Tex Mex Recipes That Are Okay For Diabetics, Too - Chicken Enchilada Casserole and Chili Con Queso

Two recipes for very tasty Tex Mex foods that are perfect for your family's table. And they are perfect for diabetics, too. If you have diabetics in your family or among your guests there will be no reason to prepare a second entree for them. Choose from Gold's Chicken Enchilada Casserole or Chili Con Queso. The Queso is great for sitting around in front of the TV watching football or other sport.

CHILE CON QUESO

1 lb ground beef

1 can kidney beans

1 can (8-oz) tomato sauce

1 tsp salt

1/2 cup chopped onion

1 can (16-oz) diced tomatoes, chili ready

chili powder to taste

dash of red pepper

shredded cheddar cheese

In a large deep skillet, brown the ground beef with the onion. Pour mixture into a colander and drain well. Rinse with hot water and drain. Wipe excess drippings from pan with a paper towel. Return mixture to skillet and add the beans, tomato sauce, salt, tomatoes, chili powder, and red pepper. Stir to blend ingredients well. Cover skillet and simmer for 30 minutes, stirring occasionally. Top individual servings with the cheese and serve with baked tortilla chips.

GOLD'S CHICKEN ENCHILADA CASSEROLE

2 chicken breasts

2 tbsp vegetable oil

1 onion, chopped

1 can (28-oz) diced tomatoes with green chilies

1 can (8-oz) tomato sauce

1 pkg enchilada seasoning mix

1/2 tsp garlic powder

1/4 cup fresh chopped parsley

1 pkg (6-oz) corn tortillas

1 can (3.8-oz) sliced black olives

2 cups shredded Monterrey Jack cheese

Preheat oven to 350 degrees. Cook chicken breast in a skillet with a small amount of water, until tender. This takes about 15 minutes. Allow chicken to cool before shredding. Heat the oil in a large skillet and add the onion; saute until tender. Add the tomatoes, tomato sauce, enchilada seasoning, garlic powder and parsley, stirring to blend together. Bring to a boil, reduce heat to simmer, and cook, uncovered, for 15 minutes. Place a third of the corn tortillas in the bottom of a 9 x 13 x 2-inch baking dish that has been lightly sprayed with nonstick cooking spray. Pour a third of the meat mixture over the tortillas and layer with a third of the olives and a third of the cheese. Repeat layers two more times, ending with cheese. Bake uncovered for 30 to 40 minutes.

Yield: 8 servings of 1 cup each. Per serving: 320 calories, 25 g carbs, 21 g protein

Chili Spiced Chicken Meal (Suitable For Diabetics!) In 30 Minutes

For an easy meal that can be ready in around thirty minutes try this Chili-Spiced Chicken. Add some crunch, color, and a tad of citrus by adding Broccoli with Orange Cream Sauce (A good way to interest your kids in this healthy vegetable!). Dessert is elegant but very easy. French Vanilla Tarts with Fresh Berries and Mint make it look like you've really outdone yourself! This meal is perfect for the harried housewife, busy cook, or the person who doesn't really like to cook but wants to impress someone. Beginning cooks will also find this meal to be one they can do easily.

CHILI-SPICED CHICKEN

Chicken Chili

8 skinless, boneless chicken breasts
2 tsp onion powder
1 tsp salt
1 1/2 tsp paprika
1/2 tsp chile powder
Cooking oil spray

Preheat oven to 350 degrees. Combine spices in a small bowl. Sprinkle spice mixture evenly over chicken breasts. Heat a large non-stick skillet over medium-high heat. Spray pan with cooking spray. Add chicken to pan and saute about 2 minutes on each side. Remove chicken to a shallow baking pan and bake approximately 15 minutes or until juices run clear.

BROCCOLI WITH ORANGE CREAM SAUCE

1 1/2 lbs fresh broccoli, cut into florets
6 oz fat-free cream cheese, cubed
1/4 cup fat-free milk
1/4 tsp thyme
1/4 tsp salt
1/4 tsp grated orange peel
1/4 cup unsweetened orange juice
2 tbsp chopped walnuts

Steam broccoli for 6 to 8 minutes or until crisp-tender. Meanwhile, in a small saucepan, combine the cream cheese, milk, thyme, salt and orange peel. Cook and stir over low heat until blended. Stir in orange juice until combined. Place broccoli in a serving dish; top with the orange sauce and sprinkle with nuts.

Yields 6 servings 3/4 cup each =126 calories, 14 g carbs, 12 g protein

MINI FRENCH VANILLA TARTS WITH FRESH BERRIES AND MINT

1 box (1.34 oz) Sugar-Free French Vanilla Pudding and Pie Filling Mix
1 pkg Graham cracker tart shells
Fresh seasonal berries
Mint sprigs for garnish, if desired

Prepare pudding mix as directed on box. Pour pudding into tart shells and refrigerate. Before serving, add 3 or 4 fresh berries and a mint sprig, if desired, for garnish.

HINT: SAVE ANY LEFTOVER CHICKEN IN THE REFRIGERATOR, SEALED IN A ZIPLOCK BAG, FOR USE LATER IN THE WEEK. PERFECT FOR CHICKEN TACOS.

Black Bean Chicken Salad With Lime Vinaigrette Dressing That's Suitable for Diabetics

How to make a fish soup healthy garden (and this is good for diabetics, too!)

Now that the season came autumn and the weather is cooler than us, we often seem to soups and fresh fish soup to turn a sad day. Here is a recipe for a healthy and abundant fish soup with vegetables for days. But there is no need to wait for a cold and cloudy days. It 's perfect for everyday, even hot, sunny ones!

VEGETABLES chowder

2 tablespoons butter

1 med green pepper, chopped

1 cup celery, thinly sliced

Cup chopped green onions, 04:01

1.8 V. TeaInstant minced garlic

One can (28 ounces) diced tomatoes, do not drain

Two cups water

1 teaspoon chicken bouillon granules of instant tea

4.1 V. teaspoon salt

4.1 V. teaspoon dried basil

1.8 V. teaspoon dried dill

3 drops hot pepper sauce

1 cup of frozen whole kernel corn

1 pound fresh white fish fillets about half a centimeter thick, cut into pieces

Melt in a saucepan with 3 liters or Dutch oven, the butter. Add the peppers, celery, onions and garlic in butter. Cookthe mixture on medium heat, stirring constantly, until vegetables are tender. Add tomatoes, water, chicken broth, salt, basil, dill, and hot chili sauce. Heat the mixture to a boil then reduce heat and simmer for 15 minutes. Stir in corn. Mix gently to not break the fish pieces of fish. Cook over medium heat for about 5-6 minutes or until fish flakes easily when forked.

Yield: 6-8 servings
