Two Delicious Vegetarian Chili Recipes

Do you love chili? Did you think you had to give up this old favorite because you would switch to a low calorie or vegetarian diet? Well, I will introduce you two vegetarian chili recipes. With them, you can enjoy healthier versions of one of your favorite dishes.

Of the two recipes, one is for the average palate, and the other is for those who like something spicier.

* Easy Vegetarian Chili

Here is a simple, easy to prepare chili recipe. For this recipe, you will need:

- 1/2 onion, diced

- 1 bell pepper, diced

- 3 garlic cloves, minced

- 2 teaspoons olive oil

- 1 can of diced tomatoes

- 3 tablespoons vegetable broth

- 2 tablespoons chili powder

- 1 can of pinto or black beans, drained

- 1 can of kidney beans, drained

1. Add the olive oil to a large soup pot. Add the onion, garlic and bell pepper to the pot, and saute for about 4 or 5 minutes.

2. Add the tomatoes, vegetable broth and chili powder to the pot. Stir the mixture together.

3. With the heat set to medium-low, add the black beans and kidney beans to the mixture.

4. Cook the chili for at least 20 minutes, stirring occasionally. If you have the time, reduce the heat and let the chili simmer for a while. The longer the cooking time, the more enhanced the flavor will be.

* Hot and Spicy Vegetarian Chili

Do you like your chili hot and spicy? If so, this recipe is for you.

For this recipe, you will need:

- 1 onion, diced

- 3 cloves of garlic, minced

- 2 tablespoons olive oil

- 1 28 ounce can of diced tomatoes

- 4 tablespoons of chili powder

- 1/2 teaspoon of cayenne pepper

- 1 teaspoon each of cumin, red pepper flakes, and salt

- 1 1/2 cups of hot salsa

- 1 cup of water

- 3 cans of kidney beans

1. In a large soup pot, saute the onions and garlic in olive oil for about 4 or 5 minutes.

2. To the pot, add your tomatoes, cayenne, chili powder, cumin, red pepper, salt, hot salsa and water. Give the mixture a stir, and then let it simmer for about 30 minutes, stirring occasionally.

3. Add the bean to the pot, then let the chili simmer for another 30 minutes. After that, it's ready to serve.

King Ranch Chicken Casserole - Texas' Favorite and Most Loved Casserole Recipe

King Ranch Chicken is probably the most well-known and loved casserole in Texas. But how chicken and the King Ranch came together is unknown to this day.

The King Ranch, the largest ranch in the Texas, is known for its cattle breeding and oil and gas reserves. But chicken has virtually no association with this ranch. Despite this mystery, this classic chicken casserole recipe is a part of Texas food tradition that should be experienced by all.

King Ranch Chicken Casserole Recipe

Ingredients

Sauce:

2 tablespoons unsalted butter

2 garlic cloves

1/4 teaspoon quality chili powder

Pinch of ground cumin

2 tablespoons all-purpose flour

3/4 cup unsalted chicken stock

1/2 cup milk

2 tablespoons sour cream

salt and pepper to taste

Filling:

1 tablespoon unsalted butter

1/2 medium green bell pepper, chopped

1/2 medium onion, chopped

1/4 cup fresh green New Mexican or poblano chile, chopped

8 ounces fresh mushrooms, chopped fine

1/2 cup canned diced tomatoes

2 tablespoons pimientos

Vegetable oil for frying

8 corn tortillas

3 cups shredded cooked chicken, diced

1 1/2 cups grated mild cheddar cheese

1/4 cup sliced scallions

1/4 cup sliced pimiento-stuffed green olives

Directions

Preheat oven to 350 degrees F. Grease a 9" x 12" baking dish.

In a medium skillet, melt the butter. Add the garlic, chili powder, and cumin, and saute for a couple of minutes. Sprinkle in the flour, stirring. Slowly pour the chicken stock and milk into the skillet, stirring continuously to avoid lumps. Simmer the sauce for about 3 minutes, or until it has thickened.

Stir in the sour cream, salt, and pepper. Reserve the sauce for later. (The sauce can also be made ahead and refrigerated.)   

To make the filling, melt the butter in a skillet. Add all of the rest of the filling ingredients, and saute until softened and combined well. Reserve the filling.

Heat about 1/2 inch of the oil in a small skillet. With a pair of tongs, dunk each tortilla into the oil for a few seconds, or just long enough to soften them.

In the baking dish, layer half the tortillas and chicken a third of the sauce, and one half each of the filling, the cheese, scallions, and olives. Spoon over another third of the sauce, then repeat the layering of the remaining ingredients. End with the last of the sauce.

Bake the King Ranch chicken casserole for 30 minutes, just until it is heated throughout, and bubbly. Serves 6.

Awesome Tandoori Chicken Recipes

I am glad to have shared with you this secret recipe to cooking awesome tandoori chicken. Now you can have it to enjoy at home. It's easy and authentic!

When I wouldn't be home for dinner, I usually cook it. My children ate it and said it was really good and always ask me to make it again. You'll be amazingly surprised!

#1. Ingredients of tandoori chicken recipe #1 (For 6-8 servings):

1 pt. yogurt

1/2 c. white vinegar

1 1/2 tbsp. ground cumin

1 tbsp. red chili powder

1 tbsp. garam masala

1 tbsp. salt

2 tbsp. freshly ground black pepper

4 chickens, cut up and skinned

1/3 c. red color, optional

1 heaping tbsp. garlic/ginger paste or 4 garlic cloves, mashed, 1 piece fresh ginger (size of walnut), minced

1/2 c. oil

Cooking Instructions of tandoori chicken recipe #1:

Mix all ingredients well in a large pan, deep enough to hold 4 chickens. Make 3 deep gashes with sharp knife into each breast, 1 long gash down legs and 3 gashes on thighs.

Marinate the chicken halves for at least 6 hours and preferably overnight, turning the pieces occasionally to coat them well. When ready to cook the chickens, remove them from the marinade.

Preheat oven to 500 degrees for at least 1/2 hour. Put the chicken in a shallow pan, breast side up. Roast until crusty, about 20 minutes. Turn over and roast 10 minutes more. The chicken should be deeply crusted but never scorched.

Notes: COOKING ON A CHARCOAL GRILL: Wipe the grill with a bit of oil so that the chicken will not stick. Brush the chicken with the marinade and sprinkle with lemon juice. Grill until chicken is golden red, about 15 minutes. Turn and grill until the second side is golden, about 10 minutes, basting once with lemon juice.

TO SERVE: Put the chicken on a large heated platter, on a bed of lettuce leaves. Decorate down the center of the platter with thin lemon wedges and thin slices of red onion.

Ingredients of tandoori chicken recipe #2 (For 4 servings):

1 (2 to 3 pound) chicken, skinned and quartered

2 tablespoons lemon juice

1 teaspoon salt

4 teaspoons ground allspice

2 tablespoons plain yogurt

2 tablespoons lemon juice

2 tablespoons vegetable oil

2 tablespoons distilled white vinegar

Cooking Instructions of tandoori chicken recipe #2:

Make cuts in the chicken flesh, almost to the bone. Pour 2 tablespoons of the lemon juice over the chicken and rub in the salt.

Combine the tandoori spice, yogurt, 2 tablespoons lemon juice, oil and the vinegar. Coat the chicken with the mixture, rubbing well into the cuts. Place the chicken in a 13×9 inch pan, cover with foil and refrigerate overnight, turning occasionally.

Preheat oven to 350 degrees F (175 degrees C).

Bake covered chicken at 350 degrees F (175 degrees C) for 1 hour. Remove foil the last 15 minutes of baking.

12 Fresh Asparagus Spears

4 (4 0Z.) Boned, Skinned

Chicken Breast Halves

1/4 c (1 Oz.) Shredded Swiss

2 c Sliced Mushrooms

3 tb Chablis OR White Dry Wine

1 ts Lime Juice

1/2 tb Dried Whole Tarragon

1 ts Minced Fresh Parsley

Snap Off Tough Ends Of Asparagus, Remove Scales With Vegetable Peeler. Set Aside. Trim Fat From Chicken. Place Each Breast Between Wax Paper &
Flatten To 1/4 in. Thickness. Place 3 Asparagus Spears On Each Chicken Breast; Top With 1 T. Cheese.

Roll Up Lengthwise; Secure With Wooden Picks. Place Seam Side Down in A 10 Inch Glass Pie Plate Coated with Cooking Spray. Cover With Plastic Wrap, Venting One Corner. Microwave At High 5 To 6 Min. OR Until Done. Let Chicken Rolls Stand Covered 5 Min. Combine Mushrooms & Wine, Lime Juice & Tarragon in A 1 Qt. Glass Measure. Microwave At High 2-3 Min.

>> Green Chicken Enchiladas

3 C chopped -- cooked chicken

1 Pkg corn tortillas -- (12 each)

10 Whole green Spanish -- (10 to 12) tomatoes (tomatillos)

1 Long green chili pepper

1 Clove garlic

2 avocados -- (2 to 3)

1/2 C grated Mozzarella cheese

Dip each of the tortillas in hot cooking oil. Place 2 tablespoons chopped, cooked chicken filling on each and roll. Place rolled tortilla seam side down in baking dish. Sauce: Peel dried leaves of tomatillos and boil in 3 cups water with green chili pepper and garlic.

When tomatillos and pepper are tender, peel off skin and place in blender. Add water you boil them with to make sauce. Blend well. Slice 2 or 3 avocados and fold in sauce. Avocados should be chunky. Pour sauce over enchiladas. Grate Mozzarella cheese and sprinkle on top. Place in oven to melt cheese. Before serving, may top with sour cream if desired.

Curry Chicken Recipe - Which Nationality?

There are hundreds of curry chicken recipes from every nation which has the generic "curry" in its cuisine. However, most people think of Indian curry when they think of a curry chicken recipe, so here's a very simple one to start you off.

Basic Curry Chicken Recipe

4 chicken pieces (leg, breast or thigh (make that 8)) or 500g (1 lb) of chicken cubes from thigh or breast
Vegetable oil for frying
Large onion, peeled and chopped
Tin chopped tomatoes
2 cloves garlic, crushed
1 inch fresh ginger root, peeled and grated
2 tbsp ground cumin
2 tbsp ground coriander
½ tsp turmeric
2 fresh green chillies, chopped or 1 - 2 tsp chilli powder
Salt to taste

Heat the oil in a heavy pan and fry the chicken pieces or cubes until lightly browned. Drain and remove from the pan. Add more oil if necessary and fry the onion until golden. Add the garlic and ginger and stir for a minute then the cumin, coriander, turmeric and chilli and stir for 2 minutes. If you don't want the curry to be too hot, remove the seeds from the chillies before adding or leave them whole.

Add the tin of tomatoes and salt to taste. If the mixture seems too dry, add a little water then bring to the boil. Reduce the heat to a simmer and cook for 30 to 40 minutes or until the chicken is cooked.

As with any curry, this one improves with freezing or keeping for 24 hours.

There must be thousands of Chinese chicken recipes but perhaps fewer Chinese chicken recipes than stir fry and so on. Here's one that's very simple to do.

Chinese Chicken Recipe

500g (1 lb) cubed chicken breast
Vegetable oil for frying
1 onion, peeled and sliced vertically (i.e. from root to stalk)
2 cloves garlic, crushed
1 tbsp curry powder
2 tbsp soy sauce
1 tbsp cornflour mixed with 2 tbsp water
Salt to taste
250ml water

Heat the oil in a saucepan or wok, fry chicken until light brown then remove from the pan and drain. Add more oil if needed and fry the onions until golden then add the garlic and curry powder and fry for 2 minutes

Add soy sauce and water then cover and simmer for 20 minutes or until the chicken is cooked. Stir in cornflour and water mixture and bring to the boil, stirring until thickened. Check seasoning and add salt if needed.

You can include carrots, broccoli, mushrooms or other vegetables of choice to this curry by stir frying them until nearly tender, prior to frying the onions.

As well as India and China, Malaysia and Thailand feature chicken curry recipes in their cuisine. In Thailand, green chicken curry is probably the best known and in Malaysia, Kari Ayam which includes potatoes, coconut milk and star anise amongst the "normal" ingredients of curry powder, garlic and ginger.
