Delightful recipe for Quick Thai Chicken

Ingredients for this recipe:

- 1 tablespoon red curry paste
- 2 tablespoons olive oil
- 2 tablespoons tablespoons fish sauce
- 2 tablespoons lime juice
- 4.1 cup (15 g/1/2 oz) coriander leaves
- 1 tablespoon grated ginger
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 750 grams (11/2lb) chicken, cut into strips
- 1 tablespoon oil, extra-
- 10 spring onions,In short cuts
- 100 g (31 / 2 ounces) snow peas, trimmed

Directions to this recipe:

First Beat together the curry paste, olive oil, fish sauce, lime juice, coriander, ginger, sugar and sesame oil in a non-metallic bowl. Add all the chicken strips and mix by hand.

2 Heat the oil in a wok. Add chicken in small batches and fry for about 3-5 minutes or until brown, then removethe wok and set aside. Add onions and snow peas and stir fry for about 2 minutes. Return chicken and any juices to wok and cook about 2-3 minutes, or, or until the chicken is so hot. Season with salt and pepper and serve immediately.
