2 tablespoons diced, seeded jalapeno 1/4 cup vegetable oil 2 teaspoons lime juice 4 1/2 cups water 3 tablespoons minced garlic 2 1/2 tablespoons ground chili powder 3 tablespoons ground cumin 2 tablespoons white sugar 1/2 cup crushed canned tomatillos 2 teaspoons minced fresh cilantro 3 lbs diced, cooked chicken breast 4 oz can diced green chilies 1/2 teaspoon ground oregano 3 tablespoons cornstarch 1/2 cup diced onions 4 teaspoons ground paprika 1 1/3 cups diced green bell pepper 2 cans navy beans, 15 oz each 15 oz can red kidney beans 4 teaspoons dried basil 8 teaspoons chicken base 1 1/2 teaspoons ground red pepper Sour cream, for garnish (optional) Shredded cheese, for garnish (optional) Tortilla chips, to serve How to make it:
Heat the oil in a big pot over a moderate heat, then saute the garlic, onions, jalapeno and bell pepper until tender. Mix the chicken base, water, sugar, cornstarch, lime juice, and seasonings in a bowl, then add this to the garlic and onion mixture in the pot.
Drain the chilies and add them to the pot with the tomatillos. Bring the mixture to the boil. Drain the cans of beans and add them to the pot. Stir in the chicken and simmer the chili for ten minutes. Serve topped with sour cream and cheese, with some tortilla chips.
