Vietnamese Chicken With Pineapple and Cashews Recipe

Preparation time: 35 minutes
Total cooking time: 25 minutes
Serves: 4

Ingredients:

Chicken Chili

1/2 cup (90 g/3 oz) raw cashew nuts
2 tablespoons oil
4 cloves garlic, finely chopped
large onion, cut in large chunks
teaspoons chopped red chillies 350 g (11 oz) chicken thigh fillets,
chopped 1/2 red capsicum, chopped
1/2 green capsicum, chopped 2 tablespoons oyster sauce 1 tablespoon fish sauce
teaspoon sugar
cups (320 g/11 oz) chopped fresh
pineapple
3 spring onions, chopped
2 tablespoons shredded coconut, toasted

Directions:

1. Roast the cashews on an oven tray for 15 minutes or so in a moderate 180°C (350°F/Gas 4) oven, until it becomes deep golden and then allow it to cool down.

2. After that, heat all the oil in a wok and stir-fry the garlic, the onion and the chilli over kind of medium heat for about 2 minutes or so and remove from the wok. Then use high heat and stir-fry all the chicken and the capsicum, in small batches, in the mean time tossing until all the chicken becomes light brown.

3. Return the onion and the chilli to the wok and add the oyster sauce, the fish sauce, the sugar and the pineapple and toss them for about 2 minutes or so to heat through. Then toss the cashews through and arrange on a serving plate and scatter the spring onion and the coconut over the top. After that, you can serve immediately.

Some foods just naturally sound like soul mates to the crockpot, among them chili and chicken. Think of how easy crockpot recipes have made life for all of us. Meals are done while we are away from home and with some of the modern crockpots, the temperature will automatically set to warm when the cooking time is over, keeping the meal ready until you are. The standard round pot has been joined by an oval pot, and there are sizes for small families and large. Some families have more than one crockpot that is used on a regular basis, creating main dishes in one and sides or desserts in the other.

Crockpot recipes continue to grow as the group of crockpot cooks increases. When cooks share ideas, more just seem to blossom. That is why it is so much fun to browse through recipes. Your friends may be surprised to find out that October is National Chili Month, although Congress has not made it official and you cannot take the month off from work and be paid for the holiday. What you can do, however, is celebrate the fall and even Halloween by having October center around chili. As leaves turn brilliant colors and days start to cool down, arrange a colorful event like a crockpot chili cook- off for the neighborhood, your friends, or your church. Just imagine the aroma of chili wafting through the neighborhood or the park!

At a crockpot chili cook-off, everyone brings a ladle and their own crockpot full of cooked chili, with a list of the ingredients so no one accidentally gets a dose of something they cannot eat. Plastic cups and spoons are provided by the host, so everyone can have a sample of what has been made. Sometimes feelings might be hurt if there is an actual vote with just a few categories and you want people to have a good time and want to do it again next year, so have a "Best" category for the number of contestants, such as best sauce, best variety, best beans, best flavor, and so on. Make a ballot sheet that lists each category and make the tags easy to tear out.

After walking around and sampling, guests can vote by tearing off the tabs for the category and dropping their selection in the voting box by each crockpot. Pick two people to tally the votes in each box. The award is given for the most votes for each category. For instance, if Crockpot Chilli has 13 votes for best sauce, 10 for flavor, and 5 for hot-hot-hot, Crockpot Chilli should get the award for best sauce.

Do tally all the votes first, in case there is a tie in the category, but hopefully, there will never be one. If you are printing the awards from your computer, consider making a second set, just in case. The award is the prize, since this is in good fun. Chili Spiced Chicken Meal (Suitable For Diabetics!) In 30 Minutes

For an easy meal that can be ready in around thirty minutes try this Chili-Spiced Chicken. Add some crunch, color, and a tad of citrus by adding Broccoli with Orange Cream Sauce (A good way to interest your kids in this healthy vegetable!). Dessert is elegant but very easy. French Vanilla Tarts with Fresh Berries and Mint make it look like you've really outdone yourself! This meal is perfect for the harried housewife, busy cook, or the person who doesn't really like to cook but wants to impress someone. Beginning cooks will also find this meal to be one they can do easily.

CHILI-SPICED CHICKEN

Chicken Chili

8 skinless, boneless chicken breasts
2 tsp onion powder
1 tsp salt
1 1/2 tsp paprika
1/2 tsp chile powder
Cooking oil spray

Preheat oven to 350 degrees. Combine spices in a small bowl. Sprinkle spice mixture evenly over chicken breasts. Heat a large non-stick skillet over medium-high heat. Spray pan with cooking spray. Add chicken to pan and saute about 2 minutes on each side. Remove chicken to a shallow baking pan and bake approximately 15 minutes or until juices run clear.

BROCCOLI WITH ORANGE CREAM SAUCE

1 1/2 lbs fresh broccoli, cut into florets
6 oz fat-free cream cheese, cubed
1/4 cup fat-free milk
1/4 tsp thyme
1/4 tsp salt
1/4 tsp grated orange peel
1/4 cup unsweetened orange juice
2 tbsp chopped walnuts

Steam broccoli for 6 to 8 minutes or until crisp-tender. Meanwhile, in a small saucepan, combine the cream cheese, milk, thyme, salt and orange peel. Cook and stir over low heat until blended. Stir in orange juice until combined. Place broccoli in a serving dish; top with the orange sauce and sprinkle with nuts.

Yields 6 servings 3/4 cup each =126 calories, 14 g carbs, 12 g protein

MINI FRENCH VANILLA TARTS WITH FRESH BERRIES AND MINT

1 box (1.34 oz) Sugar-Free French Vanilla Pudding and Pie Filling Mix
1 pkg Graham cracker tart shells
Fresh seasonal berries
Mint sprigs for garnish, if desired

Prepare pudding mix as directed on box. Pour pudding into tart shells and refrigerate. Before serving, add 3 or 4 fresh berries and a mint sprig, if desired, for garnish.

HINT: SAVE ANY LEFTOVER CHICKEN IN THE REFRIGERATOR, SEALED IN A ZIPLOCK BAG, FOR USE LATER IN THE WEEK. PERFECT FOR CHICKEN TACOS.

Portuguese Chicken Recipes - Easy & Quick To Prepare!

Chicken Chili

>> Poached Chicken Portuguese

1 bay leaf

1 c chopped onions

1 tb red wine vinegar

1/2 ts ground cloves

1/2 ts worcestershire sauce

1/2 ts cajun sunshine (hot pepper sauce)

1/4 ts pepper

10 to 15 strands saffron

2 garlic cloves, minced

2 tb olive oil

4 md tomatoes, peeled, seeded, chopped

4 skinless, boneless chicken breast halves

In a large skillet, heat oil over medium heat. Cook onions until translucent. Add garlic and hot sauce, cook about 1 minute. Add remaining ingredient, except chicken. Bring to a boil, reduce heat, and simmer uncovered for 15 minutes. Place chicken on top of sauce, cover pan, and simmer 15 to 20 minutes, until chicken is cooked through. Serves 4.

>> Portuguese Fried Chicken With Chili Mustered

Emeril's dry rub

1 roasted red pepper peeled seeded and chopped

3 cl garlic crushed to a paste

3 tb olive oil salt and pepper

Chicken

1 fryer cut into 8 pieces

1/2 c mustard sauce

2 c flour

2 eggs lightly beaten oil for frying

For the dry rub: in a food processor, combine the peppers, garlic and olive oil, puree until smooth. Season with salt and pepper.

For the chicken: completely coat chicken pieces with the dry rub. Place on a baking sheet and allow to sit for 20 minutes.

Evenly coat each piece of chicken with the flour. Dip each piece in egg, removing any excess liquid. Turn back into flour, coating each side well. Fill a skillet with oil 2 inches high. When oil is hot, carefully lay the chicken in the oil, do not over crowd. Fry until golden brown, about 8-10 minutes. Turn the chicken over and continue cooking until done. Season with essence. Serve with mustard sauce.

So here we go for some spicy chicken recipes:

Chicken Chili

>> Spicy Chopped Chicken

1 green pepper (jalapeno or serrano type), slice into rings

1 pn chili powder (dried red type)

1 tb light soy sauce

10 mint leaves

10 oz cooked chicken breast

2 shallots, chopped

2 tb lemon juice

3 scallions, chopped

5 coriander leaves

Chop the chicken breast then mix together all the ingredients except the garnish. Sprinkle with the chopped mint and coriander leaves. Serve with plain rice.

>> Ginger Spicy Chicken

1 8 oz can juice pack pineapple chunks, un drained

1 md red pepper, cut into 1/4 by 2 strips (1 1/2 cups)

1 md green pepper, cut into 1/4 x 2 strips (1 1/2 cups)

1/2 c picante sauce

2 or 3 tsp shredded fresh ginger or

2 tb chopped fresh cilantro or parsley

2 tb vegetable oil

2 whole chicken breasts, split, boned, skinned salt as desired

3/4 to 1 tsp. Ground ginger

Lightly salt chicken. Cook in oil over medium heat until lightly browned and cook through, about 5 minutes. Remove and reserve. Add remaining ingredients to skillet; cook, stirring frequently, 5 to 7 minutes or until peppers are tender and sauce thickens. Return chicken to skillet; heat through. Makes 4 servings.

>> Spicy Baked Chicken

1 1/2 lb to 2 lb chicken pieces; meaty breast halves, thighs or drumstick

1/2 ts seasoned salt or salt;

1/3 c bread crumbs; fine dry

1/4 c all purpose flour;

1/8 ts grd red pepper;

2 tb parsley; snipped

3 tb skim milk; nonstick spray coating

3/4 ts dried italian seasoning; crushed

Remove skin from chicken. Rinse chicken; pat dry. In a medium mixing bowl stir together bread crumbs, snipped parsley, italian servicing, seasoned salt or salt, and ground red pepper.

Place four in a plastic bag. Place milk in a shallow bowl; set aside. Add chicken pieces, one at a time, to the bag; shake to coat. Dip in milk; then, dip in bread crumb mixture, pressing lightly to coat well.

Spray a 13 by 9 by 2 baking dish baking dish with non stick coating. Arrange chicken pieces, meaty sides up, in the dish. Bake in a 375f oven for 45 to 55 minutes or till chicken is tender and not longer pink. Makes 4 servings.

Prepare Great Salads With Left-Over Chicken

I have always been a fan of chicken salad. Whenever I'm going to a sandwich place, I always have a desire to try their chicken salad because each place has it's own blend of herbs and spices and other ingredients to add to the traditional chicken salad.

However, no matter how many places I've gone to and no matter how many different chicken salads I've tried, I found that my favorite recipes are the ones made at home with fresh left-over chicken. Bellow, find some delicious salads to prepare with left-over chicken. For the first recipe you can use not only left-over chicken but also left-over rice.

Chicken Chili

Chicken and Rice Salad

Ingredients:
1/4 cup fresh lime juice
3 tablespoons olive oil
1 clove garlic, crushed
1 teaspoon chili powder
1/4 teaspoon salt
2 cups chicken, cooked and cubed
1 red bell pepper, cut into thin strips
1/3 cup green onions, sliced
2 tablespoons fresh cilantro (or parsley), chopped
2 jalapeno peppers, stemmed, seeded and minced
3 cups cooked rice, cooled
2 avocados, seeded, peeled and cut in chunks

Directions:
1. Blend lime juice, oil, garlic, chili powder and salt in large bowl. Add chicken, red pepper, onions, cilantro and hot peppers. Cover and refrigerate 2 to 3 hours.
2. Add rice and avocado chunks. Toss lightly, and serve.

Curried Chicken Salad

Ingredients:
1/2 cup mayonnaise
1 teaspoon fresh lemon juice
2 tablespoons curry powder
2 cups cooked chicken, chopped
1/4 cup diced celery
1/2 cup seedless grape, halved
1/4 cup almond slivers

Directions:
1. Blend mayonnaise, lemon juice, and curry powder. Mix into remaining
ingredients. Chill at least one hour before serving.
2. Serve on whole leaves of Romaine lettuce.

Chili's Monterey Chicken Recipe - Get Your Yum On!

Chili's Monterey Chicken... yum! Who doesn't like cheese, bacon, barbecue sauce, and lots of gooey melted cheese? Okay, you got me. But this recipe isn't meant for vegetarians! It's for weekend warriors and backyard barbecuers.

This recipe is so good, you may just become popular overnight! Everyone who you're kind enough to share your own Chili's Monterey Chicken with is going to just love you!

Chicken Chili

Chili's Monterey Chicken - Ingredients:

4 boneless skinless chicken breasts 3 tbsp. of your favorite barbecue sauce 8 slices thick applewood smoked bacon, cooked and drained ½ cup shredded Monterey Jack cheese ½ cup sharp cheddar cheese 2-3 roma tomatoes, diced chopped green onions to taste, if desired
Chilis Monterey Chicken - Directions:

Pound chicken breasts until nearly flattened. Season with salt & pepper. Grill chicken on George Foreman Grill or on your outdoor barbecue grill. (Pan frying is okay, but not ideal.) While chicken is grilling, set your oven to broil. When chicken is cooked through, place each breast on a separate serving plate. Top each breast with equal amounts of barbecue sauce, bacon (2 strips each), and cheese. Carefully set each plate under your broiler for 3-4 minutes, or until cheese is completely melted. Using an oven mit, remove each plate from the oven and sprinkle tomatoes and green onions (if desired) over the top of each chicken breast. Serve with steamed or grilled veggies and mashed potatoes with pepper gravy. Enjoy!

Add color:

How to De-Bone a Chicken Thigh

If you are cutting up a whole chicken, you will need a sharp knife to slice through the joint where the drumstick meets the thigh. You will find the cartilage very soft so it is easy to cut.

Bone the drumstick using the same method as you used for the thigh. Cut along the top of the bone and slice deeply until the knife is touching the bone. You will be able to see the white bone in the cut you have made. Pull the bone upwards and away from the chicken thigh.

Cut into the chicken some more, so that you can remove the bone altogether. You will probably have to slice some more of the meat off the bone so you can get it out. Keep slicing away bits of sinew, tendons and skin until you have a boneless thigh.

Recipe for Crockpot Chicken Thighs in an Herby Orange Sauce

This is such a simple recipe and the fact that you can use a slow cooker means that you can leave this recipe to cook by itself all day while you are out. Serve this tangy citrus chicken dish with noodles or rice and perhaps some broccoli or beans on the side. This recipe serves four people.

You will need:

2 lbs skinless, boneless chicken thighs, in 1 inch pieces Juice from 1 orange Zest from 2 oranges 1/2 teaspoon crushed dried thyme leaves 1/2 teaspoon crumbled dried rosemary 4 slices crumbled, cooked lean bacon 2 tablespoons lemon juice 1 1/2 teaspoons white sugar 2 crushed garlic cloves 1/2 teaspoon black pepper 1 teaspoon dried oregano 1 tablespoon dried basil 3 peeled, diced carrots 1 chopped onion 14 1/2 oz can diced peeled tomatoes 6 oz can tomato paste

How to make it:

Remove any visible fat from the chicken, then combine it with the orange juice and half the zest, tomatoes and their liquid, oregano, thyme, pepper, garlic, rosemary, onion, carrot, basil and tomato paste in a three and a half quart crockpot. Cover and cook on "low" for about six hours or until the chicken thighs are cooked through. Stir in the rest of the orange zest, the lemon juice, and sugar. Sprinkle the crumbled bacon over the finished dish.

Bean-Less Chili Recipes - Quick & Easy!

These bean less chili recipes are quick, easy & delicious. Just check these out and I'm sure you'll be amazingly surprised.

So here we go for some quick easy bean less chili recipes:

Chicken Chili

Green Chili Con Carne

1 c Dry white wine

1 tb Garlic, minced

1/4 ts Ground cloves

2 1/2 lb Boneless pork loin

2 1/2 c cored, seeded green peppers cut into 1-in. cubes

2 tb Cumin

2 tb Fresh chopped coriander

3 c Drained, canned Mexican green tomatoes, or use peeled, seeded and chopped ripe tomatoes

3 tb Safflower oil

6 oz Can chopped green chilies

1. Cut the meat into 1 1/2-in. cubes

2. Heat the oil in a pressure cooker. When it is quite hot, add about 1/3 of the meat cubes. Cook, stirring, until nicely browned.

3. Using a slotted spoon, transfer the cubes to a platter. Add another third of the meat cubes and brown them. Transfer them to the platter. Brown the remaining meat cubes and transfer them to the platter.

4. Add the green peppers to the fat remaining in the cooker and cook until wilted. Add the garlic and cook about 5 sec., stirring.

5. Return the meat cubes to the cooker. Add the remaining ingredients and mix well. Cover with the lid and add the pressure regulator. Cook 20 min.

6. Remove the lid according to the manufacturer's instructions. Cook down, uncovered, about 10 min. or until the sauce is reduced slightly. Serve with cumin rice.

Another bean less chili recipe:

Hunan Style Salmon Chili

1 Inch ginger root minced

1 c Clam juice

1 lb Salmon filet, boned, skinned Cubed

1 tb Chinese oyster sauce

1/2 Lemon, for juice

1/2 c Pumpkin seeds, toasted

1/4 c Peanut oil

1/4 ts Sugar

2 Scallions, chopped

2 cl Garlic, minced

2 tb Chili powder

2 tb Soy sauce

2 ts Oriental chili paste

2 ts Tomato paste

3 tb Cornstarch

4 c hot cooked rice

In a bowl, whisk together the soy sauce, oyster sauce, chili paste, tomato paste, clam juice,2 tsp. of the cornstarch, the sugar, and lemon juice. Set aside. Toss the salmon in the remaining cornstarch mixed with the chili powder. Heat a large wok until smoking. Add the peanut oil and gently stir fry the salmon, in 2 batches, until its surface is lightly browned and crisp, about 2 minutes.

Remove the salmon with a slotted spoon to a strainer or colander to dray. Pour off all but a thin film of the oil. Add the scallions, garlic and ginger root and stir fry 10 seconds. Return the salmon, add the reserved liquid and simmer until lightly thickened. Toss in the pumpkin seeds. Serve over rice. Makes 4 servings.

3 Easy Mexican Crockpot Meals

In the mood for Mexican tonight? Here are three easy recipes that you can use in your crockpot to take care of your Mexican cravings!

Recipe #1 - CROCKPOT CHICKEN STEW MEXICAN STYLE

Chicken Chili

2 lbs skinless boneless chicken breasts cut into 1 1/2" pieces

4 med russet potatoes, peeled and cut very small

1 (15 oz) can mild salsa

1 (4 oz) can diced green chilies

1 (1 1/4 oz) pkg taco seasoning mix

1 (8oz) can tomato sauce

Mix all ingredients together in crockpot, cook 7-9 hours on low. Serve with warm flour tortillas. You can also served corn with this. It is good mixed in it too.

Recipe #2 - MEXICAN CHILI

2 (15 1/2 oz.) cans red kidney beans, drained

1 (28 oz.) can tomatoes, cut up

1 c. chopped celery

1 c. chopped onion

1 (6 oz.) can tomato paste

1/2 c. chopped green pepper

1 (4 oz.) can green chili peppers, drained and chopped

2 tbsp. sugar

1 bay leaf

1/2 tsp. garlic powder

1 tsp. salt

1 tsp. dried, crushed marjoram

Dash of pepper

1 lb. ground beef

In skillet brown ground beef and drain. In crockery cooker combine all ingredients. Cover, cook on low heat for 8 to 10 hours. Remove bay leaf and stir before serving. Approximately 10 servings and great with corn bread!

Recipe #3 - MEXICAN CHEESE DIP

1/2 pound Velveeta

1 teaspoon Taco seasoning (optional)

1/2 can Ro-Tel Tomatoes with chilies

Cube cheese and place in Crock Pot. Cover and heat 30 to 60 minutes, until melted, stirring occasionally. Stir in tomatoes and seasoning. Cover and continue heating 30 minutes. Serve with tortilla chips or corn chips.

Moroccan Cuisine

Eating in Morocco is serious business. The midday meal is the main one and you can expect large portions - enough to keep you going all day! They usually start off with a series of hot and cold salads. Then, they have tagine or stew. Next is the main portion - normally a lamb or chicken dish with a huge plate of meet and vegetable couscous. Mint tea is normally drunk after the meal.





The strong Arab influence found in two of the royal cities, Fez and Marrakech, contributed greatly to Moroccan cuisine, as did the Andalusian sensibilities of Tetuan and the Jewish traditions from the coastal city of Essaouira. White Chicken Chili Recipes That Really Tastes So Delicious

My friend brought these white chicken chili chicken recipes to my attention and I'm glad she did. This is a delicious meal and so visually stunning.

I was pleasantly surprised by the ease of preparation and I couldn't believe how much this recipe yields. We were really impressed with the final result, the taste was truly splendid, and it's such an enjoyable meal.

Chicken Chili

White chicken chili recipe #1:

Ingredients:

3 med. onions, chopped (I used half an onion)

2 garlic cloves, minced

1 T olive or vegetable oil

4 cups cooked chicken or turkey

2 cans (15 oz each) white kidney or cannelloni beans, rinsed & drained

1 can (15oz) garbanzo beans or chickpeas, rinsed & drained

2 cups chicken broth (I used more)

1 can (4 oz) chopped green chilies

2 teaspoons ground cumin

1/2 teaspoon dried oregano

1/4 teaspoon salt

1/4 teaspoon cayenne pepper

1/4 cup minced fresh cilantro or parsley

Cooking Instructions:

In a skillet, sauté the onions and garlic in oil until tender. Transfer to a slow cooker. Add the chicken, beans, broth, green chilies, cumin, oregano, salt and cayenne; stir well. Cover and cook on low for 6-7 hours or until bubbly. Stir in cilantro. Serve over corn chips; top with cheese and sour cream. Yield: 8 servings (2 quarts)

Notes:

I used great northern beans, pintos, and leftover black eye peas from last night, also didn't have any cilantro in the house. It's better with cilantro, but it was yummy this way, too. I used a bit more broth because it looked too thick.

I got other white chicken chili recipe from my best friend. My family love this recipe.

White chicken chili recipe #2:

Ingredients:

3 1/2 c. water

1 tsp. cumin seeds

1 1/2 lb. boneless, skinned chicken breasts

1 tbsp. vegetable oil

1 lg. onion, chopped (1 c.)

3 cloves garlic, finely chopped

1 1/2 c. frozen white corn kernels, thawed

1 can (15 1/2 oz.) Great Northern beans, undrained

3 cans (4 oz. each) chopped green chilies, undrained

3 tbsp. lime juice

2 tsp. ground cumin

1/2 tsp. ground coriander

1/2 tsp. ground white pepper

1/3 c. reduced-fat sour cream

2 tbsp. cilantro, fresh, chopped

Cooking Instructions:

Combine the water and cumin seeds in a large saucepan. Bring to boiling. Add chicken. Lower the heat; cover the saucepan and simmer 20 minutes or until chicken is fork-tender. Drain. Cut chicken into 3/4 inch cubes. In the same saucepan, heat oil over medium heat. Add the onion; sauté 5 minutes. Add garlic; sauté 1 minute. Stir in the corn, beans, chilies, lime juice, cumin, coriander and white pepper. Bring to boiling. Add the chicken. Lower heat. Cook just until heated through. Remove the saucepan from the heat. Stir in sour cream and cilantro.

Singapore Chilli Chicken Recipe

Deep-fried chicken served with spicy sauce is given a term as Singapore chilli chicken. It is a favorite dish in Singapore. Delicious in taste and looks really attractive while served.

Ingredients used for this recipe:

Chicken Chili

500 grams of chicken breast, 2 tablespoons oil, garlic, chopped 5-6 cloves Ginger, chopped 1 inch piece of tomato ketchup 2 tablespoons chili sauce 2 tablespoons salt to taste, cornstarch / 1 tbsp cornstarch, red pepper, 1 teaspoon, Egg 2, MSG 1 / 4 tl, scallion greens 2-3.

Preparation Method for Singapore Chilli chicken recipe:

Cut the chicken for one to one and a half inches pieces. Heat oil pan, add chopped garlic, ginger and fry for two minutes. Add ketchup, chili sauce and half of the mix. Add one cup water and mix.

If the mixture to a boil, reduce heat and simmer for 5-10 minutes. Meanwhile by taking pieces of chicken in a bowl. Add salt, remaining chili sauce, cornstarch, crushed red pepper in half and mix well. Add whole egg and mix well.

Heat enough oil in wok and fry the chicken pieces and make sure that they do not overcook.

Fry over high heat for 02:58 minutes in color. Drain on absorbent paper. Add the remaining salt and crushed red pepper sauce and mix well. Add MSG, and cornstarch mixed with water.

Cook while stirring, until the sauce thickens. Arrange on plate with fried chicken. Beat in eggs.

Remove sauce from heat and slowly add the beaten egg flow. Mix gently and pour over the fried chicken. Garnish with scallion greens and serve hot.

The leftover chicken is versatile and you can use it in all kinds of other boneless chicken recipes. This recipe makes enough to feed ten people and if you want an easy recipe, which cooks itself, or if you are going to be out all day, this crockpot chicken recipe is perfect.

You will need:

6 boneless, skinless chicken breasts 2 cups salsa 1 chopped green bell pepper 1 chopped onion 1 envelope taco seasoning 1 package flour tortillas, to serve
How to Make it:

Put the chicken breasts in the crockpot with the bell pepper and onion. Sprinkle the taco seasoning into the salsa, stir well to combine, and then pour this over the chicken and vegetables.

You can add a little water if you think the dish requires more liquid but remember the chicken and salsa produce more liquid as they cook. Cover the crockpot and cook the chicken mixture on high for about five hours or on low for about seven hours. When you can easily shred the chicken with a fork, it is done. Take the chicken breasts out of the crockpot to shred them, and then serve the chicken in the flour tortillas.

Remove the onion and bell pepper pieces with a slotted spoon and add these to the tacos. Garnish the tacos with any toppings you like. Good toppings include lettuce, grated cheese, sour cream, salsa, olives, guacamole, and tomatoes.

The Popular North African Food Called Tagines

Tagines is one of the popular North African dishes consumed mostly in Algeria, Morocco, and Tunisia. Also known as Tajine or mispronounced Tangines, this North African specialty has traveled all the way across the Atlantic to the kitchens in the US. Moroccan tagines are being served increasingly in specialty food or fast food restaurants all across the United States and has become quite popular.
Tagines are not just the name of the food but also the pot in which they are cooked. Tagine pots are made purely from terra cotta and have a shallow rimmed base. The lid of the tagines is usually conical in shape. The bottom of the pot is always glazed from the inside and this is where it comes in direct contact with the stew or food. The top part of the Moroccan tagines is glazed from the outside, so that it can assist in evaporation of the steam. As a result, the stew or food gets absorbed into the clay and the juice or gravy becomes more concentrated in nature.
There are always potters who try and make newer version of tagines especially the ones having glazed lids from the inside as well as outside. Each of the Moroccan tagines has a small steam outlet, and chefs preparing the dish more often than not poke a thyme sprig or a mint sprig. There are two types of tagines - one that is made from terra cotta and one that has been made using enameled cast iron. The latter is not as effective as the terra cotta one.
A visit to the Moroccan or Tunisian countryside will provide you glimpses of tagines simmering on small charcoal burners in street cafes or restaurants. In North Africa, tagines are never kept in the oven; it is always kept on the stove. I one of the coastal Moroccan cities especially in Meknes, you can find one of the most diverse tagine menu with as many as 20 dishes comprising of variety of vegetables, combined with meat, eggs, sausages, etc.
The most popular and commonly eaten tagines is made using a whole chicken, with preserved lemons and olives. Sometimes the chicken is replaced by lamb, and it is combined with eggs and prunes. This preparation is quite similar to one of the tagine dishes served at the Andalous Moroccan Restaurant in Chicago. The restaurant is quite famous for its diverse offering of tagines and has around 11 varieties on the menu. They use mostly lamb, chicken, seafood and beef. Onions, preserved lemon, dry fruits, sesame seeds, nuts, eggs, peppers, tomatoes, and olives are added to the tagines apart from the usual seasonings that include cinnamon, paprika, cumin, saffron and cilantro among others. One major difference between North African or Moroccan tagines and American tagines is that the former use clarified butter called "smen" while in America; only olive oil is used for preparation.
Some of the other restaurants that offer variety of tagines on their menu include L'Olive in Chicago, The Lite Touch in New York, and Oasis in Los Angeles and Mogador in New York. Perry's in Washington offers a unique tagine dish that comprises of lamb with medjool dates and pine nut couscous. Cafe Le Coq in Chicago is famous for their roasted vegetable tagines. Many restaurants offer a variety of lamb tagines including Shallots, Chicago, which is a kosher restaurant offering lamb tagine couscous with dry Mediterranean fruits.
American chefs have in a way mastered the art of mixing tagines with couscous. If you visit, Morocco or Tunisia then you will find tagine being served as a separate dish and couscous is served as a separate steamed dish. Moroccan tagines as well as couscous are often served harissa, which is a chili-based condiment, and it is exclusive to Algerian and Tunisian tagines.
Tagines have gone through different types of experimentation processes and restaurants like Zibibo in California offer an olive-marinated guinea hen with tomato tagine, mint, chickpea, and harissa. At the Marseille restaurant in New York, you will find duck tagine on the menu that comes with almonds, honey, and currants. Enrico's in San Francisco has completely changed the very essence of tagines by serving a sauce moistened with pan-roasted seafood, seasonal vegetables and saffron couscous. Having traveled across the Atlantic, Moroccan tagines look great on the menu but there are only a few who can serve authentic tagine. The best place to taste the spicy flavors of tagines is in Morocco or Tunisia but you can even visit some of the authentic Moroccan cuisine restaurants in Chicago or New York to get a feel of the real taste.

4. Chicken and Blue cheese - This is a great flavor combo. The saltiness of the blue cheese works really well against the moistness of the chicken. Try crumbling blue cheese into a sauce of white wine, mustard and cream (or crème fraiche if you're feeling really healthy) and watch as it slowly melts down to create a totally unctuous sauce that is simply divine.

Directions:

Simmer chicken in a large saucepan until tender, drain and shred. Heat olive oil and saute onions, garlic, green chiles, cumin and cayenne pepper for 3 minutes. Add the shredded chicken, beans, chicken broth and cheese. Simmer 15 minutes. Garnish with sour cream and diced tomatoes.

Queso Recipe

Ingredients: 1 pound white American cheese slices from the deli (trust me, the kind from the deli is what makes this queso wonderful!) 4 oz. can green chiles, diced 4 oz. can jalapenos, diced 8 oz. whipping cream

Put all ingredients in a saucepan and stir over medium heat until melted.

Homemade Salsa

Another Texas favorite! You'll never go back to the salsa in a jar again!

14 1/2 ounce can Rotel tomatoes, drained (regular or mild depending on how spicy you like your salsa!) 1/4 cup fresh cilantro 1/4 cup red onion, finely chopped 1 tablespoon fresh lime juice (about 2 small limes) 1/4 teaspoon cumin 1/4 teaspoon garlic powder 1/4 teaspoon crushed red pepper 1/4 teaspoon salt 1 fresh jalapeno, finely chopped (optional - only add if you want extra heat!)

Directions:

Put all ingredients in a food processor and pulse until finely chopped. Cover and chill overnight. Yield: 16 ounces. Serve with tortilla chips.

Shredded beef is perfect for making hearty meals and you can use it in appetizers, entrees, and even side dishes. Use it to make Mexican recipes like tacos or burritos, combine it with macaroni or rice and vegetables to make an easy dinner or serve it in a bun with some coleslaw on the side for a delicious lunch or supper.

The slow cooking process means the meat will soak up a lot of the flavor of the sauce so it is optional whether or not to serve the liquid. In the following recipe, taste the sauce before pouring it over the beef, and adjust the quantities accordingly.

Depending on your crockpot you might want to reduce the amount of meat to two and a half pounds or increase it to three and a half pounds. Add more chili powder to the mixture to spice it up, if you like, and use your own judgment to alter the ingredient amounts and make it taste really good.

What You Will Need:

3 lbs lean chuck roast 10 1/2 oz tomato soup 1 quartered, thinly sliced onion 3 thinly sliced cloves garlic 1/2 teaspoon celery seed 1/4 teaspoon chili powder 1 tablespoon Dijon mustard 1 tablespoon lemon juice 1 envelope onion soup mix 2 tablespoons Worcestershire sauce 1/4 cup brown sugar Salt, as needed

How To Make It:

Trim the fat off the meat and cut it into four or five pieces so it will fit in the crockpot. Mix the remaining ingredients together and pour the mixture over the beef. Cover and cook for about ten hours on low.

Pour the juice into a pan and let it simmer for about fifteen minutes on the stove, or until it is thicker. Shred the meat with a potato masher or pair of forks. Pour the thickened sauce back over the shredded beef and serve with buns and perhaps some coleslaw on the side. You will have enough to make at least six sandwiches.

I recently got stuck in an airport due a delayed flight. But I didn't end up eating junk food. In fact, I have a SECRET that can help you avoid cheating on your diet.



First, you have to be prepared. In fact, here are my meals from that day. My brunch included an omelet with vegetables, some grilled fish & peppers, fruit (pineapple, raspberries, blueberries, watermelon), and a V8.



A late lunch included a grilled chicken salad (2 breasts), jimaca, salsa, black beans, avocado (I substituted the salsa for the dressing). NOTE: Lunch was eaten at a Mexican restaurant. I said "no thanks" to the chips and salsa. So there you go, proof that you can eat healthy when you eat out.



My snacks at the airport included raw cashews, red delicious apple, raw almonds, as well as a banana and more almonds later on my flight.



Without my preparation, I would have been outta luck, and stuck eating M&M's (the peanut kind, of course) and greasy take out food at the airport. So what's the secret? Accountability.



I've committed to telling the world about my diet and workouts, so I can't set a bad example or break my promise to you by eating junk food.



I'm holding myself accountable to you. By doing this, I'm going to be more focused on eating healthier than ever, because I don't want to have to report to YOU that I'm cheating on my diet.



I also need to eat well and research the best options so that I can pass along little insider nutrition tips to you, such as these tips.



1) Most people don't know that the peanut butter they feed their kids (& themselves!) is filled with two of the nastiest ingredients in the world, and those are Trans fats (the "bad" kind of fat) and sugar. So you should choose Peanut Butter that contains JUST peanuts as the one and only ingredient.



2) My favorite canned food is Amy's Organic Chili. I usually stick with Medium, but sometimes I go spicy.



3) I add a little of Mrs. Renfro's Organic Salsa to almost every meal I eat. A little bit with my morning omelet, a little with my chili at lunch, and a little with my BBQ chicken at night.
