1 ripe peach

1 tb milk

1 tb peach juice

1/2 c cooked boneless chicken, chopped

1/4 c cooked brown rice

2 ts wheat germ

1/2 ts ground ginger

1/2 c teriyaki sauce

1/3 c medium dry sherry

1/4 c honey

2 ea garlic cloves, minced

2 tb vegetable oil

6 ea frying chicken quarters

First you need to cut the chicken into smaller portions. Then, Rinse and pat dry. Place in glass bowl to marinate. In small saucepan combine oil, honey, teriyaki sauce ginger and garlic. Bring to boil. Remove from heat and add sherry. Pour over chicken pieces. Cover tightly and refrigerate overnight, turning once or twice.

Grill, beginning skin side down, 6 to 8 inches from coals; turn every 10 minutes and baste with marinade. Cook for 25 to 30 minutes or until done and well browned.

Chicken Breasts With Bacon


6 Whole chicken breasts (skin boned, salt lightly)

2 Bunches of green onions

8 oz. cream cheese

1 lb Bacon (more or less)

Cream together cheese and chopped onions; form into 12 walnut sized balls. Wrap half a chicken breast around each one, and one or two slices of bacon around that in such a way as to cover as much of the chicken as possible.

Secure each little bundle with a toothpick or two. Then broil them on a rack, with a drip pan underneath 6 to 8 inches from the broiler unit. Turn occasionally, as they brown, and broil about 30 minutes, or until the bacon is done.
Mexicali Chicken Breasts


4 Chicken breasts, split

4 Eggs

1/4 c Bottled taco sauce

1/2 ts Salt

2 c Fine dry bread crumbs

2 ts Chili powder

2 ts Ground cumin

1 t Garlic powder

1 t Dried whole oregano, -crumbled

1/4 c Butter or margarine, melted

Shredded Ice burg lettuce

Shredded Longhorn or Cheddar cheese

Tomato wedges

Dairy sour cream

Remove skin from chicken breasts and wipe with damp paper towels. Beat eggs in a pie plate or shallow bowl with a fork; beat in taco sauce and salt. Combine bread crumbs, chili powder, cumin, garlic powder and oregano in second pie plate or dish.

Dip chicken breasts in egg mixture, then into crumb mixture to coat well. Arrange in a single layer in a large jelly-roll pan; drizzle with melted butter. Bake in a 375 F oven for 35 minutes until crisp and tender.

To serve, pile shredded lettuce on a large serving platter. Arrange the baked chicken on top. Garnish with shredded cheese, tomato wedges and sour cream. Serve hot, warm, or at room temperature.

Makes 8 servings.

There are some great, easy recipes besides the old, tried and true-deer chili, deer stew, deer roast with vegetables, deer stroganoff, grilled venison tenderloins or chicken fried deer steaks with gravy and mashed potatoes.



Deer Jerky



You aren't a true deer connoisseur unless you have tried to make your own deer jerky. You don't have to have a dehydrator; you can use your oven, set on 200-250, with a hot pad stuck in the oven door to let the moist air out. It can take anywhere from 5-10 hours, depending on how chewy you want it. You can use the meat from the ribs, the flank steaks and the scrap meat that doesn't end up ground in hamburger or sausage for this. Keep in mind that the meat you start with, ends up about a half or two thirds less after drying. Marinate ¼ inch strips and pieces overnight, in some liquid smoke, Tabasco sauce, Worcestershire sauce, soy sauce, a little seasoning salt, garlic powder and onion powder. Next day, spread meat on wire rack, foil underneath and put in oven until done, 5-10 hours.

1 pkg. of softened cream cheese, ¼ to ½ cup of dried or fresh crushed cherries or pie filing and leftover cooked venison, roast or ground, (and a few red pepper flakes if desired for heat) and spread on crackers.

Take 2 rolls of crescents and open on a pizza pan or (large round baking pan), spread with tips outward, like a sun shape. Mix together: ½ pound of venison, ½ pound sausage, tomato sauce, onions, peppers and green and black olives, and one pack of dry ranch dressing, prepared as instructions. Once mixed, place in the center of the "Sun", top with shredded cheese, fold all the points towards the middle, and bake at 375 until golden and inside is bubbly.



Venison Cottage Cheese Pie



Mix 1 pound of ground venison, mushrooms and onions together and put in a 9" frozen pie shell. In a separate bowl, beat 2 eggs and add 1 cup of cottage cheese and pour over the top of the meat mixture. Bake at 350 for 30-40 minutes until set, or top mixture turns golden brown.

Start at least 10 pounds of the charcoal in a torpedo style smoker. You need a fairly hot fire. Fill the secondary pan with cold water, and wait for the coals to turn white. Soak hickory chips in bourbon with enough water to cover. Rub the roast liberally with steak seasoning, being sure to coat all surfaces.
When the coals are ready, place the roast on the top grate. Throw a few handfuls of soaked hickory chips onto the fire, and close the lid. Check the fire every 45 minutes or so, adding more charcoal as needed to keep the fire hot. Every time you check the fire, add more wood chips.
Cook for 8 to 10 hours, or to your desired doneness. Use a meat thermometer to check the roast. The meat tastes best when rare: 145 degrees F (65 degrees C), but cook to your liking.
