Mexican Cuisine - Chicken Enchilada Soup

The perfect soup for serving as an appetizer to a great home cooked Mexican style meal, the soup is hearty enough to be served as a meal all by itself. The combination of beef broth chicken broth and cream of chicken soup is what makes this soup unique. The green chilies and chili powder add just enough heat to give the soup a little bite, but not be overpowering.

For added color and flavor, consider adding a (14 ounces) can of fire roasted diced tomatoes to the soup, at the same time as the broth and other ingredients are being stirred in. For more heat, consider adding a chopped jalapeno or serrano pepper. Deep fry the tortilla strips until golden brown and drain on paper towels to add more crunch, and a bit more authenticity.

This is a dish everyone loves, it is easy to make, despite the long list of ingredients and well worth the small amount of time to create.

Chicken Enchilada Soup

Ingredients:

1 small White Onion, chopped
1 Garlic Clove, chopped
2 tablespoons Extra Virgin Olive Oil
1 (14 ounces) can Beef Broth
1 (14 ounces) can Chicken Broth
1 (10-3/4 ounces) can Cream of Chicken Soup
1 (4 ounces) can chopped Green Chilies
2 cups Boneless, Skinless Chicken Breast, cooked and shredded
1-1/2 cups Cold Water
1 tablespoon Worcestershire Sauce
1 teaspoon Ground Cumin
1/2 teaspoon Chili Powder
1/2 teaspoon Fresh Ground Black Pepper
6 Flour Tortillas, cut into ½-inch strips
3 cups grated Monterrey Jack Cheese

Preparation:

1. Add olive oil to large stockpot. Heat over medium high heat.

2. Add onion and sauté 2 minutes. Add garlic and sauté additional minute.

3. Add beef broth, chicken broth, cream of chicken soup, chopped green chilies, shredded chicken breast, cold water, Worcestershire sauce, ground cumin, chili powder, and fresh ground black pepper to stockpot.

4. Reduce heat to low and simmer one hour.

To Serve:

1. Add tortilla strips and Monterrey Jack cheese to individual serving bowls.

2. Ladle hot soup into bowls and serve.

Two recipes for very tasty Tex Mex foods that are perfect for your family's table. And they are perfect for diabetics, too. If you have diabetics in your family or among your guests there will be no reason to prepare a second entree for them. Choose from Gold's Chicken Enchilada Casserole or Chili Con Queso. The Queso is great for sitting around in front of the TV watching football or other sport.

CHILE CON QUESO

1 lb ground beef

1 can kidney beans

1 can (8-oz) tomato sauce

1 tsp salt

1/2 cup chopped onion

1 can (16-oz) diced tomatoes, chili ready

chili powder to taste

dash of red pepper

shredded cheddar cheese

In a large deep skillet, brown the ground beef with the onion. Pour mixture into a colander and drain well. Rinse with hot water and drain. Wipe excess drippings from pan with a paper towel. Return mixture to skillet and add the beans, tomato sauce, salt, tomatoes, chili powder, and red pepper. Stir to blend ingredients well. Cover skillet and simmer for 30 minutes, stirring occasionally. Top individual servings with the cheese and serve with baked tortilla chips.

GOLD'S CHICKEN ENCHILADA CASSEROLE

2 chicken breasts

2 tbsp vegetable oil

1 onion, chopped

1 can (28-oz) diced tomatoes with green chilies

1 can (8-oz) tomato sauce

1 pkg enchilada seasoning mix

1/2 tsp garlic powder

1/4 cup fresh chopped parsley

1 pkg (6-oz) corn tortillas

1 can (3.8-oz) sliced black olives

2 cups shredded Monterrey Jack cheese

Preheat oven to 350 degrees. Cook chicken breast in a skillet with a small amount of water, until tender. This takes about 15 minutes. Allow chicken to cool before shredding. Heat the oil in a large skillet and add the onion; saute until tender. Add the tomatoes, tomato sauce, enchilada seasoning, garlic powder and parsley, stirring to blend together. Bring to a boil, reduce heat to simmer, and cook, uncovered, for 15 minutes. Place a third of the corn tortillas in the bottom of a 9 x 13 x 2-inch baking dish that has been lightly sprayed with nonstick cooking spray. Pour a third of the meat mixture over the tortillas and layer with a third of the olives and a third of the cheese. Repeat layers two more times, ending with cheese. Bake uncovered for 30 to 40 minutes.

Yield: 8 servings of 1 cup each. Per serving: 320 calories, 25 g carbs, 21 g protein

The Ancho is a dried poblano chile which is then ground into powder. Ancho chiles have a mild, fruity and slightly sweet taste. They start out as fresh green poblano chiles and after being ripened to red and then dried, they become shriveled, smoky and dark brown in color. Left to dry, the chiles can be crushed and made into spice powder or used to season chili and other Mexican dishes such as mole and tacos.

I created this method at home, tested it on my husband and then tried in at my bistro after my husband raved about it and encouraged me to do so. My bistro customers were pleased he asked me to do so. It is now a popular bistro chili recipe.

Chicken Enchilada Soup

Ingredients:

1-tablespoon Vegetable oil

Chicken Chili

1-pound Chicken breast filets

1-cup Onion, finely chopped

8-ounces Green chilies or chipotle peppers, chopped

16-ounces Chicken broth

1-cup Masa harina

3-cups Water

1-cup Enchilada sauce

16-ounces Velveeta® cheese

1-teaspoon Salt

1-teaspoon Garlic powder

1-teaspoon Chili powder

1-cup Cheddar cheese, shredded

3-cups Tortilla chips, crumbled

1-cup Sour cream

Instructions:

Add 1 tablespoon of oil to large pot over medium heat. Brown chicken 5 minutes per side and set aside. Add onions and peppers; sauté over medium heat for about 2 minutes. Add chicken broth. Combine masa harina with 2 cups of water in a medium bowl and mix until blended. Add masa mixture to pot with onions and broth. Add remaining water, enchilada sauce, Velveeta® cheese and spices to pot; bring to boil. Shred or cut the chicken into small pieces and add to pot. Reduce heat; simmer for 30 to 40 minutes.

Serve soup and garnish with shredded cheddar cheese, crumbled tortilla chips and sour cream.

Serves 6

Note: To make it really spicy just add 1 to 2 teaspoons of crushed red pepper.

Chili's Chicken Enchilada Soup Recipe!

Today is your lucky day, my friend! You are about to learn to make Chili's famous Chicken Enchilada Soup in your own home. I stumbled upon this recipe two days ago, made it last night, and the response I got totally inspired me to write this article!

This is THE perfect soup. It's perfectly balanced in every way a soup can be balanced. Not too mild, not too spicy. Not too creamy, not too watery. Not too chunky, not too plain.

Chicken Chili

The finishing touches of shredded mixed cheese (monterey jack and cheddar), pico de gallo, and crunchy tortilla strips make it not only balanced, but fun to eat.

I've been in love with this soup forever. I was absolutely stoked to come across the recipe. I served mine to my wife, our twin 12-year-old daughters, a friend/coworker, and two neighbors (yes, the recipe makes A LOT!) Everyone's eyes rolled back, closed, and were accompanied by hearty utterances of "Mmmmm..."

Oh great, now I'm going to have to make it again and again! ;)

These are the ingredients I used:
1/2 cup vegetable oil 1/4 cup chicken base 3 cups diced yellow onions 2 teaspoons ground cumin 2 teaspoons chili powder 2 teaspoons granulated garlic 1/2 teaspoon cayenne pepper 2 cups Masa Harina (Mexican flour) 4 quarts water (divided into 1 and 3) 2 cups crushed tomatoes 1/2 pound processed American cheese, cubed 3 pounds cooked chicken, pieced pico de gallo, mixed cheese shreds, and crunchy tortilla strips, to taste

All of these ingredients are fairly common and available in any grocery store. If your store has a "Hispanic Foods" aisle, you will find Masa Harina there. Fresh pico is recommended over canned or jarred. Tortilla chips will work when home-fried strips are not practical.

To make your Chili's Chicken Enchilada Soup:
Combine oil, chicken base, onion, and spices in a large pot. Saute until onions are soft and clear, about 5 minutes. In a large mixing bowl, combine Masa Harina with 1 quart water. Stir until all lumps dissolve. Add to sauteed onions, bring to a boil. Once mixture starts to bubble, continue cooking for 2-3 minutes, stirring constantly. Add remaining 3 quarts of water and crushed tomatoes. Let mixture return to a boil, stirring occasionally. Add American cheese and chicken. Reduce heat and simmer to desired consistency. Serve in large bowls. Top with mixed cheese shreds, pico, and tortilla strips. Enjoy!

How-to:
