serving.

THAT'S IT! Good eating!

Just a note: yesterday we had guest, but some couldn't show up because of sickness. I had enough enchiladas left over to feed an army. So that's what I did. I took them over to my son's house to feed his 13 kids.

Make cheese enchiladas at home - 4 Secrets of learning a restaurant before

Not only all the great love enchiladas? Want to learn to restaurants? My family had a Mexican restaurant where I cook. Let me explain how we have done and the best advice for delicious enchiladas.

I would say the most important part to make great enchiladas, where pork, cheese, chicken or sauce. If the ingredients are tasty, but the sauce is poor, then the entire final nothing happened. From my point of view, is the sauce, cheese Enchilada Recipe makes it so great.

Secret # 1
Start with a great sauce. You have several options.

First make your own (recipe below)
Buy a second bit of sauce, enchilada of your favorite Mexican restaurant
Trader Joe's enchilada sauce Third is a bottle respectable. Not great, but a little 'better than that found in most stores.

Rockin Robin enchilada sauce

Ingredients

2 cups> Chicken Soup
4 c. soup. Chili Powder
1 teaspoon of tea. cumin
Two teaspoons. Garlic powder (no salt added)
4.3 V. tea. Salt
1 pinch ground cinnamon (less than 1 / 16 teaspoon).
1.3 V. tea. Sugar
5Tbs. cold water
4 c. soup. White flour

Directions:

2 liters in a pot, add the chicken broth, chili powder, garlic powder, cumin, salt, cinnamon and sugar (sugar is a little secret to eliminate the bitter taste of the chili powder).

With a whipmix well. Bring to a boil, reduce heat to low boil and cook for 3-4 minutes. Stir regularly to ensure that all spices dissolve. This is important for flavor and a smooth sauce.

While the hot sauce on a slow / boiling, add 5 tablespoons cold water in a small bowl. With another whisk mix 1 tablespoon of flour at a time. Whisk vigorously to avoid lumps. If the pieces here, probably lumps in the sauce.

After 3-4 minutes of cooking sauce,Increase heat to high. Very slowly, pour the flour mixture into the boiling sauce.

Here you must add the sauce mix vigorously to avoid lumps of flour. After all, you add the flour, continue to whisk for a minute. You can heat the half in this period. Be sure to boil the sauce. Cook for 3 or 4 minutes. Turn off the heat, the enchilada sauce is ready.

You will notice that this sauce sits it will be a "skin" forms on the surface. Thisis normal and in fact, the sauce is thicker this skin becomes. Everything you need, peel and discard.

Now you can create or buy the enchilada sauce, you have a secret number of the road.

Secret # 2

Always wet the corn tortillas, one or two at a time in hot oil until they soften. Many amateur cooks miss this important step and just put a bit 'of sauce over the tortillas, filling them with cheese, and in case of capsizing. DisposalTortillas in hot oil really adds flavor to your enchiladas and makes it much easier to roll. Be careful when you roll the enchiladas, they are very hot.

Secret # 3

After dropping the tortillas in hot oil, dip into hot enchilada sauce and coat both sides of tortillas. This is a delicious enchilada sauce in enchiladas as well as your taste and stir in cheese or meat to get. No dry enchiladas here.

Secret # 4

Make your enchiladascosts. In other words, make and serve the same day. They taste better and not dry. If you must do the day before (it's compromise on taste and texture) on top before heating with a coat of fresh new hot sauce and then cheese and onion enchiladas.

Heat well in a hot oven. In the restaurant, our table steaming all our food was hot. So if you get a plate of food was not hot enough, but we always put the dishes in the ovenshe hot. Mexican food tastes better that way.

To ensure Put your enchiladas in the oven and cook until the sauce bubbles seen. This is particularly important when the production of cheese enchiladas. You want to make sure that the cheese is melted inside.

Let's Make Some great cheese enchiladas.

Ingredients

1 pound sweetCheddar cheese
12:10 corn tortillas
1 / 4-1 / 3 cup chopped yellow onion
Vegetable oil
24 ounces enchilada sauce, heated
Guacamole
Cream

Directions:

Heat an inch or two of oil in a small saucepan over medium heat. Watch the oil, non-smoking. Cover with a sheet tray (for easy cleaning) and grab a crowbar. Use tongs to dip two corn tortillas at a time in hot oil. If they start to bubble, lift and dip the tortilla into 3 times fasteroil.

Now the two enchiladas tortilla dipped in sauce to coat and warm blankets ready to throw the leaves plateau.

Sometimes what happens with this technique is to tear the tortillas is the weight of the sauce. If this happens, try to place the tortillas on the sheet before dipping into the sauce. Then spoon sauce over tortillas and turn to coat with sauce.

Now you're ready for the cheese. Add a layer of grated cheese over allHalf of the tortilla, then a pinch of onion. Make sure the cheese melts when heated like to add. Get closer to the end of the tortilla and make three quarters of the way to end another. Tuck and roll the tortilla into a cylinder.

Take the cheese enchilada with fingers forward on the ground, where the town is. Let your little finger on the end of the cheese enchilada covered with down, while you keep moving in a pan. TakeRest of the enchiladas.

With a ladle, the hot enchilada sauce on top of cheese enchiladas and leave a lot of juice running down the flanks. Remember, the sauce is what it is? Sprinkle with cheese and onions over the top.

baked at 400 * F. until cheese is melted and sauce. And 'important that these enchiladas are hot enough to melt the cheese inside. It may be 10-15 minutes or more. Let your eyes of the judges.
