So here are the list of things needed to make the dish: 1kg chicken, 4 chopped onions, 8 green chilies, 2 tbsp ginger garlic paste, 2 tsp garam masala, 2 pinches turmeric powder, 1 tsp red chili powder, 2 tbsp oil as well as salt to taste.

How to prepare:

First you can dice the onions. You can make a paste with half of the green chilies and chop the remaining chilies. Put the chicken in a big bowl and make slits in all the pieces on every sides. You can add the ginger garlic paste, green chili paste and turmeric and mix them well and allow them to marinate for at least 2-3 hours. Take a pan and put oil. Put the chopped onions into the heated oil and saute until golden brown. Put in the remaining green chilies, garam masala, red chili powder and saute until the raw smell of the spices leaves. Now you can add the marinated chicken and fry for 10 minutes until the chicken becomes brown on every sides. Put salt to taste. If you want, you can mix water to the desired level of thickness. Let the chicken boil and simmer for 25 minutes until the chicken is soft and tender.

Your dish is ready to be served...garnish it with fresh coriander leaves.

How to Cook Kung Pao Chicken

Chinese dishes are now more and more popular around the world. Kung Pao Chicken is one of the most delicious Chinese dishes. Someone thinks it is complex to cook, but actually it is not. Now I will tell you how to cook it.

Materials:
Fried peanuts, chicken breast, cucumber,dried chili, sugar,vinegar, soy sauce, salt, corn starch, cooking wine, egg white, pepper, scallion stalk, ginger, garlic

Chicken Chili

Directions:
1. Flavor diced chicken with some salt, pepper, egg white, cooking wine, corn starch, vegetable oil. This step can make the cooked chicken soft.
2. Dice cucumber and scallion stalk, peel peanuts, chop ginger and garlic and cut chili.
3. Make sauce with sugar, vinegar, salt, corn starch, soy sauce, cooking wine. The ratio of sugar to vinegar is 2:1.
4. Fry diced chicken, cucumber and scallion stalk until chicken changes color. Then get them out into a plate. Pay attention that don't heat the oil to high temperature when frying.
5. Leave a little oil in pot and put chopped ginger and cut chili. Fry until it smell good.
6. Put the materials prepared in step 4 into the pot, fry them together for a while.
7. Put peanuts and sauce into the pot, boil them with high heat until there is almost no liquid in the pot.

Now the Kung Pao Chicken is ready.

Tips:
1. Chicken breast is the best, because it is the softest part.
2. Keep the flavored chicken for at least half an hour before you cook it. So you should flavor chicken at first,and then process the other materials.
3. The sauce made in step 2 is the most important, it decides the taste of the dish. You can make it according your taste.
4. In step 4, it is better to fry the materials with a little more oil. This can make the cooked chicken soft. When chicken changes color, get chicken, cucumber and scallion stalk out of the oil into a plate. Leave a little oil in pot and get the other spare oil out. Remember don't put these spare oil back, they has no use for this cooking.

Best Chili Recipes - 5 Tips For Cooking Great Chili!

Chili is a metaphysical thing in the world of cooking. There are major competitions all over the United States, and believe me they can get really cutthroat. People take their chili seriously! Chili is a creation that is highly personal to the person that has created the dish. Lots of folks can work a lifetime to perfect a chili recipe and that is no joke. Just ask anyone that has ever competed in a chili cook off. If you are a newbie to the world of chili and want to get out of "the canned stuff," then welcome! Even if you are an old hat at making chili, welcome! The tips herein will do no harm and only enhance your chili experience! Lets get some tips!

Tip 1. What if your chili is too thick? What kind of chili is it? White?, Red? Beef? Chicken? If your chili is too thick do not use water to thin it out that is what everyone in the world does. Use broth instead! Water will "kill" the hard worked for flavor of your chili creation. Broth adds the liquid that you need and unlike water it also adds flavor and depth to your chili recipe!

Tip 2. What if your chili is way to thin? You could add some tomato paste to it as one way to thicken it. Try it a little bit by little bit until you achieve the consistency that you are looking for! What if the tomato paste does not make your chili thick the way you want it to? Then the next step is to try to use something like cornstarch or corn flour commonly called masa flour! You can also try the old school use of cornmeal. I like this one myself. Cornmeal gives a good texture. Some people I know in the Southern United States say to just use good old fashioned instant mashed potatoes. Not bad! It works and adds texture as well. Then the is the no calorie way to do it by using arrow root mixed with a bit of water and then added to the chili and stirred. As you can see there are many way to make your chili thicker. The choice is yours and you should experiment.

Tip 3. Most people that I know of that make chili at home just use plain old boring everyday Jalapeno's. This is fine in most cases and they do bring the "heat!" But the fact of the matter is that there is a world of different chilies out there. Anaheim, Poblano, Serrano, Sante Fe Chilies, Ancho Chilies, The very popular these days Chipotle in Adobo sauce or Chipotle powder, Cayenne, Tabascos, Thai Chili, Habanera, and Scotch Bonnets! The list can go on and on from country to country. So why not try to use more than one type of chili pepper in your chili? Change the flavor, do not settle for the mundane! Have fun!

Tip 4. first thing is first! Cook the meat! Any meat that you are using should be cooked first. Brown the meat way before you have to add the liquids to the recipe. Browning the meat aids in locking in the flavor of the meat. You do not want your meat to get soggy with the liquids from the chili recipe. I prefer to sear cook my meat. That is turn the flame up high and putting the meat in the pan of my fave the cast iron skillet and so it sizzles quick and stir it around a bit and then turn the heat down. This is a classic searing technique that locks the flavor into the meat.

Tip 5. The better the meat the better the meal! It is a fact that the better the quality of any meat or main component for a meal the better the meal. Remember that is it quality over quantity! Just because you can get some meats cheap and get lot's of it does not mean that it is quality meat and that you will get a quality meal. If you have to use a cheaper meat that is less tender then expect to cook your chili longer to soften it up and consider using a meat tenderizer on it to aid in the softening of the cheaper cuts and cook the chili longer and you should be OK. In the long run if you can afford to get the better cuts then I always day do it!

Mexican Cuisine - Chicken Enchilada Soup

The perfect soup for serving as an appetizer to a great home cooked Mexican style meal, the soup is hearty enough to be served as a meal all by itself. The combination of beef broth chicken broth and cream of chicken soup is what makes this soup unique. The green chilies and chili powder add just enough heat to give the soup a little bite, but not be overpowering.

For added color and flavor, consider adding a (14 ounces) can of fire roasted diced tomatoes to the soup, at the same time as the broth and other ingredients are being stirred in. Chicken Enchilada Soup

Ingredients:

1 small White Onion, chopped
1 Garlic Clove, chopped
2 tablespoons Extra Virgin Olive Oil
1 (14 ounces) can Beef Broth
1 (14 ounces) can Chicken Broth
1 (10-3/4 ounces) can Cream of Chicken Soup
1 (4 ounces) can chopped Green Chilies
2 cups Boneless, Skinless Chicken Breast, cooked and shredded
1-1/2 cups Cold Water
1 tablespoon Worcestershire Sauce
1 teaspoon Ground Cumin
1/2 teaspoon Chili Powder
1/2 teaspoon Fresh Ground Black Pepper
6 Flour Tortillas, cut into ½-inch strips
3 cups grated Monterrey Jack Cheese

Preparation:

1. Add olive oil to large stockpot. Heat over medium high heat.

2. Add onion and sauté 2 minutes. Add garlic and sauté additional minute.

3. Add beef broth, chicken broth, cream of chicken soup, chopped green chilies, shredded chicken breast, cold water, Worcestershire sauce, ground cumin, chili powder, and fresh ground black pepper to stockpot.

4. Reduce heat to low and simmer one hour.

To Serve:

1. Add tortilla strips and Monterrey Jack cheese to individual serving bowls.

2. Ladle hot soup into bowls and serve.

Now that cooler days are here many of us find our thoughts turning to chili. It is tasty, warm, and easy to prepare. Left in the slow cooker or crockpot it can be especially easy when we have a busy family running in different directions at once. For a different twist on chili give this Turkey Chili recipe a try. If you don't have turkey, ground chicken is just as good. How about that secret ingredient of unsweetened cocoa powder?

TURKEY CHILI
This is an Old West recipe.

1/4 cup cooking oil
3 lb ground turkey, raw
1 qt water
5 to 6 tbsp chili powder (depending on your fire power taste)
3 tsp salt
10 minced garlic cloves
1 1/2 tsp cumin
1 tsp marjoram
1 tsp ground red pepper
1/2 tsp fresh ground black pepper
1 tbsp sugar
1 tbsp unsweetened cocoa powder
3 tbsp paprika
4 tbsp all-purpose flour
7 tbsp corn meal (not cornbread mix)
3/4 cup cold water

In a Dutch oven heat the cooking oil. Add the meat and cook over medium to high heat until seared and grey but not brown. Add the quart of water, bring to a boil, lower heat to simmer and cook for an hour.

Add the chili powder, salt, garlic, cumin, marjoram, red pepper, black pepper, sugar, cocoa powder, and paprika. Simmer for another 30 minutes.

In a small bowl mix the flour and cornmeal with the cold water. Stir the flour mixture into the meat mixture and continue stirring for about 5 minutes. This makes a thick chili. Add water to reach desired consistency if desired.
