8. Mini quiches....make a batch of crust-less quiche and cook in muffin tray. Each 'muffin' will be a wonderful healthy snack for kids. 9. Chilled fruit surprise - slice a combination of strawberries, bananas, kiwi fruit, watermelon, grapes or in season fruit. Place in small resealable plastic container. Top with apple juice; do not overfill. Seal, freeze. When packed in lunchbox, will keep sandwiches cool and prove a refreshing treat on a hot day.
10. Rice cakes spread with mashed avocado, mashed banana and cinnamon, or try mashed avocado, sliced tomato and sprouts.
11. Chopped hard-boiled egg served with low fat mayo, salt, pepper on a crisp bread.
12. Leaf wrappers: wrap a cheese finger, celery stick and carrot stick in a lettuce leaf. Wrap in foil and place in lunchbox. Contents will be kept moist.
13. Yoghurt tub.
14. Baby Bell Cheese and low fat cracker.
15. Creamy dates: slice dates lengthways, remove stone. Fill with Philadelphia cream cheese (low fat).
16. Quick sausage rolls: wrap a skinned (good quality) sausage in several sheets of filo pastry. Brush pastry with beat egg to glaze. Cut into desired lengths. Bake in moderately hot oven for 15-20 minutes. Rolls can be frozen.
17. Same as above but use fresh chicken breast strips and cut to 2" - use tomato or favorite dipping sauce
18. After school hot snack attack: Spread a round of pita bread with tomato paste and herbs. Top with tomato, ham, mortadella, add onion, sliced mushrooms or pineapple. Sprinkle grated low fat hard cheese over pita bread. Grill to make a tasty pizza. If no pita bread is available, substitute a crisp bread.
19. Fruity kebabs: place bite size pieces of fruit in season on kebab skewers.
20. Pop top sandwich tuna tin, crisp bread, sachet of mayonnaise. Kids can put their snack together at school so that it doesn't go soggy.

What you'll need:

- 1 ounce butter

- 1/2 cup onion, finely chopped

- 3/4 teaspoon chile powder

- 2 drops hot sauce

- 1 cup barbecue sauce

- 2 Tablespoon honey

- 2 cloves garlic, minced

- 1 teaspoon cumin

- 1/2 cup coffee liqueur

- 2 Tablespoon Worcestershire sauce

- 1 teaspoon salt

- 20 chicken wings, cut in half

- salt and pepper, to taste

In a 2-quart saucepan melt the butter and saute garlic and onion over medium heat for about 3 minutes. Add the cumin and chili powder and cook, stirring the whole time for 2 minutes.

Next, blend in the coffee liqueur and cook to cut the liquid by one-half. Then, you'll stir in the hot sauce, Worcestershire, barbeque sauce and the salt. Simmer for 5 minutes - afterwards, take off from the heat and add the honey. Set aside and allow the wings to cool.

You'll need to put in order the chicken wings by removing and discarding the tips. Then, cut or divide the wings in half at the remaining joint.

So you can practically be sure that if you're going to a cafeteria like Houlihan's, or Friday's, or On the Border then you're going to get some surely good chicken tortilla soup.

Now the one's above I've mention are all good. surely I don't know about Friday's...in fact I don't know if they even have it, but I do know that On the Border has some immense tortilla soup. Houlihan's I recently had and it was Ok. Not great, but I would get it again. The chunks of chicken in theirs was surely the best part.

Ingredients

1.5 pounds ground beef or turkey

1 small onion, diced

4 garlic cloves, minced

1 (15oz) can tomato sauce

1 (1.25 oz) packet of chili seasoning

2 cans red kidney beans, drained

2 cans diced tomatoes, drained

3 Tbsp. Brown sugar

4 Tbsp. Vegetable oil

4 Tbsp. All-purpose flour

Directions

1) Brown the ground beef or turkey in a skillet and pour off excess grease.

2) In a large soup pot, integrate cooked beef, onion, garlic, tomato sauce, chili seasoning, beans, tomatoes, brown sugar, flour, and oil. Then pour in vegetable stock until you reach your desired consistency. Mix well. Simmer for 30 minutes so all the flavors can incorporate. (You may use a crock pot and let the chili simmer all day on low.)

In a dutch oven, heat the oil and brown the chicken slightly. Add all of the remaining ingredients except the kidney beans and simmer for 1 hour. Add the kidney beans and simmer for an supplementary hour, or until the chili reaches the desired thickness.

2 cans (15 oz each) white kidney or cannelloni beans, rinsed & drained

1 can (15oz) garbanzo beans or chickpeas, rinsed & drained

2 cups chicken broth (I used more)

1 can (4 oz) chopped green chilies

2 teaspoons ground cumin

1/2 teaspoon dried oregano

1/4 teaspoon salt

1/4 teaspoon cayenne pepper

1/4 cup minced fresh cilantro or parsley

Cooking Instructions:

In a skillet, sauté the onions and garlic in oil until tender. Replacement to a slow cooker. Add the chicken, beans, broth, green chilies, cumin, oregano, salt and cayenne; stir well. Cover and cook on low for 6-7 hours or until bubbly. Stir in cilantro. Serve over corn chips; top with cheese and sour cream. Yield: 8 servings (2 quarts)

I used great northern beans, pintos, and leftover black eye peas from last night, also didn't have any cilantro in the house. It's good with cilantro, but it was yummy this way, too. I used a bit more broth because it looked too thick.

1 1/2 lb. Boneless, skinned chicken breasts

1 1/2 c. Freezing white corn kernels, thawed

1 can (15 1/2 oz.) Great Northern beans, undrained

3 cans (4 oz. Each) chopped green chilies, undrained

3 tbsp. Lime juice

2 tsp. Ground cumin

1/2 tsp. Ground coriander

1/2 tsp. Ground white pepper

1/3 c. Reduced-fat sour cream

2 tbsp. Cilantro, fresh, chopped

Cooking Instructions:

Combine the water and cumin seeds in a large saucepan. Bring to boiling. Add chicken. Lower the heat; cover the saucepan and simmer 20 minutes or until chicken is fork-tender. Drain. Cut chicken into 3/4 inch cubes. In the same saucepan, heat oil over medium heat. Add the onion; sauté 5 minutes. Add garlic; sauté 1 minute. Stir in the corn, beans, chilies, lime juice, cumin, coriander and white pepper. Bring to boiling. Add the chicken. Lower heat. Cook just until heated through. Remove the saucepan from the heat. 1 t no salt seasoning

1/2 ts cumin

1/2 c green pepper diced

In a dutch oven, heat the oil and brown the chicken slightly. Add all of the remaining ingredients except the kidney beans and simmer for 1 hour. Add the kidney beans and simmer for an additional hour, or until the chili reaches the desired thickness.
