Chicken chili is a dish loved all over the world. It is spicy and tasty. It can be had with white rice, pasta or by itself. There are many ways to prepare low fat chicken chili. But, some of the best ways to have this dish made are the traditional method, white variant and soup variant. You can also make use of left over chicken from some other dish to make this item.
The usual method would require olive oil, onion, garlic, bell peppers, tomato paste, beans, cilantro, chili powder, cocoa powder, cumin, cinnamon, allspice, cloves, kosher salt and pepper. To make the traditional chicken chili, you will have to first mix the chicken with all the spices and cook well. Then add all the vegetables and remaining spices with water and cook well for 15 minutes. It is a quick recipe to cook and is low on fat. In the other method of preparation, you would use some carrots diced, salsa sauce and corn or kidney beans. This would qualify as the Crock-Pot way to cook low fat chicken chili. Here, you mix all the ingredients up with the chicken pieces and cook in a Crock-Pot for six hours. It takes long but, is very healthy, low in fat and great in taste.
Chicken Chili
Another low fat chicken chili recipe that you can have with rice for lunch or dinner is White chicken chili. You will require some olive oil, onion, garlic, beans, fat free chicken broth, cut chilies, salt oregano, cumin, pepper, fat free sour cream and of course skinless chicken breast pieces. To prepare this dish, first marinate the chicken with crushed garlic and onion paste with some olive oil. Add all of the remaining ingredients to the mix and cook on medium for half an hour. After cooking, add sour cream to it and stir until it mixes with the finished dish. It is a gourmet meal and best for diabetics.
To make this into a soup, simply add some liquefied cornstarch and low fat cheese along with some water. Voila your white chicken chili soup is ready. You may add some cilantro to the soup and reduce the cream content thereby altering the taste a bit as per your liking.
You can also recycle left over chicken and make a great low fat chicken chili. For this purpose, you need all the ingredients used in the traditional method and some extra ingredients as well. White beans, sweet corn, oregano, cornstarch, skim milk, fat free sour cream and shredded cheese. The method of preparation is the same as traditional method. After making the dish you can choose to make a thick cream or thin broth. For a thicker soup, add a mixture of milk and cornstarch to the dish and stir well. For a thinner soup, add some shredded cheese and sour cream as well. This is a great way to have leftover chicken with crackers or tortilla chips.
Low fat chicken chili is an easy cooking dish and tastes great no matter what you add to it. You can have it with rice, pasta or even chips and crackers as well. All you need extra to make this recipe into a dinner item is to top this dish up with some dessert.
