1/3 cup orange juice

2 3 1/2 pound chickens quartered, backbones discarded

3 cups mesquite wood chips soaked in cold water 1 hour (optional)

3/4 cup ketchup

For chili rub: mix all ingredients in bowl.

For mop: mix first 5 ingredients in medium bowl.

Arrange chicken in single layer on large baking sheet. Season with salt and pepper. Sprinkle chili rub generously on both sides of chicken; press to adhere. Let stand at room temperature 1 hour. Prepare barbecue (medium-high heat). When coals are white, drain chips, if using, and scatter over coals.

Place chicken, skin side down, on grill rack away from direct heat. Cover grill and cook chicken until cooked through, turning every 5 minutes and covering grill, about 35 to 40 minutes (chili rub may look slightly burned). Serve hot or warm, passing mop separately. 6 Servings

INGREDIENTS

1.5 pounds ground beef or turkey

1 small onion, diced

4 garlic cloves, minced

1 (15oz) can tomato sauce

1 (1.25 oz) packet of chili seasoning

2 cans red kidney beans, drained

2 cans diced tomatoes, drained

3 Tbsp. brown sugar

4 Tbsp. vegetable oil

4 Tbsp. all-purpose flour

vegetable stock

DIRECTIONS

1) Brown the ground beef or turkey in a skillet and pour off excess grease.

2) In a large soup pot, combine cooked beef, onion, garlic, tomato sauce, chili seasoning, beans, tomatoes, brown sugar, flour, and oil. Then pour in vegetable stock until you reach your desired consistency. Mix well. Simmer for 30 minutes so all the flavors can incorporate. (You may use a crock pot and let the chili simmer all day on low.)

3 pounds boneless beef chuck roast, cut into 1-inch cubes

Chicken Chili

2 tablespoons olive oil

3 cloves garlic, minced

3 tablespoons chili powder

2 teaspoons ground cumin

3 tablespoons all purpose flour

1 tablespoon dried oregano

2 (14 oz.) cans beef broth, divided

1 teaspoon salt

1/4 teaspoon ground black pepper

Directions

In a large skillet, heat up the olive oil over medium high heat. Add in the beef cubes and sauté them for 2 minutes. Reduce the heat to medium and stir in the garlic.

Meanwhile, in a small bowl, combine the chili powder, cumin and the flour. Sprinkle the spices over the meat and stir until all of the beef is evenly coated with spices. Crumble the oregano over the meat and pour in 1 1/2 cans of the beef broth.

Pollo Pibil Recipe - A Famous Yucatan Delicacy

This chicken recipe is well known in the Yucatan area of Mexico and if you have taken a vacation in the Yucatan you might have tasted it before. The recipe is quite simple and you need to marinate the chicken in the garlic and chili-infused bitter orange juice and then wrap it in a banana leaf with tomatoes, onions, and epazote for baking and steaming. If you cannot get bitter orange, you can use equal parts of fresh orange juice and lemon juice instead.

What Is Epazote?

Epazote, which is also knows as pigweed, wormseed, Mexican tea, hedge mustard, Jerusalem parsley, pazote and West Indian goosefoot, is a strong-flavored herb and it adds a great flavor to pollo pibil. It has featured in a number of recipes throughout Mexican food history and it dates back to the Aztec times. The Aztecs used it for both cooking and medical purposes.

This herb is poisonous in large quantities but it is beneficial in small quantities because it helps to relieve the gassiness you can get from eating beans. A lot of famous Mexican recipes contain beans. It is often added to animal feed because it helps to prevent worms.

Epazote has a distinctive flavor which has been likened to perfume or gasoline. It is used to season various traditional Mexican recipes like salads, quesadillas, soups, and bean dishes. Older epazote leaves have the strongest flavor so use those sparingly. Younger ones have a milder taste which is also richer. Buy it from Hispanic food stores or Latin markets. You can get the dried version of this herb online and these work well in pollo pibil too.

This herb grows wild in Mexico and South America. It also grows in some parts of the United States. It prefers tropical and sub-tropical conditions and the plant can reach a height of more than two feet. You cannot replace the flavor of epazote by substituting other herbs. If you cannot find it, just leave it out of the recipe but use more of the other seasonings to balance out its loss.

What You Need:

2 small banana leaves or 1 big one 1 sliced yellow onion 8 pieces chicken 4 sliced tomatoes Juice from 4 bitter oranges 2 tablespoons red chili paste 1/2 cup butter 3 garlic cloves 1/2 teaspoon salt 1 epazote sprig Fresh chopped onion, tomatoes, and chilies, to serve

How To Make It:

Combine the orange juice, salt, garlic and chili paste. Marinate the poultry in this mixture for two hours, piercing it with a fork beforehand so the marinade can really sink in and make the meat moist.

Preheat the oven to 350 degrees F. Arrange the chicken on the banana leaf and top it with the onions, tomatoes, and epazote. Dot the butter on top, then wrap the banana leaf over the chicken and tuck it underneath so it stays closed. Alternatively you can use oven-safe string to tie it up.

Put the wrapped poultry on the uppermost rack in the oven over a big oven-safe bowl half-filled with water. Let the chicken steam for an hour or an hour and a half, depending how big the chicken pieces are. Take the chicken out of the leaf and serve it with fresh onion, tomato, and chilies.

Texas Chili Verde Recipe - That's Green Chili to Those North of the Red River

In Texas, the further north you go along the Rio Grande River, and the closer to New Mexico, the more often you see green chili instead of red. This green chili recipe uses green peppers, green chiles, and other things to make the chili "gravy" that is so delicious here.

When deciding how many peppers to use in this dish, go by your tolerance of hot peppers. If you just like a little heat, use less peppers. If you are a pepper-head, put in as many as you can handle.

Chicken Chili

Ingredients:
5 pounds top sirloin, trimmed and cubed
5 medium onions, chopped
2 cups of nopalitos (tender cactus) from a jar, chopped
1 1/4 tablespoon ground cumin
1 tablespoon salt
1 tablespoon dried oregano
1 tablespoon ground cumin
6 to 8 fresh jalapenos (adjust accordingly)
5 to 7 fresh serrano peppers (adjust accordingly)
3 garlic cloves, minced
About 7 cups water
10 to 12 New Mexican green chiles, roasted then chopped
10 to 12 roasted pasilla chiles, chopped
6 medium tomatoes, chopped
1 12-ounce can of beer (I use Mexican beer)
Masa harina (corn flour), for thickening

Directions:
In a heavy saucepan or Dutch oven, and over high heat, sear the round steak cubes until they are evenly browned. Add about half of the onions, the nopalitos, cumin, salt, oregano, all peppers, and the garlic. Pour in about half of the water, and stir well. Bring the mixture to a boil, then cover the pan. Simmer for 2 to 2 1/2 hours.

Uncover and check the green chili, adding the remaining water, the remaining onions, the New Mexican and pasilla chiles, the tomatoes, and the beer. Simmer for another hour, stirring occasionally.

Check the chili, and if it seems to be too thin, add some water to the masa harina, and stir to make a paste. Slowly pour mixture into the chili while stirring. Cover and cook the chili another 15 minutes, and check again. Add more masa harina paste if needed, and cook some more, until your desired thickness is reached.

Serve the chili hot, with pinto beans on the side.

Chicken Drumstick Recipes - Honey Balsamic Glazed Chicken

Here's a recipe where chicken drumsticks and thighs are the star attraction with a deep, honey glaze that has a twist of tangy balsamic vinegar. These sweet and tangy drumsticks are sure to be a favorite on your dinner menu.

To make this dish you'll need: fresh skinless chicken thighs, fresh chicken drumsticks, vegetable oil, black pepper, chopped garlic cloves, tomato paste, chicken broth, balsamic vinegar, honey and green onion tops - thinly sliced.

Chicken Chili

In a large skillet, heat up 1 tablespoon of vegetable oil over medium high heat. Add in 6 pieces of fresh chicken thighs and 6 pieces of fresh chicken drumsticks. Sprinkle 3/4 teaspoon of black pepper over all chicken. Cook chicken, while turning frequently, for about 10 minutes, or until chicken is slightly brown on all sides.

Remove chicken from the pan and drain off the excess oil. Add 3 cloves of chopped garlic to the pan and sauté over medium heat for about 2 minutes. Stir in 1 1/2 tablespoons of tomato paste, and slowly add in 1/2 cup of chicken broth. With a wooden spoon or spatula, scrape bits clinging to bottom of pan.

Increase the heat to medium high and add in 2/3 cup of balsamic vinegar and 1 tablespoon of honey. Boil rapidly for 3 minutes to reduce the liquid to approximately 1 cup.

Return the chicken to the pan and reduce heat to medium. Cook chicken, turning occasionally, for about 30 minutes or until the liquid in the pan thickens and reaches a dark mahogany glaze consistency. Internal juices form the chicken should run clear.

Remove chicken from the pan and place on a serving platter. Pour glaze over chicken and sprinkle 4 tablespoons of thinly sliced green onion tops over chicken pieces.

Makes 4 servings.

I love Mexican food and love using my crockpot, so combining the two makes perfect sense.  Here's a list of some Mexican Crockpot Recipes.

Crockpot Enchiladas

Chicken Chili

A fabulous dish my whole family loved!
 
Ingredients:

2 cans shredded chicken breasts
1 cup salsa
1 can enchilada sauce
24 oz can diced green chiles
4 cups shredded cheddar cheese
1 can cream of chicken soup
14 oz can sliced black olives
2 thinly sliced green onions
10 corn and flour tortillas

Spray crock pot with cooking spray. Mix chicken, salsa, enchilada sauce, green chilis, and soup in a bowl. Cut corn and flour tortillas into 1 inch pieces, mix pieces together. Place a layer of sauce mixture on the bottom of the crockpot. Place a layer of tortillas, then a layer of cheese. Repeat until all the sauce mixture has been used. Top with cheese, olives, and green onions. Cover and cook on low 6 hours. If desired, serve with sour cream, salsa, guacamole, and tortilla chips.

Chicken Tortilla Soup
Easily one of my favorite recipes - a fabulous "throw it in and let it cook" soup. See the notes below for and extra flavorful twist.
 
Ingredients:

1 ½ pounds shredded cooked chicken
1 drained 14.5 oz can diced tomatoes
1 - 10 oz can enchilada sauce
2 medium chopped onions
14 oz can chopped green chiles
2 cloves minced garlic
2 cups water
1 - 14 ½ oz can chicken broth
1 tsp cumin
1 tsp chili powder
½ tsp black pepper
1 large bay leaf
1 tbsp cilantro
1 ½ tsp southwest seasoning mix
1 - 10 oz pkg frozen corn

Spray slow cooker with cooking spray. Mix all ingredients in crockpot. Cover and cook on low for 6-8 hours or high for 3-4 hours. If desired, serve with sour cream and baked tortilla strips. For baked tortilla strips, preheat oven to 400*. Lightly brush both sides of tortillas with vegetable oil, cut into strips. Spread on ungreased cookie sheet and bake for 10-15 minutes.
 
Notes: For extra flavor, I make this in two steps. First, I put 1-1 ½ pounds of boneless skinless chicken breasts in a crockpot with 1 ½ cups water (or 1 can chicken broth) and Mexican seasonings. (A package of taco or fajita seasoning or southwest seasoning mix works well.) Cover and cook on high 3-4 hours. Remove chicken and shred for soup. Often, I will make 2-3 pounds of chicken to make soup along with shredded chicken tacos or fajitas.
 
Crockpot Taco Appetizer
Although I serve with chips, this could be a main meal by using hard or soft shelled tacos instead!
 
Ingredients:
2 pounds ground beef
½ cup water
1 envelope taco seasoning
18 ounce can tomato sauce
1 undrained 14.5 oz can diced tomatoes
2 cups shredded cheddar cheese
1 cup sour cream
3 chopped green onions
1 cup sliced black olives
1 bag tortilla chips
 
Spray crock pot with cooking spray. In a skillet, brown meat over a medium flame. Drain and add to crockpot. Add water, taco seasoning, tomato sauce, and diced tomatoes. Cover and cook on low 6 hours. Serve with toppings such as cheddar cheese, sour cream, green onions, black olives, and other desired toppings.
 
Notes: As mentioned, this could easily be a main meal by serving with hard or soft shelled tacos rather than tortilla chips.

Cashew Chicken

Chicken Chili

Ingredients:

2 medium chopped onions

1 can drained mushrooms

1 can drained bamboo shoots

1 can drained sliced water chestnuts

2 pounds boneless skinless chicken breasts, cut into 1 inch cubes

1 ½ cups stir fry sauce

¼ tsp ground ginger

1- 16 ounce package frozen stir fry vegetables

1 cup cashews

Spray crock pot with non-stick cooking spray. Combine all ingredients except cashews in crock pot, stir well to mix. Cover and cook on low 7-8 hours or high 3-4 hours. Just before serving, stir in cashews. Serve over rice.

Sweet and Sour Chicken

Although you could use bottled sweet and sour sauce, I wanted to make it from scratch, and still found it easy!

Ingredients:

1 medium chopped onion

1 medium chopped green pepper

1 medium chopped red pepper

4 stalks chopped celery

2 pounds boneless skinless chicken breasts, cut into 1-inch cubes

1- 20 ounce can pineapple chunks

2 tbsp quick cooking tapioca

2 tbsp brown sugar

2 tbsp soy sauce

1 tsp ground ginger

2 cloves minced garlic

1 tbsp balsamic vinegar

½ cup water

2 tsp lemon juice

Spray crock pot with non-stick cooking spray. Place vegetables in crock pot, place cubed chicken on top. Pour pineapple chunks, with juice, over chicken. In a small bowl combine tapioca, brown sugar, soy sauce, ginger, garlic, vinegar, water and lemon juice. Pour into crock pot. Cover and cook on low 8 hours or high 4 hours. Serve over rice.

Whip up this chili relleno casserole when you're in the mood for a hearty Mexican meal night. Serve as is, or with a side of Spanish rice, tortilla chips and salsa.

2 (7 oz.) cans whole green chile peppers, drained 8 oz. Monterey Jack cheese, shredded 8 oz. Longhorn or Cheddar cheese, shredded 2 eggs, beaten 1 (5 oz.) can evaporated milk 2 tablespoons all purpose flour 1/2 cup milk 1 (8 oz.) can tomato sauce or enchilada sauce
Directions

Preheat oven to 350 degrees. Spray an 8x8-inch or 9x13-inch baking dish with nonstick cooking spray. Layer half of the chilies evenly on the bottom of the baking dish. Place wrapped chilies inside a casserole dish and bake for 10 minutes, or until the dough is halfway cooked. Remove the casserole from the oven. Cut the remaining chilies lengthwise and layer them down flat on top of each wrapped chili relleno. In a pan, sauté the onion in 1 tablespoon of olive oil; place onions on top of chilies. Add remainig cheese on top. In a bowl, beat the egg whites and fold them into the egg yolks. Spread egg mixture over the cheese layer. Bake another 15 minutes, or until golden brown. Let stand for 10 minutes before serving.

Today we're going to go over a fantastic recipe I've been using for a few years now, and it is something that I've taught dozens of people, especially those who are KFC lovers.

It is a recipe for crunchy chicken breasts, but obviously they are healthy, made with lean white meat and oats.

Chicken Chili

Here is what you will need:

1. Chicken breasts - thaw the breasts and make sure they are completely thawed before cooking. I like to use 1 breast per person, so adjust this accordingly to the number of people you are cooking for.

2. 1/2 cup of plain oats - the type of oats you used doesn't matter, but it should be regular old fashioned oats

3. 1 tablespoon of salt (low-sodium salt is best)

4. 2 egg whites

5. Pam calorie-free butter flavored spray

Steps to making the chicken:

1. Take your strips and season them with a pinch of salt, rubbed all around. If you like a little kick to your chicken, add a pinch of some chili powder or some other hot spice. You can season according to your likings.

2. Dip the piece of chicken into the egg white, make sure it is completely covered in egg white

3. Roll the chicken breast piece in the bowl of oats until it is completely

4. Place the chicken on a tray that is covered with foil.

5. Once all the pieces are lined up, give them a once-over spray with your calorie-free Pam spray. This will help make the oats crispy and give it more crunch.

6. Heat the oven to 400F

7. Place the chicken in for 9 minutes, then turn all the pieces around and cook for another 9 minutes.

8. The oats will turn a nice golden-brown when they are ready. I highly recommend you cut one piece to ensure a white consistency throughout the chicken.

That's it!

What you now have is a healthy alternative to high-fat KFC chicken, or any other type of friend chicken for that matter. Add some side veggies or some butter-free mashed potatoes and you are ready to eat.

4 strips will yield approximately 200 calories with a high protein content, a moderate complex carbohydrate content, and very little fat.

As a way of adjusting the taste of the chicken to your personal preferences, you can add almost any type of spice or rub to the chicken, as long as it complements the crunchy texture of the chicken.

Kung Pao Chicken Recipe

Don't be intimidated by cooking Asian cuisine. The dish may looks complicated, but it's actually not when you try it out on your own.

Instead of deep-frying the chicken as called by recipe, I stir-fried the chicken in a wok, to cut down oil absorption. Some westernized version of kung pao chicken (more popular in US and Canada) have been customized to suit their tastebuds, by using vegetables (such as zucchini, red bell peppers, green bell peppers, celery, Chinese cabbage, water chestnuts, and carrots), sherry, hoisin sauce or oyster sauce. The tweak with suitable ingredients perhaps will come out with a delicious fusion of East-meet-West cuisine, making Kung Pao chicken a versatile relish.

The tangy aroma of peanuts and the earthy flavour of chicken, rounded up together with sweet, sour and spicy notes. This is the dish to satisfy our spurts of cravings and we gobbled it up!

I love Szechuan dishes (åå·è or å·è) for its bold flavour, with pungency and spiciness kick up the dish! Sichuan cooking features hot and numbing flavor, making it pretty alluring to my family's palate. Among other well-known Szechuan dishes are twice cooked pork, mapo tofu, spicy deep-fried chicken, bon bon chicken and many others which I can't wait to try out!

Here is my endeavor with legendary Kung Bao Chicken.

Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized pieces (cubed)
1/2 cup peanuts (or cashewsnut)
8 small dried red chillies, soaked, seeds removed, chopped (or alternatively fresh red chilli peppers, quantity as desired)
1 slice peeled fresh ginger, chopped
4 cloves garlic (minced)
3 tbsp of spring onions (scallions), chopped
vegetable oil for stir-frying

Marinade:
1 tbsp soy sauce
1 1/2 tbsp cornstarch, mixed with 1 1/2 tbsp water

Seasoning:
2 tbsp soy sauce
1 tbsp chinese rice wine vinegar (or shaoxing wine, Westernized version call for dry sherry)
1 tsp granulated sugar
1 tsp cornstarch
1/2 tsp salt
1 tsp sesame oil

Method:

1. Combine the bite-sized chicken with the marinade ingredients, then adding the cornstarch in a bowl, toss to coat. The chicken left to marinade for 30 minutes.

2. Prepare the seasoning in a small bowl and set aside.

3. Stir-fry 1/2 cup of peanuts in a hot wok with vegetable oil until golden brown and crispy. Drain and set aside.

4. Chinese wok is heated on a high flame, until the wok is quite hot. A swish of the ladle spreads a couple of teaspoons of vegetable oil, then the chicken is flash fried in the hot oil to bring out the flavor (for 2-3 minutes until the chicken cubes no longer in pink color, but not so long that it loses its juices or tenderness). Remove chicken from the wok, drain and set aside.

5. Add 2 tbsp of vegetable oil in the wok. When the oil turn hot, add dried red chillies (or alternatively red chilli peppers) and stir-fry briefly until they turn dark red color. Then add the chopped ginger, minced garlic and the pre-fried chicken to the wok, stir constantly until aromatic. Then add the prepared seasoning to the wok, then stir until the gravy is thickened. Add in the peanuts and lastly spring onion. Serve hot, the dish goes well with piping hot rice.

2 boneless skinless chicken breast halves in thin strips

1 c heavy cream (1 to 2)

1 green onion sliced

1/4 ts salt

1/4 ts basil

2 tb butter

2 ts cajun seasoning

4 lg fresh mushrooms sliced

4 oz linguini cooked & drained grated parmesan cheese optional

Place chicken and cajun seasoning in a bowl or resalable plastic bag; toss or shake to coat. In a large skillet over medium heat, sauté chicken in butter until almost tender, about 5-7 minutes. Add peppers, mushrooms and onions; cook and stir for 2-3 minutes. Reduce heat. Add cream and seasonings; heat through. Add linguine and toss; heat through. Sprinkle with parmesan cheese if desired.

2 1/2 lb chicken wings separated an

1 c flour

1/2 c cajun seasoning oil for frying

2/3 c louisiana hot sauce.

3/4 c plain yogurt

In a bowl, mix together yogurt, hot sauce and garlic. Add chicken and marinate overnight in the refrigerator. The following day, mix together flour and cajun seasonings in a bowl. Remove chicken from the marinade and coat evenly in flour mixture. In a wok or deep fryer, heat oil to 370f. This can be achieved by heating over medium high heat.

Use enough oil to cover 4 to 5 chicken wings at a time. Deep fry wings for approximately 8 minutes. Drain on paper towel. Serves 2 to 4

Be Careful What You Ask For

We in the Northeast, should be careful for what we ask for! Driving to work was nothing short of aggravating. Just a mere 18 hours ago, you could move around with little effort. Now it is snowing like crazy, and my feet haven't warmed up since I left for work at 7:30am. I would love to stick my hands and feet in an oven for just bit.

Being a chef and working in a medical office has its differences. Chef's on their feet the entire shift. Medical office on your keyster the entire shift. Chef's minimal contact with the public, medical office non stop contact. Chef's some grammatical work, medical office get writer's cramp. Experience is priceless. I have learned the art of compassion for my fellow human beings, being able to listen is all that anyone ever wants, people want validation and someone who cares. I am grateful to have learned those traits.

So with a New Year on the horizon, what I am I resolved to change? More doing, more getting in the game, less moments where fear decides what I will do, less temptation to focus on the negative. They are fairly inexpensive and can take place of the macaroni and cheese, french fries, and rice pilaf.

Chicken Chili

2 packages of ground chicken
2 tablespoons olive oil
2 sweet onions, rough chopped
2 green peppers, rough chopped
2 red peppers. rough chopped
8 cloves of garlic minced
1 46oz bottle of V8 juice
1 14.5 oz can of diced tomatoes
1 6oz can of tomato paste
3 cans of kidney beans, drained and rinsed
1 tablespoon cumin
1 tablespoon dried basil
1 tablespoon dried oregano
1 tablespoon tumeric
2 tablespoons dark chili powder
1 tablespoon smoked paprika
salt and pepper to taste

In a stock pot, heat the olive oil and add the onions and garlic and cook until you can smell the garlic, add the peppers, diced tomatoes and ground chicken cook until the chicken is done. Drain in a colander and return to the same pot and add the V8 juice, tomato paste, and all spices and cook on medium low heat until the chili thickens, add the kidney beans and season, cook for about 10 more minutes and serve with a fresh slice of avocado. Remember no white food.:)

Chicken Chili

Onion (1, chopped)

Garlic (3 cloves, minced)

Chili powder (2 teaspoons)

Oregano (1 teaspoon, dried)

Tomatoes (1 can, 28 ounces, crushed)

Chicken broth (1 can or 10.5 ounces)

Water (1 1/4 cups)

Kernels (1 cup, whole, cooked)

Hominy (1 cup, white)

Chili green peppers (1 can or 4 ounce)

Black beans (1 can or 15 ounce, rinsed and drained)

Fresh cilantro (1/4 cup)

Chicken breasts (2 boneless, cooked and cut into bite-sized pieces)

Tortilla chips (crushed)

Monterrey Jack cheese (shredded)

Green onions (chopped)

How to do it:

The first thing you will need is to get a stock pot and this you will heat it you will heat it over medium heat; in here sauté the onion and garlic in oil until they are soft and then add chili powder, oregano, tomatoes, broth and water. Now that you have done this bring it to a boiling point and let it simmer for 5 to 10 minutes. Once you have done this add to the mixture the corn, hominy, chilies, beans, cilantro and chicken, and after this simmer everything for 10 minutes, now you can ladle the soup and serve it into individual bowls and top it with crushed tortilla, avocado, cheese and green onion. Now you will serve a magnificent soup.

4 tsps Cajun seasoning
4 tbsps butter or margarine

1/4 tsp garlic powder
8 oz. penne pasta, cooked and drained
2 diced roma tomatoes
Shredded Parmesan cheese (to sprinkle)

Instructions:

1) Slightly moisten the chicken breasts with water.

2) Inside a re-sealable plastic bag, pour your Cajun seasoning, making sure that the inside of the bag is dusted with seasoning. Put the chicken breasts inside the bag. Shake the bag until the chicken is completely coated with your seasoning. Add more seasonings if necessary.

3) Saute the chicken on a large skillet with 2 tbsps of butter over medium heat. Adjust the flame of your stove when necessary to prevent overcooking.

4) When the chicken is half-cooked, start preparing the sauce by mixing the heavy cream, 2 tbsps of butter and other seasonings in a second skillet over medium heat. Stir occasionally.

5) Once the cream sauce begins to bubble, add your pasta and turn off the stove. Stir very well.

6) Once the chicken is cooked, slice them into strips on a cutting board.

7) To serve, distribute the pasta and sauce onto serving plates. Top with the chicken strips, diced tomatoes and Parmesan cheese. If you want to add more spice to your pasta, sprinkle additional Cajun seasoning on top.

Chicken Penne Pesto

Ingredients:

2 large skinless, boneless chicken breasts, diced
10oz/300g penne (or other you can replace this with the pasta of your choice)
5 tbsps pine nuts
1 tsp course sea salt
3 tbsps fresh basil, finely chopped (or replace with 3 tsps of dried basil)
4 tbsps extra virgin olive oil
1-2 garlic cloves, crunched
Parmesan cheese (to sprinkle)

Instructions:

1) Boil the pasta in salted water. To prevent the pasta from sticking together, add a little olive oil.

2) Using very little oil, fry the diced chicken in a pan or skillet.

3) While cooking the pasta and chicken, grind the pine nuts and sea salt together in a mortar or blender. Add your basil, olive oil and garlic to your ground pine nuts and salt to complete the pesto sauce. Mix well in one big dish.

4) Put your cooked pasta and chicken into the dish containing your pesto sauce and mix well. Sprinkle Parmesan cheese on top. Put extra pine nuts for garnish.

Butternut Squash Soup With Poblano Chili Peppers

Butternut squash is more popular than at any time. A staple in holiday cooking for decades, this nutty variety, with a hearty taste and apple like texture is finding its way into year round culinary creations. This member of the fruit family and cousin to pumpkin is wonderful when roasted in the oven or on the grill, chopped or mashed for use in casseroles and breads, and as in our recipe below, toasted and pureed for use in a really great tasting soup.

Cooks Notes: Choose a squash that is firm with no bruises, and store on the counter top, or in a cool, dry location until ready to use. For best results, peel with a sharp vegetable peeler, and use a very sharp knife to cut the squash lengthwise, before baking.

After cooking, be careful when pureeing the hot soup, as it can splash out of the blender. Wear a hot pad, and hold the blender lid down tight. Transfer the small batches of pureed soup to a large bowl, and then back to a clean stockpot.

Ingredients:
1 tablespoon Vegetable or Canola Oil
1 small White Onion, chopped
1 teaspoon chopped Fresh Garlic
2 Roasted Poblano Chili Peppers, peeled, seeded and chopped
1 teaspoon Ground Cumin
2 cups cooked Butternut Squash (about 1 small), peeled
3 cups Chicken Stock
1 teaspoon Coarse Salt
1/2 teaspoon White Pepper
chopped Fresh Cilantro

Preparation:

1. Preheat the oven to 400 F.

2. Cut the butternut squash in half lengthwise.

3. Scoop out the seeds and discard.

4. Place the squash halves in a baking dish and add about ½-inch water to the bottom/

5. Bake 50 minutes.

6. Remove from oven. Transfer squash to a plate and cool completely.

7. Chop squash into small pieces.

8. Add oil to stockpot and heat over medium heat.

9. Add chopped onion and garlic to hot oil. Sauté until onion is tender and translucent.

10. Add chopped chilies and cumin to stockpot. Continue cooking 3 minutes.

11. Add squash pieces, chicken stock, salt and pepper to stockpot.

12. Bring to a boil. Reduce heat to low. Simmer 15 minutes.

13. Remove soup from stove top and cool.

14. Puree soup in small batches in blender.

15. Garnish butternut squash soup with chopped cilantro.

How To Make It:

Take the seeds and veins out of the chilies. Peel the plantain and cut it into quarter inch pieces. Peel and quarter the onion. Heat quarter of an inch of oil in a wok or skillet and fry the chilies.

Fry the nuts next, then the tomatoes, the onion, and the other ingredients. As you fry things, transfer them to a big bowl and mix them as you go. When you have fried everything, puree the mixture in a blender. Use some consomme, turkey, or chicken broth to thin the sauce. It needs to be quite thick so do not add too much.

Cook the gravy in a crockpot or over a low flame for a couple of hours or until it goes dark reddish brown. Keep the heat as low as you can. When you stir it and you can see the bottom of the pot, the texture is perfect.

Chicken Stuffed Omelette (Indian Style Recipe)

Chicken Chili

200gm minced chicken (keema) 1 small size finely chopped onion 1 small size finely chopped tomato 2 teaspoon of very finely chopped capsicum (green pepper) 1 clove of garlic finely chopped 1 tablespoon soya sauce 1/2 teaspoon sugar 1 tablespoon black pepper salt to taste 3 egg 2 tablespoon of vegetable oil 1 teaspoon red chili powder 2 teaspoon of milk

How to make Chicken Stuffed Omelette

1. Take a non-stick frying pan heat 1 tablespoon of vegetable oil add 1 small size chopped onion, 2 teaspoons of finely chopped green pepper (capsicum), 1 clove of garlic finely chopped and fry for 5 mins until the onion become soft.

2. Put 200gm minced chicken (properly washed and drained excess water off) into the pan (step 1) fry for about 10 mins until it becomes lightly brown in color and fully tender.

3. Now add finely chopped tomato and stir for a few minutes. Then add 1 tablespoon soya sauce, 1/2 teaspoon sugar, 1 tablespoon black pepper, 1 teaspoon red chili powder and salt to taste into the pan (step 1) and fry for another few mins. Put the stuffing aside.

4. To make the omelette, break 3 egg into the bowl beat it with 1/4 teaspoon soya sauce and salt to taste. Add 2 teaspoon of milk to make the omelette soft and fluffy.

5. Take the same non-stick pan heat 1 tablespoon of vegetable oil put the omelette mixture (step 4) into the pan and make a omelette in medium low flame. Cook both sides till it become brown in color.

6. Put the stuffing in one side of the omelette and fold it in semi circle form and cut it in two equal parts from the middle.

Chicken Stuffed Omelette is ready to serve hot for lunch/dinner with rice or chappati.
