Old-fashion Corn Chips, Chili, and Cheese Casserole With Country Surprise Slaw

With the current grocery prices and all the other economic downturns, we are all looking for economical recipes that will help us feed our families nutritious meals. Here are a couple of old-fashion recipes from my vintage recipe collection. Both are quick, easy, economical and tasty. Perfect for an inexpensive family meal. Corn chips, chili, and cheese casserole uses a minimal number of ingredients, goes together quickly and only needs to bake for 20 minutes. Not only is it tasty and economical, it is also perfect for the busy mom. Country surprise slaw has an apple in its ingredient list, giving it a little something extra and adding fruit to the mix.

CORN CHIPS, CHILI, AND CHEESE CASSEROLE

2 tbsp margarine
1 lb ground beef
1 1/4 oz pkg chili seasoning mix
1 cup shredded cheddar cheese
2 cups coarsely crumbed corn chips
1 medium onion, chopped
2 cans (8 oz each) tomato sauce

Melt margarine in skillet and brown ground beef with onion. Drain. Stir in chili seasoning mix, tomato sauce, and 1 cup water. Simmer 10 minutes. Stir occasionally. Lightly grease 2-quart casserole dish. Layer 1/2 chili mixure, corn chips, then cheese. Repeat layers. Bake 20 minutes at 350 degrees.

COUNTRY SURPRISE SLAW

6 cups shredded or chopped cabbage
2 large carrots, shredded
1 medium bell pepper, chopped
1 large red apple, chopped
3 green onions, sliced
1/2 cup chopped celery
1 cup mayonnaise
1/2 cup sugar
2 tablespoons cider vinegar
1 teaspoon salt
1/4 teaspoon pepper

In a large bowl, combine the cabbage, carrots, bell pepper, apple, onions, and celery. In a small mixing bowl, combine the mayonnaise, sugar, vinegar, salt and pepper. Pour dressing mix over cabbage mixture and toss to coat well. Put in a covered bowl and refrigerate.

7 Easy Slow Cooker Soup and Chili Recipes

For an easy to prepare meal using your slow cooker, try these delicious soup and chili recipes. They are quick to put together and can cook while you are away from home.

Slow Cooker Chicken Stew

Ingredients:

4 to 5 cups cooked chicken, chopped
1 large can whole tomatoes, undrained
2 to 3 large potatoes, cut into 1" pieces
1 medium yellow squash or zucchini, thickly sliced
1 large onion, chopped
1 can creamed corn
1/2 cup ketchup
1/2 cup barbeque sauce
1 teaspoon ground black pepper

Preperation:

Combine chicken, tomatoes, potatoes, squash, onion and pepper in cooker. Cover and cook on LOW setting for 5 to 7 hours, until potatoes are tender.

Add ketchup, barbeque sauce and corn, mixing well until combined. Cover and cook on HIGH setting for another 30 minutes.

Slow Cooker Three-Bean Chili

Ingredients:

1 pound ground beef or ground turkey
1 small onion, chopped
1 large can dices tomatoes, undrained
1 can kidney beans
1 can black beans
1 can pinto beans
1 8 ounce can tomato sauce
1 can chopped green chilies
1 1/2 tablespoons chili powder

Preperation:

Cook ground beef and onion in a skillet until ground beef is browned and onion is tender. Drain well. Place beef mixture in cooker.

Add remaining ingredients and mix well. Cover and cook on HIGH setting 6 to 8 hours.

Slow Cooker Navy Bean with Ham Soup

Ingredients:

6 cups water
5 cups dried navy beans, soaked overnight and drained
1 pound ham, cubed
1 can corn
1 large onion, diced
1 teaspoon pepper
1/2 teaspoon salt

Preperation:

Combine all ingredients and mix well. Cover and cook on LOW setting 7 to 10 hours, or until beans are tender.

Slow Cooker Chicken Chowder

Ingredients:

2 tablespoons butter or margarine
1 1/2 pounds chicken, cut into 1/2" pieces
1 large onion, chopped
2 stalks celery, sliced
2 carrots, sliced
2 cups fresh or frozen corn
2 cans cream of potato soup
1 1/2 cups chicken broth
1/2 teaspoon pepper
1/2 cup cream

Preperation:

Melt butter or margarine in skillet. Add chicken and cook until browned.

Add chicken, onion, celery, carrots, cream of potato soup, chicken broth and pepper to slow cooker. Mix well. Cover and cook on LOW setting 3 to 4 hours, or until chicken in cooked through and vegetables are tender.

Turn off heat. Stir in cream and allow to heat through, 5 to 10 minutes.

Slow Cooker Easy Turkey Soup

Ingredients:

2 pounds ground turkey, cooked and drained
1 large can whole tomatoes, undrained
2 cans beef broth
1 16 ounce bag frozen mixed vegetables
1/2 cup dry barley
1 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon ground coriander
1/2 teaspoon ground black pepper

Preperation:

Combine all ingredients in slow cooker and mix well. Add water to just cover ingredients. Cover and cook on HIGH setting 3 to 4 hours or on LOW setting 6 to 8 hours until vegetables are tender.

Best Bean Soup Recipe

Ingredients:

6 ounces bacon, diced
8 to 10 cups chicken broth
3 cans Great Northern beans or Navy beans, drained
1 can diced tomatoes, undrained
1 large onion, chopped
1 package frozen carrots
2 teaspoons dried minced garlic
1 teaspoon dried rosemary
1/2 teaspoon salt
1 teaspoon ground black pepper

Preperation:

Cook bacon in skillet until just cooked. Drain and place in slow cooker.

Add remaining ingredients to slow cooker, mixing well.

Cover and cook on LOW setting 6 to 8 hours, or until beans are tender.

Slow Cooker Chunky Chili

Ingredients:

1 pound ground beef
1 large onion, chopped
2 to 3 tablespoons chili powder
2 cans diced tomatoes, undrained
2 cans chili beans or kidney beans
1/2 cup salsa
1/2 teaspoon salt
1/2 teaspoon pepper

Preperatiion:

In a skillet cook ground been and onion until beef is browned and onion is tender. Drain well. Add to slow cooker.

Add all remaining ingredients, and mixing well. Cover and cook on LOW setting 5 to 6 hours.

Sprinkle with shredded cheese when serving, if desired.

Stir fried chicken recipes are usually associated with Chinese cooking but there is a whole new world of Asian flavor if you look at Vietnamese cuisine.

Typical Vietnamese Ingredients

Vietnamese Stir Fry Recipe with Chicken

You will need:


1 lb 8 oz boneless chicken breasts, sliced thinly
5 tablespoons lemongrass, chopped finely
1 red chili, sliced thinly
4 garlic cloves, minced
1 teaspoon ground cardamom
4 tablespoons sunflower oil
1 cinnamon stick
10 green onions, cut diagonally into 1 inch pieces
3 tablespoons ground bean sauce
12 oz green beans, in 2 inch lengths
1 carrot, in thin 2 inch strips
3 tablespoons fish sauce
1 handful peanuts
1 handful chopped, fresh cilantro leaves

How to make it:

Heat half the oil in a skillet over a medium heat, and then add the chicken. Cook it for 6 to 8 minutes, stirring often. Remove the chicken from the pan and drain it on paper towels.

Add the rest of the oil to the pan, and then add the garlic, lemongrass, chili, cinnamon, and cardamom, frying until fragrant. This will take about 3 minutes.

Add the green onions and fry for 2 minutes. Add the carrots and beans and fry for 8 minutes, stirring often. When the vegetables are cooked but still with a little bit of bite to them, put the chicken back in the pan. Add the bean sauce and fish sauce and stir fry everything until the chicken is warmed through. Discard the cinnamon stick.

Heat another pan over a medium heat and dry fry the peanuts until they are golden, and then chop them roughly. Divide the vegetables and chicken between 4 bowls and garnish with the cilantro and chopped, roasted peanuts.

Coffee Chicken Wings? Oh Yeah, They're Great!

Chicken Wings have a relatively short history, but in the making of it, all kinds of variations on the theme have emerged. This delicious recipe is no exception! Since Labor Day is just around the corner, why not wow your friends and family with this interesting version of the easy appetizer known as "wings". You'll be glad you did!

What you'll need:

- 1 ounce butter

- 1/2 cup onion, finely chopped

- 3/4 teaspoon chile powder

- 2 drops hot sauce

- 1 cup barbecue sauce

- 2 Tablespoon honey

- 2 cloves garlic, minced

- 1 teaspoon cumin

- 1/2 cup coffee liqueur

- 2 Tablespoon Worcestershire sauce

- 1 teaspoon salt

- 20 chicken wings, cut in half

- salt and pepper, to taste

In a 2-quart saucepan melt the butter and saute garlic and onion over medium heat for about 3 minutes. Add the cumin and chili powder and cook, stirring the whole time for 2 minutes.

Next, blend in the coffee liqueur and cook to reduce the liquid by one-half. Then, you'll stir in the hot sauce, Worcestershire, barbeque sauce and the salt. Simmer for 5 minutes - afterwards, remove from the heat and add the honey. Set aside and allow the wings to cool.

You'll need to prepare the chicken wings by removing and discarding the tips. Then, cut or divide the wings in half at the remaining joint.

The secret to this recipe for your Coffee Chicken Wings is to marinate the wings in the cooked sauce for about an hour at room temperature or to make this an easy appetizer recipe, marinate the wings overnight in the refrigerator.

To cook, place the marinated wings on a broiler pan and sprinkle with salt and pepper and broil 5 minutes. Then, turn and brush with the remaining sauce and bake at 350 degrees F for 15 minutes. That's it!

Slow Cooker Chicken Stew and Dumplings

Your complete dinner in one pot! This meal has been a family favorite for years, it appeals to the meat and potato lovers and is also quite low fat. It is quick and easy to assemble in the morning and can be left to cook all day in your slow cooker. Add the dumpling batter to the pot ½ hour before dinner. Serves 6.

Stew:

3-4 medium potatoes, cut into small chunks

3-4 stalks of celery, sliced

2 cups of whole baby carrots

1 ½ cups frozen peas

1 ½ lb boneless, skinless chicken breasts, cut into chunks

1 can low fat cream of chicken soup

1 can low fat cream of celery soup

½ cup low fat milk

½ cup water

1-2 tsp poultry seasoning (according to taste)

½ tsp fresh ground pepper

Dumplings:

1 ½ cups all purpose flour

1 tsp salt

3 ½ tsp baking powder

2 tsp parsley

1 egg, beaten

3 tbsp melted butter or margarine

2/3-1 cup milk

Directions:

1. Put potatoes, celery, carrots and chicken into the slow cooker.

2. Mix soups, seasonings, milk and water together and pour over vegetables and chicken.

3. Cook on low for 7-8 hours or until chicken is cooked and vegetables are tender. (You can cook on high for 4-5 hours but results are better on low).

4. Add peas during the last ½ hour of cooking.

5. To make the dumpling batter: mix flour, salt, baking powder & parsley together; add egg, melted butter and milk to dry ingredients. Use enough milk to make a soft dough.

6. Turn heat on slow cooker to high and drop 6 spoonfuls of the batter on top of stew.

7. Cover and cook for approx. 30 minutes or until dumplings are well done. (The dumplings will expand to touch each other during the cooking, so separate them with a knife about half way through to make sure the dough on the sides gets cooked as well).

Hint: Check the stew before you add the dumpling batter to make sure there is plenty of liquid. You can add a can of chicken broth or water if necessary to make sure you have lots of gravy once the dumplings are cooked.

Applebee's Cheese Chicken Tortilla Soup Copycat Recipe

I don't know about you, but I love eating out at restaurants. The problem is that my budget doesn't always support it since even a simple meal out at a restaurant can cost an arm and a leg. The good news is that rather than having to miss out on your favorite meals because you are on a limited budget you can use a "copycat recipe" to make your favorite restaurant dishes at home.

These recipes are reverse engineered to make a dish that tastes just like that one you have at the restaurant. The difference is that instead of having to pay the huge price tag for a restaurant meal, you just pick up the ingredients at the grocery store and make it yourself for a fraction of the cost. Not only that, but by making it yourself you get leftovers, too, which is always a good thing!

As an example, here's a copycat recipe that I have for Applebee's Cheese Chicken Tortilla Soup.

2 tsp. minced fresh garlic

1 cup chopped yellow onion

2 Tbsp. vegetable oil

4 Cups chicken stock

1/4 cup green pepper, chopped

1 can tomato puree (15 oz.)

1 Tbsp. finely minced jalapeño pepper (optional)

1 tsp. sugar

1/2 tsp. hot sauce (optional)

1 tsp. chili powder (optional)

1 tsp. Worcestershire sauce

1/2 tsp. salt

1/4 tsp. pepper

4 Tbsp. flour

1/2 Cup water

1 lb. cooked chicken, cubed or pulled

1 Cup cream

1/4 Cup non-fat sour cream

8 oz. processed cheese, 1-inch cubes

10 (6-inch) colored or yellow corn tortillas, 1/4-inch strips, fried

Roughly chopped Fresh cilantro (optional)

Sauté oil, garlic and onions in large pan until soft. Add the vegetable oil, chicken stock, green pepper, tomato puree, jalapeño pepper, salt, pepper, sugar, chili powder, Worcestershire sauce and hot sauce. Bring to low boil, then reduce heat and simmer 20 minutes. Cut tortillas into 1/4-inch strips and fry in oil or spray with oil and bake at 400ºF (while soup is cooking). Sprinkle with salt if desired. Thoroughly mix flour and water, then whisk into soup. Bring to a low boil, then simmer 5 minutes. Add chicken and simmer 5 minutes. Stir in sour cream and cheese (to taste). The soup should be served at 165ºF. After serving soup, pile tortilla strips into a "haystack" shape on top of the soup. Optional: garnish with freshly chopped cilantro. Makes 6-8 servings

This recipe is delicious and is really great for cold winter nights since soup is always a warm, filling meal. One of the great things about this recipe is that it makes enough to feed an entire family and is pretty cheap to make. Even if you just have one or two people to feed the leftovers can be easily stored and feed you for a few days. It's a great way to get restaurant-style soup on an eat at home budget.

How to Grow Chilies - 3 Great Tips

Growing chilies is rapidly becoming one of the fasted growing gardening trends around. There has been a huge increase in the use of chili peppers in cuisine around the world. Alongside this many people are discovering that growing your own chilies is much easier and a lot more fun than they previously thought.

1 - Germinating Chili Plants

Once you have some seeds (bought from a garden shop of just simply saved from one of your favorite chili peppers) your first task is to get them to germinate. Plant your seeds in some regular compost only about 3mm below the surface. Do not water directly instead spray with water. To help keep the moisture in your plants place a plastic bag over the seed tray. Just be sure to check every day so you can remove the seeds once they germinate.

2 - Early growth of chili plants

During this stage the chili plants main requirement is light. If they are not getting enough sunshine you may notice them becoming very tall and spindly. This is known a "leggy". To resolve the problem you need to get more light to your plants. If you are unable to get the plants into conservatory or greenhouse or onto a sunnier windowsill then consider artificial lighting.

One great and cheap way to use normal domestic fluorescent lights. You can pick these up very cheaply. Simply position the plants about 5cm from the tubes and keep them under for at least 12 hours a day. The particular spectrum of light that fluorescent tubes give off is ideal for the early stages of chili plant growth.

3 - Maturing pants through to fruit

One common problem with mature plants is the lack of pollination. The symptom is often that chili flowers fall off before any fruit set. The easy solution is to take a small paint brush and lightly rub it over the flowers of each plant. This is effectively you playing the part of insects and bees and pollinating the plants. Repeat this every day and you should soon see some fruit setting on your plants.

Pulled Pork and Green Chili Gravy For Poker Night

This is the night mom takes the kids skating or to the movies and dad invites the guys over for a friendly game of Texas hold'em. Dad, you can use the crock pot and start cooking the pork before you head off to work in the morning. Once you're home from work make the gravy in the blender, warm the tortillas and chill the beer.

This recipe is a take-off on country style ribs with green chili gravy that was popular in Houston around the mid 1990s. The ribs were stewed with onions and garlic and the resulting juice was used in the preparation of the gravy. Toasted corn tortillas were used for thickening the gravy and added that little maza flavoring. Roasted poblanos and cilantro were added to produce the green chili in the gravy.

* Deep dark green poblano chilies are as large as green bell peppers, mildly spicy with a lot of flavor. The best way to cook them is to roast them over a fire or in the oven. Just hit them with a little olive oil which will draw the heat of the oven to them, place them on a baking pan in a 350° F. oven for about 10 minutes, turn them over, and roast the other side for 10 minutes. They should be blistered or charred on the outside. Place the chilies in a plastic bag for 10 minutes to steam, then scrape off the outer skin. Slit open and remove the seeds and stems.

Buy a pork shoulder roast. It will cost about $6.00 for 4 pounds and will be full of flavor and tender enough to pull once it is slow cooked. Fatten them up before you take their money. They won't mind a bit after you feed them this great dish.

Ingredients:

o 4 pound pork shoulder roast (Boston butt)
o 2 onions, chopped course
o 6 cloves of garlic, smashed and peeled
o 1 bay leaf
o 1 sprig of thyme or 1 tsp dried thyme
o 5 cups stock (beef, chicken or vegetable)
o 2 corn tortillas, toasted lightly on a dry grill or skillet, torn into pieces
o 2 large poblano chilies, *roasted, scraped and seeded as directed above
o 1 bunch cilantro
o 1 tsp cumin
o Salt and pepper to taste
o Chopped lettuce, tomato, and queso fresco (or grated cheddar cheese) for toppings

Method:

1. Place one onion on the bottom of a 6 quart crock pot.
2. Set pork roast on top of onion, cut roast in pieces if necessary.
3. Add remaining onion, garlic, bay leaf, thyme and stock. Set temperature to low and let cook for 10 hours or longer.
4. Remove meat to a platter and pull pork with 2 forks while poblanos are roasting.
5. Prepare poblano chilies as *directed above.
6. Pour crock pot juices into a blender. Add poblanos, corn tortillas, cilantro, cumin, salt and pepper to blender. Cover the blender and puree contents until smooth.
7. Return gravy to crock pot, add back the meat and turn the temperature to warm.
8. To serve, toast a tortilla in a dry skillet, spoon pulled pork and gravy into tortilla, add lettuce, tomato, and queso fresco or grated cheddar cheese. Fold up the bottom and then the sides like a burrito.

In a large deep skillet, brown the ground beef with the onion. Pour mixture into a colander and drain well. Rinse with hot water and drain. Wipe excess drippings from pan with a paper towel. Return mixture to skillet and add the beans, tomato sauce, salt, tomatoes, chili powder, and red pepper. Stir to blend ingredients well. Cover skillet and simmer for 30 minutes, stirring occasionally. Top individual servings with the cheese and serve with baked tortilla chips.

GOLD'S CHICKEN ENCHILADA CASSEROLE

2 chicken breasts

2 tbsp vegetable oil

1 onion, chopped

1 can (28-oz) diced tomatoes with green chilies

1 can (8-oz) tomato sauce

1 pkg enchilada seasoning mix

1/2 tsp garlic powder

1/4 cup fresh chopped parsley

1 pkg (6-oz) corn tortillas

1 can (3.8-oz) sliced black olives

2 cups shredded Monterrey Jack cheese

Preheat oven to 350 degrees. Cook chicken breast in a skillet with a small amount of water, until tender. This takes about 15 minutes. Allow chicken to cool before shredding. Heat the oil in a large skillet and add the onion; saute until tender. Add the tomatoes, tomato sauce, enchilada seasoning, garlic powder and parsley, stirring to blend together. Bring to a boil, reduce heat to simmer, and cook, uncovered, for 15 minutes. Place a third of the corn tortillas in the bottom of a 9 x 13 x 2-inch baking dish that has been lightly sprayed with nonstick cooking spray. Pour a third of the meat mixture over the tortillas and layer with a third of the olives and a third of the cheese. Repeat layers two more times, ending with cheese. Bake uncovered for 30 to 40 minutes.

Yield: 8 servings of 1 cup each. Per serving: 320 calories, 25 g carbs, 21 g protein

Now you may not believe it but actually the best place to go for this sort of soup is to one of the chain restaurants. Here's why. Usually the way these restaurants make something like a soup, or any food for that matter is tested, and improved, and tested some more until it gets rave reviews by customers of their restaurants.

So you can almost be sure that if you're going to a restaurant like Houlihan's, or Friday's, or On the Border then you're going to get some really good chicken tortilla soup.

Now the one's above I've mention are all good. Actually I don't know about Friday's...in fact I don't know if they even have it, but I do know that On the Border has some tremendous tortilla soup. Houlihan's I recently had and it was OK. Not great, but I would get it again. The chunks of chicken in theirs was actually the best part.

My Very Favorite Chicken Tortilla Soup with a Different Name!

For the most part this soup is simply chicken broth, Mexican seasoning, onions, corn, and tomatoes (salsa)...with some sort of tortilla chips and shredded cheese on top. But though so simple, finding a restaurant who gets it right seems to be a challenge for me.

But one of the best that I've ever tasted was from Chili's. Wow, the head chef's there at Chili's, wherever they are, got this one right. Oh in case you go there looking for it though, it's actually called Chicken Enchilada Soup. Little play on Mexican terms I suppose, or maybe that's why it's so much better, maybe there's some enchilada sauce mixed in there somewhere.

Either way, hands down they've got the best chicken tortilla soup that I've tasted and I've looked high and low.




An Even Better Way to the Best Foods from the Best Restaurants...

But here's the thing. I've been eating at restaurant after restaurant to find the best chicken tortilla soup and yes Chili's is the best. But who wants to get in the car and drive down to Chili's or any restaurant for that matter every you want to eat some darn soup. Not me!

That's not counting the expenses. You can make your own pot of the stuff for the same price as you pay for one bowl. A tantalizing mix of chicken, rice, blue cheese dressing and buffalo wing sauce.

1/2 cup uncooked regular long-grain white rice

1 cup water

1 tablespoon olive or vegetable oil

1 pound boneless skinless chicken breasts, cut into thin strips

1 cup celery, thinly sliced

1 (14.5 oz.) can stewed tomatoes, undrained

1/2 cup buffalo wing sauce

1/4 cup blue cheese dressing

Directions

Preheat oven to 350 degrees. Prepare an 8-inch square baking dish with cooking spray.

Cook rice in water for 20 minutes as directed on package.

In a large skillet, heat the oil over medium high heat. Add the chicken and celery. Cook for 5 to 7 minutes; stirring frequently until the chicken is no longer pink. Remove from heat.

Open the can of tomatoes and cut up the tomatoes while still in the can. Stir the tomatoes and wing sauce into the chicken mixture.

Spoon the cooked rice into the baking dish. Spread the chicken mixture over the rice - do not stir.

Bake for 25 to 30 minutes or until hot in the center. Drizzle blue cheese dressing over the top.

3/4 c plain yogurt

Remove chicken from the marinade and coat evenly in flour mixture. In a wok or deep fryer, heat oil to 370f. This can be achieved by heating over medium high heat.

Use enough oil to cover 4 to 5 chicken wings at a time. Deep fry wings for approximately 8 minutes. Drain on paper towel. Serves 2 to 4

Instructions: Place the chicken in the bowl with all essential ingredients. Mix it well and put it inside fridge to marinate. Place it at least for three hours. Take out your gas grill. 3 cups milk
2 cups flour
2 teaspoons ground pepper

Directions


Place shortening into the pressure cooker and heat over medium heat to the shortening reaches 400°F.

Creamy Potato and Green Chili Soup

Ingredients:

4-medium Potatoes

½-pound Green chili's, frozen & chopped

1-medium Onion

2-tablespoons Butter

1-can Cream of Mushroom soup

16-ounces Chicken broth

1½-cups Milk

½-cup Flour

½-teaspoon Salt

½-teaspoon Pepper

8-slices Bacon, crisp

½-cup Cheddar cheese, shredded

Instructions:

Cube potatoes into about a 1 inch square and place in 4 quart pot. Slice onion and pour in chicken broth and add enough water to just cover the potatoes. Bring to a boil and cook for about 30 minutes. Add the remaining ingredients except for 1 cup of milk and ½ cup of flour. Mix the remaining milk and flour; pour into soup mixture and simmer for another thirty minutes. Top with shredded cheddar cheese, crumbled bacon and serve with crackers, bread or cornbread.

Makes 6 servings

Note: Fresh roasted green chili's are the best if available. Sometimes I saute sliced fresh mushrooms in butter and add to the soup. Also, I like to serve with hot toasted Parmesan bread....mmm good.

In this article we will look at a low calorie, high protein chili recipe that is sure to please you and your family or guests. It is not hard to make a quality dish of chili as many times this dish gets bad press as being fattening and this is just not the case.

I love chili! I can eat it anytime of the year and never be unhappy with it! It is fast, and cheap like some of the girls I dated in college but that is another story entirely! Many people think that chili is fattening because of the carbs associated with it in the form of beans. Let me be the first to tell you that no one person has ever gotten fat from eating beans unless they bury them in fat and grease. Period! Chili, if done properly whether it is beef, chicken, or even pork can be a low fat, high protein shot that tastes great! The secret is to get the flavor you want from the ingredients and not from the fat! Believe me, this is not hard to do. Here is a low fat, high protein chili with all the benefits of helping one to lose weight and stay healthy and not have all the fat that can be associated with day to day chili. This chili recipe will serve 6+/- people. In this recipe I will use beef, but you can substitute whatever kind of meat protein that you wish. Chicken, turkey, pork or even tofu if you want to make this a vegetarian style of chili. There are also tofu products that are textured like tofu sausage that is really excellent for chili recipes. So here we go with the ingredients.

The ingredients you will need are:

1. 1 1/2-2Lbs of lean ground beef. It should be 10% or less if you can get it.

2. 4 garlic bulbs finely chopped.

3 tablespoons of either California or New Mexico chili powder.

1 dash of cayenne for added heat if you like. The thermogenics and metabolism boost from it is good too!

I tablespoon of cumin.

1 teaspoon of smoked paprika.

1 large can of fire roasted tomatoes diced up. These cans are either 26 to 28 oz.

2 15oz can of some kind of red bean either kidney or Louisiana red bean. Pinto beans will do in a pinch though.

1 large onion chopped fine. Either a brown or red onion the choice is yours.

1 1/2 of a cup or more depending on taste of canned diced chilies. The Hatch chili variety is best in my opinion.

3 to 4 tablespoons of tomato paste.

1 or 2 dashes of Worcestershire sauce.

1 one little dash of salt or sea salt or even season salt, or you can leave the salt out for your guests to add themselves. I know salt make you hold water, but is some cases you just have to have some to bring the flavors of your food out.

OK! Lets cook:

1. Get your hands on a large skillet of either the no stick, stainless steel or my favorite a cast iron skillet and take your very lean ground beef and brown it up. When the beef is browned and not burned, it is time for you to drain off the excess fat from the skillet. I usually put the beef in a bowl and then take another bowl and place it on top of the bowl with the beef and squeeze down and tip sideways over the sink and squeeze all that extra fat out of the beef. I leave what little grease is still in the pan and if there is too much I drain it out until only a slick remains.

2. Now it is time for you to put the beef back into your skillet and put the garlic, chili powder, and cumin in for you to mix together on a low medium heat. When the total ingredients in the skillet are hot and simmering as you can tell from the little bubbles on the sides of the skillet it will be time for you to add y our tomatoes, onions, chilies, beans, and tomatoes to the recipes and stir them together and let them blend. It is good to let this mixture cook for 2 to 4 hours on low simmer and you should check it every now and again with your spoon to see if you want to add anything to this recipe. About ten minutes before the dish is done add your Worcestershire sauce, smoked paprika and salt. Keep on low for another thirty minutes and then turn the heat off and let the flavors marry to each other. When your guests arrive it is chow time!




Note: If you feel that this chili recipe comes out too loose and your want to maintain it's low calorie status, then you can thicken it up by adding 4 tablespoons of arrow root to 3 to 4 tablespoons of water. Mix these two ingredients together and then pour into your chili mixture and stir and this will thicken it up without any added calories or added carbs.

SALAD:

6 cups mixed salad greens

1 1/2 cups cubed grilled or sauteed chicken breast
1 can (15 oz) black beans, rinse well and drain

1 cup chopped fresh tomatoes

1 cup chopped green bell pepper

1/2 cup sliced, halved red onion

1/2 cup low-fat Mexican-blend shredded cheese

DRESSING:

1/4 cup finely chopped fresh cilantro

1/4 cup finely chopped tomato

1 tbsp vinegar (I prefer cider vinegar)

1 tbsp olive oil

1 tbsp lime juice

1/2 tsp lime zest

1 garlic clove, minced

dash of salt

1/4 tsp freshly ground black pepper

1/4 tsp chili powder

In a large salad bowl, combine the salad ingredients. In a food processor or blender, combine the dressing ingredients. Place lid on container and process until you have a smooth dressing. Pour dressing over salad and toss to coat.

Makes 4 servings. Each serving: 298 calories, 26 g carbs, 28 g protein

Chicken Fillet in Chimi Churi Sauce

Chimi churi sauce is an argentinian dressing primarily used for beef (asado) and lamb. Here I am adapting it for chicken (you can also use it to roast chicken, quail or duck if you like). I am not going to make the sauce separately but instead I will be making it up on top of the chicken. However it is a possibility to make a sauce separately and pour it onto the chicken or other types of meat. You may find a store bought variety of Chimi Churi sauce which you like and you could apply it in this way to your meat.

Ingredients:

Chicken fillet. (4-5 peices per portion recommended)

garlic

balsamic vinegar (red wine will do also)

finely chopped parsley

finely chopped oregano

julienne of red pepper

1 finely chopped chilli

olive oil

salt

black pepper

corn starch

method:

First add a little regular kanola or sunflower seed oil to your hot skillet add garlic according to your preferance and then add the fillets immediately afterwards. Stir fry by gently turning the fillets over from time to time.

After the fillets turn white add the red pepper and chili. Again, add as much as you like, there's no fast rule. Now add the oregano and parsley and stir in gently.

At this stage add about 1/4 cup of oilve oil and 1/4 cup of balsamic or red wine vinegar per 2-3 portions. Mix gently. Add salt and pepper to taste.

At this stage add 1 desert spoon of corn starch to a little water and mix well. Add the mixture to the fillets stirring gently until the sauce has thickened.

Serve with rice or sliced potatoes, broccoli and/or carrots. Buon apetite.

Delicious End of the Tomato Season Baked Chicken With Green Tomatoes

Green tomatoes are usually available in Western Pennsylvania after the first frost (usually some time in October. Before that time, most people only use ripe ones. This recipe was developed in November a couple of years ago to use up all the green tomatoes left in the garden. Most people think of Fried green tomatoes because of the movie and because it is another way to use up tomatoes left over at the end of the season. This recipe gives you a way to make a delicious dish with the leftover tomatoes. If for some reason your tomato supply is so big you want to make this dish in the middle of the season, have at it.

Ingredients

3 medium green tomatoes, sliced 1/2 inch thick
2 small bell peppers, chopped
1 medium yellow onion, chopped
3 tablespoons olive oil
salt and pepper to taste
2 chicken tenders (about 3 ounces)

Instructions

1 - Place green tomatoes in the bottom of a greased baking dish.
2 - Sprinkle chopped onion and green peppers over the top.
3 - Drizzle 2 tablespoons of olive oil over the top.
4 - Bake for 15 minutes in an oven preheated to 400 degrees Fahrenheit.
5 - Remove from the oven and place chicken tenders on top.
6 - Drizzle with remaining tablespoon of olive oil.
7 - Return to the oven and bake for another 10 minutes.
8 - Remove and serve immediately.

Serve this dish with a salad made with fresh ingredients from you garden and you have a complete meal.
