Sweet Sesame Chicken with Steamed Rice

Ingredients
3 whole boneless chicken breasts
Marinade
2 tablespoons light soy sauce
1 tablespoon cooking wine or dry sherry
a few drops of sesame oil
2 tablespoons flour
2 tablespoons cornstarch
2 tablespoons water
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon vegetable oil
Sauce for Sesame Chicken
1/2 cup water
1 cup chicken broth
1/8 - 3/4 cup vinegar (depending on how sweet you want the sauce; for a sweeter sauce reduce the amount of vinegar)
1/4 cup cornstarch
1 cup sugar
2 TB dark soy sauce
2 TB sesame oil
1 tsp chili paste, or more if desired
1 clove garlic (minced)
2 tablespoons toasted sesame seeds
3 1/2 - 4 cups peanut oil for deep-frying
Preparation
Cut the chicken into 1-inch cubes. Mix the marinade ingredients and marinate the chicken for 20 minutes.
To prepare the sauce: mix together all of the sauce ingredients.  Pour them into a small pot and bring to a boil, stirring continuously. Turn the heat down to low and keep warm while you are deep- frying the chicken.
To deep-fry the chicken: add the marinated chicken pieces a few at a time, and deep-fry until golden brown. Drain on paper towels. Repeat with the remainder of the chicken.
Just before you are finished deep-frying, bring the sauce back up to a boil.
Place the chicken on a large platter and pour the sauce over.  Sprinkle with sesame seeds.
Serve the Sesame Chicken with rice.
Serves 3 - 4, or 5 - 6 as part of a multi-course meal.

4 chicken breasts
4 fresh jalapeno peppers
4 fresh mulato peppers
4 fresh ancho peppers
1 fresh poblano pepper

4 medium tomatoes

4 garlic cloves
4 medium baking potatoes
2 large carrots
½ cup hulled pepitas (pumpkin seeds)

Directions:
Remove skin and bones from chicken breasts and cut into one inch cubes. Remove the stem & seeds from the peppers and chop into ¼ inch pieces (please wear gloves when handling peppers), as well as the tomatoes and the onion. Remove skin from garlic cloves and slice thinly. Peel the potatoes & carrots and cut into one inch pieces. Combine all the ingredients in a large, thick pot and cook on medium low for three hours.

Taste one to make sure it is soft enough to eat. If not, place pot over medium heat until noodles are done. Drain and set aside. To serve, place generous mounds of noodles in serving bowls and ladle soup over top (bowls should be at least 1/3 full of the spicy soup). Now either add the other toppings yourself, or place in bowls and allow guests to add their own. Set aside. Spray a small skillet with nonstick cooking oil spray. Heat over medium heat and add the egg, turning the skillet so the egg covers the bottom of the skillet in a thin layer. Cook until firm, then transfer to a cutting board to cool. Cut into thin shreds and set aside.





To serve, arrange the noodles in the center of a platter. Create concentric rings around the edge of the noodles with the carrot on the outside, then the spinach, then the cucumber. Make 2 small piles of the bean sprouts at opposite ends of the platter, then create 2 piles of shredded egg on top; in the center, place the minced garlic and ginger, then the chicken and cilantro, and garnish with the scallions. Butter, and remainder of seasonings over medium heat, stirring occasionally. When cream combination begins to bubble, add the pasta and turn off heat. Stir well. When chicken is cooked through, place on cutting board and slice into strips. Spoon pasta and sauce onto large serving plates (2) and top with chicken, diced tomatoes, and parmesan. Throw a thick, garlicky slice of Texas toast on that bad boy and enjoy!If you would like to sprinkle some supplementary cajun spice on top of your Cajun Chicken Pasta, I doubt anything will hold it against you!

1 lg garlic, clove, minced

1/2 ts chili powder

2 tb butter, unsalted lettuce, romaine

3/4 c cheese, monterey jack, shredded

4 tb salsa, chunky style

Make a horizontal cut across each chicken breast to make a pocket.

In a small bowl, mix the chilies, cheese, garlic, and chili powder. Divide the cheese aggregate into four equal portions and place one quantum in each chicken breast pocket; derive the chicken pockets with wooden picks.

In large non-stick pan, place the butter and melt over medium heat. Add chicken to the melted butter and cook, turning, about 12 minutes, or until the chicken is brown and fork tender. Arrange the lettuce and chicken on a large serving platter. Spoon 1 tablespoon of salsa over each chicken breast.

I was pleasantly surprised by the ease of preparing and I couldn't believe how much this recipe yields. We were indeed impressed with the final result, the taste was truly splendid, and it's such an enjoyable meal.

Chicken Chili

White chicken chili recipe #1:

Ingredients:

3 med. Onions, chopped (I used half an onion)

2 garlic cloves, minced

1 T olive or vegetable oil

4 cups cooked chicken or turkey

2 cans (15 oz each) white kidney or cannelloni beans, rinsed & drained

1 can (15oz) garbanzo beans or chickpeas, rinsed & drained

2 cups chicken broth (I used more)

1 can (4 oz) chopped green chilies

2 teaspoons ground cumin

1/2 teaspoon dried oregano

1/4 teaspoon salt

1/4 teaspoon cayenne pepper

1/4 cup minced fresh cilantro or parsley

Cooking Instructions:

In a skillet, sauté the onions and garlic in oil until tender. Replacement to a slow cooker. Add the chicken, beans, broth, green chilies, cumin, oregano, salt and cayenne; stir well. Cover and cook on low for 6-7 hours or until bubbly. Stir in cilantro. Serve over corn chips; top with cheese and sour cream. Yield: 8 servings (2 quarts)

Notes:

I used great northern beans, pintos, and leftover black eye peas from last night, also didn't have any cilantro in the house. It's good with cilantro, but it was yummy this way, too. I used a bit more broth because it looked too thick.

3 1/2 c. Water

1 tsp. Cumin seeds

1 1/2 lb. Boneless, skinned chicken breasts

1 tbsp. Vegetable oil

1 lg. Onion, chopped (1 c.)

3 cloves garlic, finely chopped

1 1/2 c. Freezing white corn kernels, thawed

1 can (15 1/2 oz.) Great Northern beans, undrained

3 cans (4 oz. Each) chopped green chilies, undrained

3 tbsp. Lime juice

2 tsp. Ground cumin

1/2 tsp. Ground coriander

1/2 tsp. Ground white pepper

1/3 c. Reduced-fat sour cream

2 tbsp. Cilantro, fresh, chopped

Cooking Instructions:

Combine the water and cumin seeds in a large saucepan. Bring to boiling. Add chicken. Lower the heat; cover the saucepan and simmer 20 minutes or until chicken is fork-tender. Drain. Cut chicken into 3/4 inch cubes. In the same saucepan, heat oil over medium heat. Add the onion; sauté 5 minutes. Add garlic; sauté 1 minute. Stir in the corn, beans, chilies, lime juice, cumin, coriander and white pepper. Bring to boiling. Add the chicken. Lower heat. Cook just until heated through. Remove the saucepan from the heat. Stir in sour cream and cilantro.

Melt the butter in a large, heavy pot. Add the chicken pieces, skin side down, and cook until browned. Begin layering on the crookneck squash, zucchini, bell or poblano pepper, corn, tomatoes, and onions. Sprinkle with garlic and sliced jalapenos.

Cover and cook over low heat for about 30 minutes, checking occasionally. If liquid is very low or has begun to dry up, add some chicken broth or water. Cover and cook 15 minutes longer, or until the chicken and the vegetables are tender. Do not overcook, as all could begin get mushy.

Serve this dish family-style on a warm platter, with the chicken in the middle, and surrounded by all of the vegetables. Serve with fresh jalapeno strips for those who cannot seem to get adequate heat in their meal. Makes 4 servings of this down-home fiery Mexican chicken.

Puree – To puree a vegetable or fruit is to blend it until it is as smooth as baby food. Use an electric blender. 
Sauté – You can sauté vegetables and this means to fry in hot oil over a high heat for a short amount of time. 
Season – To flavor with salt and pepper. 
Simmer – This term is often used with sauces or recipes like curry or chili. It means to bring a sauce to boiling and then turn down to a level where the sauce is bubbling but not boiling. 
Stiff peaks – If you are instructed to beat cream or egg whites until stiff peaks are formed, then you need to whisk or beat until the mixture forms peaks which do not collapse and you could even turn the bowl upside down without the mixture immediately falling out.

This yummy and easy to make pasta dish is a meal on its own! A cream sauce is the signature of this pasta casserole that is believed to be invented in San Francisco, where it was named after the then-famous opera star Luisa Tetrazzini.

Preparation time: 10 minutes

Chicken Chili

Cooking Time: 15 minutes

Ingredients

2 Chicken Breasts (cut into 1" cubes)

2 tbsp. Olive Oil

1/4 cup Butter

2 Large finely chopped Shallots

2 cups Sliced Mushrooms

1/4 cup All Purpose Flour

4 tsp. Chicken Bouillon

1/2 tsp. Pepper

1/2 tsp. Salt

1/3 cup Sherry

2 cups Water

1/2 cup Heavy Cream

4 cups of cooked Egg Noodles or Seashell Pasta

Salt & Pepper to taste

Preparation

In a large frying pan, cook diced chicken in 2 tablespoons of olive oil. When cooked all the way through, remove chicken with a slotted spoon leaving juices in the frying pan.

Add 1/4 cup of butter to the frying pan and sautee shallots and mushrooms, cooking on medium heat for 5 minutes.

Mix 1/4 cup of flour, chicken bullion, salt and pepper then sprinkle over cooked mushrooms and shallots. Add Sherry and water and boil for 5 minutes.

Stir in Heavy Cream then add salt and pepper to taste. Add cooked chicken and noodles then serve hot.

This dish is also good served as in a casserole dish with melted mozzarella and/or parmesan cheese. Some variations comprise diced green peppers or broccoli flowerettes.

Shrimp, Chicken and Sausage Gumbo

You will love this spicy, hearty, relieve food. It is easiest to make with a friend. You can make the rue and your friend can chop vegetables. If you're development it alone, get your vegetables wholly chopped before you start the rue. This gumbo will swiftly come to be a family favorite.

Chicken Chili

4-5 large chicken breasts. 3-4 pounds hot sausage. 2 pounds of large shrimp de-veined and de-clawed. 1 cup of vegetable oil. 1 cup of flour. 2 cups of diced celery. 3 or 4 large green peppers diced. 3 large onions diced. 2 or 3 jalapeno peppers diced. You will also need a very large sauce pot.

Put your chicken breasts into the sauce pot, cover with water and simmer until done. Remove the breasts from the water and cool. Once they are cooled, shred the chicken. Make sure you shred it, don't cube it. Set the chicken aside. Keep the water you cooked the chicken in. If you run short on chicken broth, you can use the water.

Fry or microwave your hot sausage until done. Cut into 1/2" pieces and set aside with your shredded chicken.

Now you'll want to chop up your vegetables as per the ingredient list.

2 cups of diced celery. 3 or 4 large diced green peppers. 3 large diced onions. 2 or 3 diced jalapeno peppers.

Set the vegetables aside.

Next you'll create the rue. Make sure the large sauce pot is wholly dry. Put 1 cup of vegetable oil and 1 cup of flour into the pot. Over low/medium heat stir constantly until the rue takes on a copper color.

When the rue is done, drop in the vegetables. Be truthful not to splatter, the rue will be very hot. Cook the vegetables in the rue until they are tender.

Now add 2 - 3 large cans chicken broth and 3 or 4 bottles clam juice. Also add the cayenne pepper, salt, black pepper and chili powder to taste.

Finally add the shredded chicken and the sliced hot sausage. Let the entire mixture simmer for at least one hour over very low heat stirring occasionally.

When the gumbo is nearly done, cook the white rice per the instructions on your box. Then put 2 - 3 cups cooked rice directly into the gumbo above.

Ten minutes before serving add 2 pounds of large shrimp. Make sure the shrimp is de-veined and de-clawed before putting them into the gumbo.

Serve over rice with crusty bread.

This formula is from Louisiana. It's been a big hit in our family for many years now. I'm sure you'll enjoy it. You can serve at least 10 citizen with this recipe. We never have 10 citizen to serve so we end up rescue a good quantum of it for later.

1 lb ground beef
1 can kidney beans
1 can (8-oz) tomato sauce

In a large deep skillet, brown the ground beef with the onion.  Pour mixture into a colander and drain well.  Rinse with hot water and drain.  Wipe excess drippings from pan with a paper towel.  Return mixture to skillet and add the beans, tomato sauce, salt, tomatoes, chili powder, and red pepper.  Stir to blend ingredients well.  Cover skillet and simmer for 30 minutes, stirring occasionally.  Top individual servings with the cheese and serve with baked tortilla chips.

We've made this chili the night before, and heated it up in the crockpot the next day for a party. For parties, we'll do one pot of black bean chicken chili and one pot of white chicken chili.
