Applebee's Cheese Chicken Tortilla Soup Copycat Recipe

I don't know about you, but I love eating out at restaurants. The problem is that my budget doesn't always support it since even a simple meal out at a restaurant can cost an arm and a leg. The good news is that rather than having to miss out on your favorite meals because you are on a limited budget you can use a "copycat recipe" to make your favorite restaurant dishes at home.

These recipes are reverse engineered to make a dish that tastes just like that one you have at the restaurant. The difference is that instead of having to pay the huge price tag for a restaurant meal, you just pick up the ingredients at the grocery store and make it yourself for a fraction of the cost. Not only that, but by making it yourself you get leftovers, too, which is always a good thing!

As an example, here's a copycat recipe that I have for Applebee's Cheese Chicken Tortilla Soup.

2 tsp. minced fresh garlic

1 cup chopped yellow onion

2 Tbsp. vegetable oil

4 Cups chicken stock

1/4 cup green pepper, chopped

1 can tomato puree (15 oz.)

1 Tbsp. finely minced jalapeño pepper (optional)

1 tsp. sugar

1/2 tsp. hot sauce (optional)

1 tsp. chili powder (optional)

1 tsp. Worcestershire sauce

1/2 tsp. salt

1/4 tsp. pepper

4 Tbsp. flour

1/2 Cup water

1 lb. cooked chicken, cubed or pulled

1 Cup cream

1/4 Cup non-fat sour cream

8 oz. processed cheese, 1-inch cubes

10 (6-inch) colored or yellow corn tortillas, 1/4-inch strips, fried

Roughly chopped Fresh cilantro (optional)

Sauté oil, garlic and onions in large pan until soft. Add the vegetable oil, chicken stock, green pepper, tomato puree, jalapeño pepper, salt, pepper, sugar, chili powder, Worcestershire sauce and hot sauce. Bring to low boil, then reduce heat and simmer 20 minutes. Cut tortillas into 1/4-inch strips and fry in oil or spray with oil and bake at 400ºF (while soup is cooking). Sprinkle with salt if desired. Thoroughly mix flour and water, then whisk into soup. Bring to a low boil, then simmer 5 minutes. Add chicken and simmer 5 minutes. Stir in sour cream and cheese (to taste). The soup should be served at 165ºF. After serving soup, pile tortilla strips into a "haystack" shape on top of the soup. Optional: garnish with freshly chopped cilantro. Makes 6-8 servings

This recipe is delicious and is really great for cold winter nights since soup is always a warm, filling meal. One of the great things about this recipe is that it makes enough to feed an entire family and is pretty cheap to make. Even if you just have one or two people to feed the leftovers can be easily stored and feed you for a few days. It's a great way to get restaurant-style soup on an eat at home budget.

Not even an attempt to make it look brown.

That was horrible, and you know that went right back. So you can almost be sure that if you're going to a restaurant like Houlihan's, or Friday's, or On the Border then you're going to get some really good chicken tortilla soup.

Now the one's above I've mention are all good. Actually I don't know about Friday's...in fact I don't know if they even have it, but I do know that On the Border has some tremendous tortilla soup. Houlihan's I recently had and it was OK. Not great, but I would get it again. The chunks of chicken in theirs was actually the best part.

Homemade Chicken Tortilla Soup Recipe

As all the other tortilla soup recipes this one is very easy to make and you will enjoy while making it. For this tortilla soup you will need a few more ingredients that will make your soup taste spicy and it will end up being very enjoyable for your family or friends. Enjoy.

You will need:

Chicken Chili

Onion (1, chopped)

Garlic (3 cloves, minced)

Chili powder (2 teaspoons)

Oregano (1 teaspoon, dried)

Tomatoes (1 can, 28 ounces, crushed)

Chicken broth (1 can or 10.5 ounces)

Water (1 1/4 cups)

Kernels (1 cup, whole, cooked)

Hominy (1 cup, white)

Chili green peppers (1 can or 4 ounce)

Black beans (1 can or 15 ounce, rinsed and drained)

Fresh cilantro (1/4 cup)

Chicken breasts (2 boneless, cooked and cut into bite-sized pieces)

Tortilla chips (crushed)

Monterrey Jack cheese (shredded)

Green onions (chopped)

How to do it:

The first thing you will need is to get a stock pot and this you will heat it you will heat it over medium heat; in here sauté the onion and garlic in oil until they are soft and then add chili powder, oregano, tomatoes, broth and water. Now that you have done this bring it to a boiling point and let it simmer for 5 to 10 minutes. Once you have done this add to the mixture the corn, hominy, chilies, beans, cilantro and chicken, and after this simmer everything for 10 minutes, now you can ladle the soup and serve it into individual bowls and top it with crushed tortilla, avocado, cheese and green onion. Now you will serve a magnificent soup.

Chicken and Bean Tortilla Soup Recipe

This soup tastes better because beans accompany it and you can have it done in your kitchen. Remember to add some more ingredients you like in order to make it much more tastier. This soup also includes chicken, corn and salsa and those ingredients make them amazing for any kind of dinner or maybe lunch if you prefer to.

You will need:

Chicken Chili

Vegetable oil (2 ½ teaspoons)

Corn tortillas (cut into ½ inch strips)

Chicken broth (3 cups)

Chili powder (1/2 teaspoon)

Dried Oregano (1/2 teaspoon)

Black beans, rinsed and drained (1 can or 15 ounces)

Kernel corn (drained, 1 can or 15 ounces)

Chicken breast (2 skinless, boneless and cut into bite size pieces)

Salsa (1/2 cup)

Fresh cilantro (1/2 cup, chopped)

How to do it:

To do this very easy recipe the first thing you need is to heat the oil in a large pot over medium heat, and in here add half of the tortilla strips, stirring them often until they are crisp, then drain them on paper towels, and repeat this process with the remaining ½ teaspoons of oil and tortilla strips, then once you have them all, set them aside and add the chicken broth, cumin, chili powder and the oregano to the pot, after this raise the heat to a high point and bring to a boil, then add the beans, corn and chicken salsa until they are ready to be left to simmer for about 2 minutes, or until the chicken is finally cooked and no longer pink inside. For the final step add the cilantro and the reserved tortilla strips and now you can serve in individual bowls.

Chicken Tortilla Soup

For years, I tried to duplicate the creamy enchilada soup from Chili's Bar & Grill. If you've ever had it, you'd know why. Finally, I was able to not only copy it, but make it even better!

You'll Need:

1 diced yellow onion
1 diced red pepper
4-5 cooked, diced chicken breasts
3 cans chicken broth
3 cups heavy cream
1 can (8 oz.) diced tomatoes
1- Chili Seasoning packet
1- Taco Seasoning Packet
1- (glass jar, from produce dept) Roasted Garlic bits
1- pkg. Soft Corn shells (for frying and putting on top)
Velveeta Cheese (about 1/4 of the large log)
1/2 stick butter

First, cook and dice your chicken. Even boneless breasts should be cooked at least 45 minutes at 350'.

Then chop your onion and pepper, and saute in 4 TBSP. butter. Add the diced chicken, keep sauteing on low heat. Add about 3 TBSP. roasted garlic bits. Add your chicken broth, then whisk in both packets of seasonings. Now add diced tomatoes, and finally, your heavy cream. Simmer, add Velveeta.

Keep stirring and simmering. Get a frying pan hot and add butter or cooking oil to the pan. Have paper towels ready. Use a pizza cutter to cut the soft corn shells into thin strips. When the oil is hot, throw the strips in, cook on each side for about 45 seconds. You'll be able to tell when they're done.

Serve the soup with strips on top, and some grated cheese and sour cream. Don't forget the margaritas!

Tortilla Mexican Soup Recipe - Chicken Tortilla Mexican Soup

This tortilla soup is a real treat if you like spicy soup.

6 tablespoons vegetable oil

8 (6-inch) corn tortillas, coarsely chopped

6 cloves garlic, minced

1/2 cup fresh cilantro, chopped

1 onion, chopped

1 (29 oz.) can diced tomatoes

2 tablespoons ground cumin

1 tablespoon chili powder

3 bay leaves

6 cups chicken broth

1 teaspoon salt

1/2 teaspoon ground cayenne pepper

5 boneless chicken breast halves, cooked

Directions

In a large stock pot, heat up the oil. Add the tortillas, garlic, cilantro and the onion. Saute for 2 to 3 minutes.

Stir in the tomatoes and bring to a boil. Add in the cumin, chili powder, bay leaves and the chicken stock. Return to a boil, reduce heat to medium and add salt and cayenne.

Simmer for 30 minutes, remove bay leaves and stir in the chicken. Heat through and serve.

Ravenously delicious. You can substitute ground turkey for the ground beef.

1/2 pound ground beef

2 teaspoons onions, chopped

6-2/3 cups chicken broth

1 (28 oz.) can crushed tomatoes

1-1/2 teaspoons ground cumin

1/2 clove garlic, minced

1/4 teaspoon cayenne pepper

1/4 teaspoon chili powder

Salt and pepper to taste

3 tablespoons cornstarch

1 cup cold water

2 (15 oz.) cans creamed corn

1-1/2 cups shredded American cheese

5 (6-inch) corn tortillas, cut into 1/2-inch strips

Directions

In a large skillet, combine the ground beef and onions over medium heat and sauté for 5 minutes, or until the beef is browned. Drain the excess fat and set the meat aside.

In a large pot, combine the broth, tomatoes, cumin and garlic; cook over high heat. Add the cayenne pepper, chili powder and salt and pepper to taste. Bring to a boil and reduce heat to medium low.

In a small bowl, combine the cornstarch with the water, stirring well until the cornstarch is dissolved. Add slowly to the soup, stirring constantly to thicken.

Add the reserved meat, corn and cheese to the soup and stir well. Finally, add the tortilla strips and allow to heat through.

This healthy tortilla soup features four kinds of beans, chicken and ranch dressing mix.

6 cups water

4 skinless, boneless chicken breasts

1 onion, chopped

1 (15 oz.) can kidney beans

1 (15 oz.) can ranch style beans

1 (15 oz.) can pinto beans

1 (15 oz.) can black beans, rinsed and drained

1 (15 oz.) can white hominy

2 (10 oz.) cans diced tomatoes with green chili peppers

1 (1.25 oz.) pkg. taco seasoning mix

Directions

In a large pot, combine the chicken and water over high heat. Cook for 30 minutes to 1 hour or until the chicken is done. Remove chicken from the pot, and cut into bite sized pieces.

Return the chicken to the pot. Add the onion, kidney beans, ranch style beans, pinto beans, black beans, hominy, tomatoes, taco seasoning and ranch dressing mix. Mix well, reduce heat to low and simmer for 30 minutes or until completely heated through.

1-1/4 cups chicken broth

12 (6-inch) corn tortillas, cut into 1/2-inch strips

1-1/4 cups green enchilada sauce

1-1/4 cups red enchilada sauce

1 teaspoon ground cumin

2 cups cooked turkey, chopped

1 cup half and half

1 tomato, chopped

1 jalapeno pepper, seeded and minced

1 avocado, peeled, pitted and diced

1 cup shredded Cheddar cheese

Directions

In a large pot, combine the chicken stock and tortilla strips. Cook over medium heat until the strips and broth thickens slightly. Stir in the green and red enchilada sauces and the cumin.

Stir in the turkey and the half and half; heat through but do not boil.

Divide soup among four bowls and garnish with diced tomatoes, jalapeno, avocado and cheese.

Chicken Tortilla Soup Recipe That's Really Incredible

My sister gave me this recipe for chicken tortilla soup with shredded after she served it at a special party at their house.

Ingredients of chicken tortilla soup recipe:

8 tablespoons Canola oil

5 10" to 12" corn tortillas

1 onion

6 garlic cloves

1 small bunch of cilantro

2 - 14.5 oz. cans of diced tomatoes

8 cups chicken stock

14 ounces of canned or frozen corn

3/4 - 1 1/2 Tablespoons ground cumin

1/2 - 1 Tablespoon chili powder

4 bay leaves

4 boneless, skinless chicken breast halves or try thighs

1/2 teaspoon cayenne pepper

Juice from 1 lime

Preparation of chicken tortilla soup recipe:

Dice the onion and mince the garlic.

Wash and towel try the cilantro, remove stems and chop.

Open your cans of tomatoes and have them at the ready. You don't have to measure out all the spices unless you like the way they have it all ready on the cooking shows.

Rinse the chicken under cold water and dry.

Methods of chicken tortilla soup recipe:

Make this all in one large soup pot or fry the tortilla strips in one and make the soup in another. I like to clean as few pots as possible especially when I'm working one handed. Cut up 2 of the tortillas into 1/4 inch strips and fry them in 3 tablespoons of Canola oil. You want them to be a golden brown but be careful not to burn them, they cook quickly. Depending on the size of your pot, you may have to cook several at time.

Remove the strips from pot and transfer to some paper towels to drain. Season with a little salt.

Heat the remaining oil over medium high heat and sauté the onions for a couple of minutes.

Add garlic and sauté for another minute or two. Tear the remaining 3 corn tortillas into bite size pieces and add to the pot.

Add the cilantro, stir, and cook for a minute more. Add the canned tomatoes with their juice and the chicken stock, cumin, chili powder, and bay leaves and bring to a boil.

Reduce heat to a simmer, add the corn, whole chicken breasts, and cayenne. Simmer the chicken breasts for 15 to 20 minutes until cooked throughout.

Remove the chicken breasts and put aside to cool. Turn off the soup at this point. Once the chicken breasts are cool, shred them with your hands and return to the pot.

Add your lime juice and taste for spiciness. If you like it hotter, add more of the spices. Reheat, and serve with the fried tortilla strips.

My sister usually serves this chicken tortilla soup with the fried tortillas, freshly diced avocado, grated cheddar cheese, and sour cream. The sour cream really helped mellow out some of the spices and gave the soup a wonderful creamy appearance. This soup is a meal.
