Old-fashion Corn Chips, Chili, and Cheese Casserole With Country Surprise Slaw

With the current grocery prices and all the other economic downturns, we are all looking for economical recipes that will help us feed our families nutritious meals. Here are a couple of old-fashion recipes from my vintage recipe collection. Both are quick, easy, economical and tasty. Perfect for an inexpensive family meal. Corn chips, chili, and cheese casserole uses a minimal number of ingredients, goes together quickly and only needs to bake for 20 minutes. Not only is it tasty and economical, it is also perfect for the busy mom. Country surprise slaw has an apple in its ingredient list, giving it a little something extra and adding fruit to the mix.

CORN CHIPS, CHILI, AND CHEESE CASSEROLE

2 tbsp margarine
1 lb ground beef
1 1/4 oz pkg chili seasoning mix
1 cup shredded cheddar cheese
2 cups coarsely crumbed corn chips
1 medium onion, chopped
2 cans (8 oz each) tomato sauce

Melt margarine in skillet and brown ground beef with onion. Drain. Stir in chili seasoning mix, tomato sauce, and 1 cup water. Simmer 10 minutes. Stir occasionally. Lightly grease 2-quart casserole dish. Layer 1/2 chili mixure, corn chips, then cheese. Repeat layers. Bake 20 minutes at 350 degrees.

COUNTRY SURPRISE SLAW

6 cups shredded or chopped cabbage
2 large carrots, shredded
1 medium bell pepper, chopped
1 large red apple, chopped
3 green onions, sliced
1/2 cup chopped celery
1 cup mayonnaise
1/2 cup sugar
2 tablespoons cider vinegar
1 teaspoon salt
1/4 teaspoon pepper

In a large bowl, combine the cabbage, carrots, bell pepper, apple, onions, and celery. In a small mixing bowl, combine the mayonnaise, sugar, vinegar, salt and pepper. Pour dressing mix over cabbage mixture and toss to coat well. Put in a covered bowl and refrigerate.

Chicken and Bell Pepper Casserole with Spicy Chipotle

Yield: 12 servings
Ingredients
The chicken has to marinate overnight, so plan accordingly.
1 (7 ounce) can chipotle chiles in adobo, chiles
stemmed and seeded, adobo reserved
1 tablespoon ancho chili powder
12 whole chicken breasts (skin on or removed) or
your favorite part of the chicken
Salt and freshly ground pepper
3 tablespoons olive oil
1 large onion, cut into 1/2−inch dice
1 green bell pepper, cut into 1/2−inch dice
2 red bell peppers
1 1/2 cups fat−free chicken stock or canned low−sodium broth
1 pound tomatillos, husked, washed and coarsely chopped
1 large tomato, coarsely chopped
2 large garlic cloves, minced
1/4 teaspoon cayenne pepper
6 scallions, thinly sliced
1 cup chopped cilantro leaves
Preparation
In a food processor, puree the chipotles and adobo until smooth. Put the chicken breasts on a large rimmed baking sheet and season with salt and pepper. Coat the legs thoroughly with the puree. Cover and refrigerate overnight.
Preheat the oven to 350 degrees F.
In a large skillet, heat 1 tablespoon of the oil until shimmering. Add 4 of the chicken breasts to the skillet, skin side down, and brown over moderate heat, about 4 minutes per side.
Transfer to a large rimmed baking sheet. Wipe out the skillet and repeat with the remaining oil and chicken breasts. Wipe out the skillet again.
Spray the skillet with cooking spray (olive oil spray) in a large skillet. Add the onion and green pepper and cook over moderately low heat until lightly browned, about 15 minutes.
Meanwhile, roast the red peppers directly over a gas burner or under a preheated broiler, turning occasionally, until charred all over. Transfer the peppers to a plate and let stand for 10 minutes. Discard the charred skin, stems and seeds and cut the red peppers into 1/2−inch dice.
Add the chicken stock to the onion and green pepper and simmer over moderate heat for 5 minutes. Add the tomatillos, tomato, garlic, cayenne and the roasted red peppers and simmer over moderate heat for 10 minutes.
Season the sauce with salt and pepper and pour into 2 large baking dishes. Set the chicken breasts/or avorite parts on top of the sauce, skin side up. Bake for about 25 minutes, or until the chicken is  deeply browned and cooked through. Scatter the scallions and cilantro over the chicken and serve.

King Ranch Chicken Casserole - Texas' Favorite and Most Loved Casserole Recipe

King Ranch Chicken is probably the most well-known and loved casserole in Texas. But how chicken and the King Ranch came together is unknown to this day.

The King Ranch, the largest ranch in the Texas, is known for its cattle breeding and oil and gas reserves. But chicken has virtually no association with this ranch. Despite this mystery, this classic chicken casserole recipe is a part of Texas food tradition that should be experienced by all.

King Ranch Chicken Casserole Recipe

Ingredients

Sauce:

2 tablespoons unsalted butter

2 garlic cloves

1/4 teaspoon quality chili powder

Pinch of ground cumin

2 tablespoons all-purpose flour

3/4 cup unsalted chicken stock

1/2 cup milk

2 tablespoons sour cream

salt and pepper to taste

Filling:

1 tablespoon unsalted butter

1/2 medium green bell pepper, chopped

1/2 medium onion, chopped

1/4 cup fresh green New Mexican or poblano chile, chopped

8 ounces fresh mushrooms, chopped fine

1/2 cup canned diced tomatoes

2 tablespoons pimientos

Vegetable oil for frying

8 corn tortillas

3 cups shredded cooked chicken, diced

1 1/2 cups grated mild cheddar cheese

1/4 cup sliced scallions

1/4 cup sliced pimiento-stuffed green olives

Directions

Preheat oven to 350 degrees F. Grease a 9" x 12" baking dish.

In a medium skillet, melt the butter. Add the garlic, chili powder, and cumin, and saute for a couple of minutes. Sprinkle in the flour, stirring. Slowly pour the chicken stock and milk into the skillet, stirring continuously to avoid lumps. Simmer the sauce for about 3 minutes, or until it has thickened.

Stir in the sour cream, salt, and pepper. Reserve the sauce for later. (The sauce can also be made ahead and refrigerated.)

To make the filling, melt the butter in a skillet. Add all of the rest of the filling ingredients, and saute until softened and combined well. Reserve the filling.

Heat about 1/2 inch of the oil in a small skillet. With a pair of tongs, dunk each tortilla into the oil for a few seconds, or just long enough to soften them.

In the baking dish, layer half the tortillas and chicken a third of the sauce, and one half each of the filling, the cheese, scallions, and olives. Spoon over another third of the sauce, then repeat the layering of the remaining ingredients. End with the last of the sauce.

Bake the King Ranch chicken casserole for 30 minutes, just until it is heated throughout, and bubbly. Serves 6.
