Make a Simply Healthy Stew in the Crockpot

With America in an obesity epidemic, many people are looking at healthier dishes. Another thing to consider is how digestible foods are, how low in fat they are, and what they provide nutritionally. Rabbit stew is one of those recipes that has fallen by the wayside, only to be brought back because it is simple and nutritious. This handy recipe for rabbit stew is simple, full of flavor, and the stew is a perfect meal anytime. Toss in a few potatoes and carrots and you can serve it all on its own without any side dishes as a one pot meal.

Rabbit actually provides the lowest cholesterol levels of any meat on the market. It is also lower in fat than chicken, beef, pork, or turkey. At the same time, it provides more protein per mouthful than any of the others. According to the US Department of Agriculture, rabbit is the most nutritious meat known to humankind. It is especially well suited to those on special diets because it is very easily digested. Rabbit has only 795 calories per pound; much lower than chicken's 810, turkey's 1190, beef's 1440 and pork's 2050 calories. Domestic rabbit is also 100% white meat. It has a finer grain than chicken, though you can substitute rabbit in most chicken recipes. Some grocery stores carry rabbit; otherwise, you can get it from specialty markets or direct from the farmer.

Chicken Chili

Rabbits have been used for food since man first learned to hunt. In ancient Rome, they were kept inside walled gardens so they would be available for meals whenever they were needed. They lend themselves well to moist cooking methods like the crockpot because they are so low in fat. They tend to dry out too much when roasted. The crockpot is perfect as it keeps the moisture all around the meat. A stew brings out the most nutrition through the long, slow cooking process. It is a nourishing comfort food that goes well with crusty bread, potatoes, or rice. Cornbread makes a nice side for stew, also. This simple recipe takes minutes to put together; all you have to do is turn on the crockpot and come home to dinner. You could just eat it as is with some bread to sop up the sauce and a fresh salad.
