Simmer – This term is often used with sauces or recipes like curry or chili. It means to bring a sauce to boiling and then turn down to a level where the sauce is bubbling but not boiling.

It took a long time to put that weight on, it will come off, but not in 6 weeks like the skinny models on your TV screen. Have patience! Don't have the mindset of a dieter. My husband was 241 lbs. and had a triple bypass six years ago. Today he weighs 178 lbs. and his cholesterol is 108. I never lied to him about his food; I just neglected to mention that I did things like replacing the ground beef in his chili with veggie protein crumbles (from the frozen food case) and the shredded cheddar was veggie cheese from the supermarket produce department. Believe it or not the shredded veggie cheddar tastes and melts so much better than the regular no-fat cheddar. He loves it! I finally had to tell him why he was losing so much weight. He was beginning to think there was something terribly wrong with him.
I bought a cook book with lots of creamy comfort foods that he always craved. None had the heavy cream, butter and cheese that comfort food usually has. I learned how to substitute fat-free half & half or evaporated skim milk for cream. I used margarine with no trans-fat and after a while, I didn't need a special cookbook. It was easy to convert any recipe to low fat, low calorie, low anything.
Here's a good example of a recipe conversion: Original recipe was made with veal not chicken. I used healthy olive oil and margarine, reduced both to 1 1/2 teaspoons. The half-and-half was replaced with the fat free kind.
Chicken in a Creamy Mustard Sauce:
2 chicken breasts (boned & skinned)
1 1/2 tablespoon flour
1/4 teaspoon each salt & pepper
1 1/2 teaspoons each olive oil & margarine
1/2 cup each diced onion & sliced mushrooms
1/4 cup fat-free half-and-half or evaporated skim milk
1 tablespoon each Dijon & fresh parsley
1 1/2 teaspoons lemon juice
Dredge chicken in flour, salt, & pepper. In a non-stick skillet heat oil over medium heat, add chicken and cook, turning once, until browned on both sides and cooked throughout (about 2 minutes per side). Remove chicken.
In same skillet heat margarine until bubbly; add onions & mushrooms. Sauté until lightly browned. Reduce heat, add half-and-half, mustard, parsley and lemon. Stir constantly until sauce comes to a boil and thickens. Serve over the chicken.
Learn this method of good eating; forget the fad diets and the pills. Stop killing your husband and the kids with what you think is kindness cooking. Serve more vegetables and salad. Get healthy and then look in the mirror and be proud of your accomplishment!

Ivory Coast Fried Plantains in Chile and Red Palm Oil Sauce - Spicy Favorite of West African Cooking

In small roadside restaurants in the Ivory Coast of West Africa, a dish called aloco is very popular. Plantains are fried in a hot pan of red palm oil and seasoned with onions, tomatoes, and hot chiles. It is usually then served with grilled fish.

Try to find red palm oil (either in an international grocery or market, or online) for this fried plantains recipe. Red palm oil is what makes West Africa food taste West African. But if that is not possible, you can use peanut oil. It will not have the authentic flavor or color, but will still be very tasty.

Chicken Chili

The plantains needed for this recipe must be ripe, with their skins being nearly black in color. You can buy unripe plantains and leave them out. They will be black in about a week, so plan ahead when cooking this dish.

Ingredients:

1 cup red palm oil (or 1 cup peanut oil mixed with red paprika)

3 ripe plantains, peeled and sliced 1/2-inch thick

Salt to taste

2 large ripe tomatoes (about 1 pound), peeled, seeded, and chopped

1 medium onion, chopped

3 fresh red cherry chiles, or 2 habanero chiles, chopped fine

1 tablespoon white vinegar

Directions:

In a large skillet, heat the red palm oil over medium-high heat until almost smoking. Salt the plantain slices and fry in 2 or 3 batches (do not overcrowd the pan) until a golden brown color on both sides (about 4 to 5 minutes total per batch). Remove from the oil and place on paper towels for draining.

Add the tomatoes, onion, and chile peppers to the skillet with the oil you used to cook the plantains, and bring to a gentle boil. Reduce the heat to low and simmer until the sauce is thick and chunky, or about 50 minutes, stirring frequently. Stir in the vinegar.

Arrange the fried plantains on a serving platter and pour the sauce over them. Serve immediately. This plantains recipe makes 4 to 6 servings.

Soya Butter Bake Chicken Ingredients:

Three pounds chicken, cut up
One-third cup water
Three tablespoons soya sauce
One-half table spoon salt
One-eight table spoon pepper
One and one-half table spoon lemon juice
One teaspoon crushed dried chili peppers
One half cup butter or margarine hot cooked rice

Chicken Chili

Procedure:

At first, you have to heat the oven to four hundred degrees Fahrenheit (or 205 degrees Celsius). Then you have a baking dish ready about 12x7x2 inches (or 305x18x5cm). Then you put the chicken in a baking dish in a single layer. Afterward, you have to combine all the remaining ingredients, except for the rice, in a small saucepan, and then bring this to a boil, you slowly turn down the heat and boil this gently within ten minutes. Later, you need to pour this over the chicken.

And finally, you have to bake this for about forty five minutes or even until the chicken becomes very tender. Next to that, you turn the chicken pieces half way through. Continue baking and baste this occasionally. Serve it with rice.

Chinese Cooking Recipes - Chinese Style Chicken With Vegetables

Chinese cooking recipes can be hard to find and this is a recipe that hasn't been publish on-line to my knowledge. It is very simple and requires only a little preparation time.

Ingredients

Chicken Chili

- 1 pound of uncooked, boneless and skinless chicken breast
- 1 can of sliced water chestnuts
- 1 can of bamboo shoots
- 1 can of baby corn (cut in half)
- 1 cup broccoli florets
- 1/2 cup bean sprouts
- 2 dried red chili peppers (optional for spiciness)

Chicken Marinade

(30 minutes to 8 hours before)
- 2 tablespoons of soy sauce
- 1 tablespoon of teriyaki sauce
- 2 tablespoons of corn starch

Chinese sauce

(can be made just before you start cooking)
- 2 tablespoons of teriyaki sauce
- 2 tablespoons of soy sauce
- 2 teaspoons of brown sugar
- 1 tablespoon of sesame oil
- 1 tablespoon of water
- 1 tablespoon of corn starch

Preparation

Cut the chicken into 3/4 inch cubes and place in a zip-top bag with the chicken marinade for at least 30 minutes.

Place 2 tablespoons of sesame oil into a skillet over medium-high heat. Empty the seeds from the red chili peppers and break them up into the oil (leave them whole if you want to keep them in the meal).

Let the oil warm up until it starts to shimmer and moves easily around the pan. After 1 minute remove the bits of chili peppers. Remove the chicken from the marinade and place in the oiled pan. Stir this constantly to ensure the chicken does not stick to the pan.

Once the chicken and marinade has thickened, add the bamboo shoots and broccoli into the pan. Increase the heat to high and stir every minute or so for 3 to 4 minutes.

After 3 or 4 minutes, put in the water chestnuts and baby corn. Keep stirring every minute or two until everything looks cooked through, another 4 or 5 minutes.

Add the bean sprouts and pour the Chinese sauce over the food and start mixing it with the other ingredients. Take the pan off the heat once everything is coated well.

Serve with rice and this becomes one more recipe in your collection of Chinese cooking recipes.

This serves 4 people and could be stretched with more rice to serve 6.

History

This is one of the Chinese cooking recipes I've known since I was a kid. It was one of the few Chinese cooking recipes in a school funded cookbook and I have never seen anything like it anywhere. I have cooked it through high-school, college and even now for my family. Everyone loves it and says it's one of the best Chinese cooking recipes I have.

Chili is a metaphysical thing in the world of cooking. There are major competitions all over the United States, and believe me they can get really cutthroat. People take their chili seriously! Tip 1. What if your chili is too thick? What kind of chili is it? White?, Red? Beef? Chicken? If your chili is too thick do not use water to thin it out that is what everyone in the world does. Use broth instead! Water will "kill" the hard worked for flavor of your chili creation. Broth adds the liquid that you need and unlike water it also adds flavor and depth to your chili recipe!

Tip 2. What if your chili is way to thin? You could add some tomato paste to it as one way to thicken it. Try it a little bit by little bit until you achieve the consistency that you are looking for! What if the tomato paste does not make your chili thick the way you want it to? Then the next step is to try to use something like cornstarch or corn flour commonly called masa flour! You can also try the old school use of cornmeal. I like this one myself. Cornmeal gives a good texture. Some people I know in the Southern United States say to just use good old fashioned instant mashed potatoes. Not bad! It works and adds texture as well. Then the is the no calorie way to do it by using arrow root mixed with a bit of water and then added to the chili and stirred. As you can see there are many way to make your chili thicker. The choice is yours and you should experiment.

Tip 3. Most people that I know of that make chili at home just use plain old boring everyday Jalapeno's. This is fine in most cases and they do bring the "heat!" But the fact of the matter is that there is a world of different chilies out there. Anaheim, Poblano, Serrano, Sante Fe Chilies, Ancho Chilies, The very popular these days Chipotle in Adobo sauce or Chipotle powder, Cayenne, Tabascos, Thai Chili, Habanera, and Scotch Bonnets! The list can go on and on from country to country. So why not try to use more than one type of chili pepper in your chili? Change the flavor, do not settle for the mundane! Have fun!

Tip 4. first thing is first! Cook the meat! Any meat that you are using should be cooked first. Brown the meat way before you have to add the liquids to the recipe. Browning the meat aids in locking in the flavor of the meat. You do not want your meat to get soggy with the liquids from the chili recipe. I prefer to sear cook my meat. That is turn the flame up high and putting the meat in the pan of my fave the cast iron skillet and so it sizzles quick and stir it around a bit and then turn the heat down. This is a classic searing technique that locks the flavor into the meat.

Tip 5. The better the meat the better the meal! It is a fact that the better the quality of any meat or main component for a meal the better the meal. Remember that is it quality over quantity! Just because you can get some meats cheap and get lot's of it does not mean that it is quality meat and that you will get a quality meal. If you have to use a cheaper meat that is less tender then expect to cook your chili longer to soften it up and consider using a meat tenderizer on it to aid in the softening of the cheaper cuts and cook the chili longer and you should be OK. In the long run if you can afford to get the better cuts then I always day do it!
